1 cup packed brown sugar
1 egg
¾ cup shortening
1 cup applesauce
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

1 cup packed brown sugar
¼ cup white sugar
1 egg
1 egg yolk
2 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Stir applesauce, brown sugar, and white sugar together in a large bowl until sugars dissolve. Stir in egg and egg yolk until well blended. Add flour, baking soda, and salt; mix into a smooth dough. Fold in chocolate chips.
  • Use a disher scoop to drop uniform amounts of dough onto the prepared baking sheets.
  • Bake in the preheated oven until edges are dry and bottoms are golden brown, about 12 minutes. Transfer to a wire rack to cool.

1 3/4 cups sifted cake flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1/8 teaspoon clove
1/2 teaspoon salt
1/4 cup margarine
3/4 cup sugar
1 egg
1/2 cup unsweetened applesauce
1/2 cup raisins

Steps:

  • Preheat oven to 375°F
  • Prepare bottom of a 11 x 7 ~inch pan with vegetable pan coating.
  • Sift together flour, baking soda, spices and salt. Cream together margarine and sugar. Add egg to margarine mixture and beat until light and fluffy. Alternately add the dry ingredients and applesauce, stirring just enough.
  • to blend well. Add the raisins.
  • Turn into the prepared pan and bake about 30 minutes. Let cool for 10 minutes then cut into 24 squares.

¼ cup butter or margarine, softened
⅔ cup brown sugar
1 egg
1 cup applesauce
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
1 ½ cups confectioners' sugar
3 tablespoons margarine, melted
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
  • In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

A delicious quick and easy apple pie bar. You can experiment with different varieties of cookie dough, oatmeal for example as well as the applesauce filling could be substituted with apricot or peach. I use an 11 x 7 inch pan not the usual dimensions but it's one of my favourites and cost a whopping $1.00 at the neighbourhood dollar store!

1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons coarse sugar, I use Sugar in the Raw crystals
500 g refrigerated sugar cookie dough, cut in half
1 cup unsweetened applesauce, I use 2 200ml applesauce fruit cups

Steps:

  • Preheat oven to 350 degree F.
  • Spray an 11 x 7 baking pan (preferably shiny).
  • In a small bowl, mix together the cinnamon, nutmeg and sugar, set aside.
  • On a lightly floured board roll out one half of the dough to cover the bottom and slightly up the sides of the baking pan.
  • Spread the applesauce evenly over this dough layer.
  • Coarsely grate the remaining half of the dough over the applesauce filling.
  • Sprinkle with the spice/sugar mixture.
  • Bake 35 to 45 minutes until evenly browned and top is crisp.
  • Cool completely and cut into bars.

Trisha Yearwood dips favorite chocolate chip cookie batter in chocolate to create bite-sized treats. They taste just like cookie dough but without the raw egg.

2/3 cup (1 1/3 sticks) butter, room temperature
3/4 cup granulated sugar
1/4 cup dark brown sugar, packed
1/4 cup applesauce
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini semisweet chocolate chips
12 ounces dark chocolate wafers or semisweet chocolate chips
6 blocks chocolate-almond bark, such as CandyQuik

Steps:

  • For the cookie dough balls: In an electric mixer, beat the butter, granulated sugar, brown sugar, applesauce and vanilla together until smooth. Sift the flour, baking soda and salt together, and with the mixer running, slowly add to the butter mixture. Mix in the chocolate chips. Scoop out the batter using a mini ice cream scoop and roll it into balls. Place the dough balls about an inch apart on a baking sheet lined with wax paper and transfer them to the freezer for 30 minutes to let the dough set up.
  • For the dipping chocolate: While the dough is chilling, melt the chocolate wafers and chocolate-almond bark together in a heavy-bottomed saucepan over low heat, stirring constantly. Remove the chilled dough balls from the freezer. Using two spoons, dip the balls one at a time in the melted chocolate, rolling them to coat fully. Returned the dough balls to the wax paper-lined baking sheet and refrigerate until set, about 30 minutes. Store in the fridge for up to 2 weeks.

1 1/2 cups applesauce
1 cup chopped pecans or 1 cup walnuts
1 cup raisins
powdered sugar, sifted

Steps:

  • In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg.
  • In a large mixing bowl, cream butter with sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • Stir in flour mixture.
  • Add applesauce, pecans and raisins and stir until blended.
  • Pour into a greased and floured 15x10x1-inch jelly roll pan.
  • Bake in preheated 350° oven 25 minutes, or until done.
  • Cool applesauce bars on rack then cut in 2-1/2 x 1-inch bars and sprinkle with sifted powdered sugar.
