APPLESAUCE
So much better than store-bought, this applesauce is delicious on it's own as a snack, but can be used as a sauce or ingredient in any recipe-sweet or savory.

Steps:
- Combine apples, apple cider, cinnamon, vanilla bean, ginger, cardamom, nutmeg, mace, sugar, and lemon juice in a large, wide, heavy-bottomed saucepan.
- Place the saucepan over medium heat, and cook, stirring often with a wooden spoon to prevent scorching, until apples are broken down and saucy, about 50 to 60 minutes. Mash any large pieces of apple with a large wooden spoon to help them break down. Adjust seasoning to taste with more sugar and spices. Remove the apple mixture from the heat, and let stand to cool completely before serving, discarding cinnamon sticks and vanilla pod.
APPLESAUCE MUFFINS
Steps:
- Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

- Preheat the oven to 350°; grease a 12-cup muffin tin.
- In a mixing bowl, cream the butter and brown sugar together until light and fluffy.
- Add in the egg; beat well.
- In another mixing bowl, combine the flour, cardamom, baking powder, baking soda, and salt; stir to combine.
- Add dry ingredients to creamed mixture alternately with applesauce; blend well.
- Fold in raisins, oats, and nuts.
- Spoon batter into prepared muffin tin, filling 3/4 full.
- Bake for 25-30 minutes; let cool, then remove from pan; may sprinkle with icing sugar, if desired.

CARDAMOM APPLESAUCE
I just adore cardamom! If you enjoy it like I do give this a try! Depending on how sweet your apples are adjust the sugar. Cinnamon can be replaced for the cardamom.

- Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
- Mix flour, baking soda, allspice, nutmeg, cinnamon, cloves, ginger, and salt together in a bowl.
- Beat shortening with an electric mixer in a separate large bowl until smooth; add honey and mix for 2 minutes. Stir flour mixture into shortening mixture, alternating with applesauce, until batter is smooth. Fold in raisins and walnuts. Spoon about 2 1/2 tablespoons batter into each muffin cup.

- 1. Chop walnuts and set aside.
- 2. Measure flour, baking soda, baking powder, and cardamom in a bowl and stir with a fork to mix well.
- 3. Place remaining ingredients in a separate bowl and whisk well to mix. Add flour mix and nuts and fold to mix just until no flour streaks show. Do not overmix.
- 4. Divide batter to evenly fill a regular 12 muffin pan. The pan should be well buttered and lightly floured on the bottom....or alternately use muffin papers.
- 5. Bake in an oven preheated to 400 degrees. When you place the pan in the oven, immediately reduce heat to 375 degrees. Muffins are done in 16 minutes.
- 6. Remove muffins from oven and cool 10 minutes on a wire rack before releasing to cool completely on the rack.
- 7. Serve these freshly baked muffins simply with softened unsalted butter to appreciate the delicate flavors.
