APPLESAUCE CAKE
Applesauce makes this cake exceptionally moist. It's delicious on its own or served with a scoop of vanilla ice cream. If you decide to use store-bought applesauce, choose one with a chunky texture.

- Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
- In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
- Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
- Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.

- Preheat oven to 375 degrees F.
- Grease a 9-inch square pan with olive oil. In a medium bowl combine flour, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl mix brown sugar and olive oil on medium speed with an electric mixer. Mix until blended. Add applesauce and mix well. Add flour mixture all at once. Beat on low speed until well blended. Stir in raisins and walnuts. Spoon batter into the prepared baking pan.
- Bake 20 to 25 minutes or until lightly browned.
- Cool completely on a wire rack. Cut into squares. Serve plain, dusted with powdered sugar, or frosted with whipped cream.
APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

- Grease Bundt pan and dust with 1 tablespoon of the sugar-cinnamon mixture, reserving remainder for cake.

APPLESAUCE CRAZY CAKE (NO-BOWL)
Another no-bowl cake recipe. Found this one on a MasterCook recipe e-list back in 1998. Haven't tried it yet but hope to soon. Update: I have tried this now and used half all-purpose half whole wheat flour and no nuts. It worked very well. Not a high rising cake but it was nice and moist when we had this for breakfast the next morning. Took 25 minutes in a 9 inch pan.

- In 8 or 9-inch square pan, combine flour, sugar, baking powder, cinnamon, baking soda, salt, cloves and nutmeg; blend well.

This is a lower sugar version than others that I have come across. I think it tastes just as good as the full sugar version.

Steps:
- Combine flour, spices, and leveling ingredients in a large bowl. Set aside.
- Combine 1/2 cup butter and sugar in another bowl. Beat until combined. Add eggs 1 at a time beating well after each addition.
- Add in the applesauce,milk, and vinegar to the butter mixture and mix well.
- Fold the wet mixture into the dry incorporating well.
- Spread out into a greased 13x9 cake pan and bake for 35 minutes at 350°F
- When cake is cool make the frosting. In a saucepan melt the 1/3 cup of butter. Watch until it begins to brown, once a nutty color remove from heat and pour into a bowl.
- Add powdered sugar, milk, and vanilla and beat until smooth. Spread on top of cake and serve.
