1 can(s) non-stick cooking spray
TORTE:
1 c granulated sugar
1/3 c vegetable shortening
2 Tbsp unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 c all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
2 c peeled and shredded red apple
3/4 c chopped pecans
ORANGE CURD:
2 large eggs plus 1 egg yolk
2/3 c granulated sugar
1/3 c freshly squeezed orange juice
1 tsp very fine orange zest
1/8 tsp salt
1/4 c unsalted butter, diced
FROSTING:
4 oz cream cheese, softened
1/4 tsp vanilla extract
1 c powdered sugar
8 oz frozen non-dairy whipped topping, thawed
1/2 c finely chopped lightly toasted pecans
GARNISH:
1 slice red apple, (do not peel)

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Spray a 9-inch springform pan with removable bottom with cooking spray. Set aside.
  • 3. In a large mixing bowl, beat sugar, shortening, and butter on medium speed until light and fluffy. Beat in egg and vanilla.
  • 4. Sift flour, soda, baking powder, salt and cinnamon together in a medium bowl. With mixer on low speed, gradually beat dry ingredients into first mixture until well mixed. Fold in apples and pecans. Pour into prepared pan.
  • 5. Bake for 25-30 minutes or until top springs back when lightly touched and center tests done with a toothpick. Remove from oven. Cool completely.
  • 6. While cake is baking make curd by whisking together eggs, egg yolk, sugar, orange juice, zest, and salt in a 1-quart heavy-bottomed saucepan. Stir in diced butter.
  • 7. Cook over medium heat for 5-8 minutes until mixture thickens, stirring often. Remove from heat. Pour into a small plastic bowl. Cover with plastic wrap. Refrigerate for 30-45 minutes until chilled.
  • 8. For frosting, in a medium mixing bowl, beat cream cheese and vanilla on low speed until smooth. Beat in powdered sugar. Fold in whipped topping.
  • 9. Remove outer ring of pan from cake. Place cake, still on pan bottom, on a large cake plate. Spread top with chilled curd. Pipe or spread frosting on curd. Sprinkle with pecans. Chill for 1 hour. Garnish with apple slice. Cut torte into wedges to serve. Serves 12.

1 cup sugar, divided
1 cup flour
1 (250 g) package PHILADELPHIA Brick Cream Cheese, softened
1 egg
½ teaspoon vanilla
½ teaspoon ground cinnamon
4 each Granny Smith or Golden Delicious apples, peeled, sliced
¼ cup sliced almonds

Steps:

  • Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.
  • Beat cream cheese and 1/3 cup of the remaining sugar in same bowl with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Spread evenly over crust. Combine remaining 1/3 cup sugar and the cinnamon. Add to apples in large bowl; toss to coat. Spoon over cream cheese layer; sprinkle with almonds.
  • Bake 10 min. Reduce temperature to 375 degrees F; continue baking 25 min. or until centre is set. Cool on wire rack. Loosen torte from rim of pan. Cover and refrigerate 3 hours before serving. Store any leftovers in refrigerator.

2 c apples ,peeled and diced
3/4 c granulated suugar
2/3 c all purpose flour
1 large egg,beaten
1 tsp vanilla
1 tsp apple pie spices
1 tsp baking powder
1/2 c chopped walnuts
1/2 c sour cream
1 Tbsp cinnamon sugar to sprinkle o top

Steps:

  • 1. Heat oven to 350^, Using non-stick baking spray coat a 9-inch glass dish and set aside.
  • 2. In a large bowl combine sugar ,flour, baking powder, nuts, and apple pie spice. Mix well by hand.
  • 3. In a medium bowl combine egg, vanilla, and sour cream ,mix well . Add apples and coat evenly. Pour apple mixture into the flour mixture, folding until all ingredients are blended well. Mixture will be thick.
  • 4. Pour all into prepared pie dish. Spread evenly. Sprinkle cinnamon sugar over top. Bake for 40 minutes or until toothpick comes out clean.

2 sticks unsalted butter, well softened, divided
1 1/2 cups sugar, divided
2 pounds tart apples such as Granny Smith, Northern Spy, or Greening, peeled, halved lengthwise, and cored
3/4 teaspoon salt, divided
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground allspice
1/2 teaspoon cinnamon
1/4 teaspoon grated nutmeg
1 1/2 cups walnuts (5 ounces), coarsely chopped, toasted , and cooled completely
2 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
3 tablespoons apple jelly
Equipment: a 9- by 3-inch round cake pan or a 9-inch springform pan wrapped in foil
Accompaniment: Calvados vanilla cream

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Butter pan and fit a round of parchment paper in bottom. Butter parchment, then flour pan.
  • Spread 1/2 stick butter thickly on bottom of a 12-inch heavy skillet and sprinkle 1/2 cup sugar evenly over butter. Arrange apples, cut sides down, over sugar and sprinkle with 1/4 teaspoon salt. Cook over medium heat, turning apples occasionally, until sugar is caramelized and apples are tender and golden brown, 15 to 20 minutes.
  • Arrange apples, cut sides down, in concentric circles in bottom of cake pan, then pour over any caramel from skillet.
  • Whisk together flour, baking powder, baking soda, allspice, cinnamon, nutmeg, and remaining 1/2 teaspoon salt.
  • Pulse walnuts with remaining cup sugar in a food processor until finely ground.
  • Beat remaining 1 1/2 sticks butter in a bowl with an electric mixer until creamy, about 3 minutes. Add walnut sugar and beat until just combined. Add eggs 1 at a time, beating well after each addition, then beat in extracts. At low speed, mix in flour mixture until just combined (batter will be thick).
  • Dollop batter over apples and spread evenly. Bake until torte just begins to pull away from side of pan and a wooden pick inserted in center comes out clean, 45 to 50 minutes. Cool torte in pan on a rack 30 minutes. Put rack over torte, then invert torte onto rack.
  • Melt apple jelly in a small heavy saucepan over low heat, stirring. Brush apples generously with jelly, then cool torte completely, 1 to 1 1/2 hours.

1/4 cup orange-flavored liqueur (recommended: Grand Marnier)
1/4 cup dried cranberries
1 teaspoon ground cinnamon
1/2 orange, zested
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs
8 tablespoons butter, melted
1/3 cup sugar
1 teaspoon vanilla extract
2 cups diced peeled apples (about 2 apples)
1/2 cup chopped walnuts, toasted
Ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small saucepan, heat the orange liqueur. Turn off the heat and add the cranberries, making sure all the cranberries are submerged in the liquid. Set aside.
  • In a small bowl, mix together the cinnamon and the orange zest. Stir in the flour, baking powder, and salt. Set aside.
  • In a large bowl, mix together the eggs, butter, sugar, and vanilla. Add the dry ingredients and stir to combine. Add the apples, walnuts, and drained cranberries. Spoon the mixture into a lightly greased 8 by 8 by 2-inch glass baking dish or 8-inch cake pan. Bake until a wooden skewer inserted in the center of the cake comes out clean, about 30 minutes.
  • To serve, while still warm cut into squares or wedges and serve with ice cream.

Press onto bottom and 1 in. up sides of a greased 9-in. springform pan., In a small bowl, beat cream cheese and remaining sugar until smooth. Add egg and almond extract; beat on low speed just until blended. Pour into crust., Place apples in a large bowl. Mix cinnamon sugar and nutmeg; add to apples and toss to coat. Arrange over cream cheese mixture. Bake 5 minutes. , Reduce oven setting to 400°. Bake until apples are tender, 30-35 minutes longer. Cool on a wire rack., Remove rim from pan. In a small bowl, mix confectioners' sugar and milk until smooth. Drizzle over torte; sprinkle with almonds. Refrigerate leftovers.

TOPPING:
3 cups thinly sliced peeled tart apples

Steps:
