- Preheat waffle maker. In a large bowl, combine biscuit mix, cinnamon and nutmeg. In another bowl, whisk eggs, milk and butter; stir into dry ingredients just until moistened; stir in apple., Bake waffles according to manufacturer's directions until golden brown. If desired, serve with whipped cream, syrup and additional chopped apples.

EASY APPLE WAFFLES

Steps:
- Mix milk, butter, egg and vanilla in a large bowl. Add flour, baking powder, sugar, cinnamon and salt and continue mixing until smooth. Add apples and stir to mix.
- Add batter into preheated waffle iron. Cook until crisp, about 4-5 minutes a piece. Continue until all the batter is gone.
- Serve warm. Add maple syrup, butter or powdered sugar on top.
APPLESAUCE WAFFLES
These Belgian-style waffles are crispy on the outside, but the applesauce keeps them moist and almost muffin-like on the inside. Even better, you can make them when you are out of milk and eggs.

- Preheat the waffle iron. Preheat the oven to 200 degrees F if you plan on holding the cooked waffles in the oven. Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
- Whisk the evaporated milk, applesauce, brown sugar, oil, vanilla and 3/4 cup water in a large bowl.
- Fold the dry ingredients into the wet, and stir until combined. (Don't mix too much-some lumps are OK-just make sure the flour is coated.) Allow the batter to rest at room temperature for 5 minutes before baking.
- Ladle enough batter into the waffle iron to fill it to the edges, and cook until crispy and brown, 6 to 7 minutes. (You can tell the waffles are ready when very little steam comes out of the waffle iron.) Continue in batches until all the batter is used. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Sprinkle with powdered sugar and cinnamon, and serve with maple syrup.
APPLE CIDER DOUGHNUT WAFFLES
These are waffles worth waking up for -- packed with aromatic fall spices, sweet-tart from fresh apple cider, and finished with a crunchy crust of spiced sugar. Make them for breakfast or brunch, or serve them with ice cream for a perfect fall dessert!

- Arrange a rack in the top position of the oven and preheat to 300 degrees F.
- For the spiced sugar: In a small bowl, stir together the granulated sugar, cinnamon and nutmeg to combine. Set aside.
- For the waffles: In a medium bowl, whisk the flour, brown sugar, baking powder, cinnamon, ginger, cloves, nutmeg and salt to combine.
- Add the cider, buttermilk, vanilla and eggs and whisk well to combine -- don't overmix.
- Preheat a waffle iron and spray it with nonstick spray. Scoop in enough batter to just cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. Close the lid and cook until the waffle is lightly golden brown but about 1 minute shy of being done and very crisp. (The timing will depend on your waffle iron; check after 3 to 4 minutes.)
- Open the waffle iron and use a pastry brush to lightly brush the waffle with some of the remaining melted butter. Sprinkle some of the spiced sugar over the surface and close the waffle iron. Continue to cook until the waffle is deeply brown and very crisp, 1 to 2 minutes more.
- Remove the waffle from the iron and repeat with the remaining batter. (You can hold the waffles on a rack on a baking sheet in the oven to keep them warm until ready to serve.) Serve immediately, warm.
CINNAMON APPLE WAFFLES

APPLE-CHEDDAR WAFFLES

- Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.

APPLE CINNAMON WAFFLES
I just purchased a new waffle iron and am on a search for awesome waffle recipes. This is one I found on Mr.Breakfast.com. I hope you enjoy it as much as my family did. Any left over waffles would freeze well (OAMC). NOTE: You can also try adding different fruits and spices instead of apple and cinnamon. I added a couple fistfuls of semi-sweet chocolate chips to the batter and the grandkids flipped over them.

- Sift together flour, sugar, baking powder, and salt. Set aside.
- In a small bowl, beat egg whites until stiff; set aside.
- In a meduim bowl, beat egg yolks well. Stir in milk.
- Add sifted dry ingredients to egg yolks and mix until moistened (be careful not to over mix).
- Add vegetable oil.
- Fold in egg whites.
- Stir cinnamon into mixture.
- Add apples. Blend lightly into mixture.
- Bake in preheated waffle maker for at least 4-5 minutes, until crisp and brown. (They'll be done when waffle iron is no longer emitting steam).
- NOTE: Waffles should be done when steam subsides from waffle maker.
