This is one of our favorite recipes because the oatcakes and apple topping are a tasty, wholesome combination. 1-1/2 cups hot milk
3/4 cup old-fashioned oats
1 large egg, lightly beaten
2 tablespoons canola oil
2 tablespoons molasses
1 cup all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 teaspoon salt
3 large egg whites
LEMON APPLES:
2 tablespoons butter
5 medium tart apples, peeled and sliced
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine milk and oats; let stand for 5 minutes. Stir in the egg, oil and molasses. Combine dry ingredients; stir into oat mixture just until moistened. Beat egg whites until soft peaks form; fold gently into batter. Set aside. , Heat butter in a skillet until foamy. Add the apples, lemon juice and zest; cook, uncovered, for 8-10 minutes, stirring occasionally. , Meanwhile, cook oatcakes. Pour batter by 1/4 cupfuls onto a hot greased griddle. Cook until bubbles form; turn and cook until browned on other side. , For apples, combine sugar, cornstarch and nutmeg; add to apple mixture and cook 2 minutes longer or until tender. Serve warm over oatcakes.

3/4 cup sugar
1 large egg
1 large egg white
1 cup vanilla yogurt
1/3 cup unsweetened applesauce

Steps:

  • Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).
  • Cake: Combine in a bowl all dry ingredients (flour, oats, brown sugar, baking powder and baking soda, nutmeg, cinnamon, salt).
  • Combine in a small separate bowl yogurt and olive oil, then add to dry ingredients.
  • Add apple juice and eggs and beat until combined, then fold in the apples.
  • Spoon mixture into prepared cake tin.
  • Topping: Mix yogurt and olive oil in a bowl.
  • Combine oats, flour, sugar and grated apple.
  • Mix until it is a crumbly texture (If too moist you may add pinches of flour, however the crumble effect will still happen after cooked). Crumble mixture over top of cake batter and bake for 30-35 minutes or until cake is firm and bounces back when lightly touched.

1 1/2 cups oatmeal
4 cups hot water
1 1/2 cups butter
4 -5 yellow apples or 4 -5 green apples, chopped
3 cups brown sugar
6 eggs
4 cups flour
2 cups wheat germ
1 tablespoon cinnamon
1 tablespoon baking soda
1 tablespoon baking powder
1/4 teaspoon vanilla
1/4 teaspoon ground nutmeg
maple syrup
finely chopped walnuts
creme fraiche

Steps:

  • Mix together oatmeal, hot water, butter and chopped apples.
  • Cook for 20 minutes.
  • Beat together the brown sugar and eggs.
  • Combine remaining dry ingredients and vanilla and mix well.
  • Add apple-oatmeal mixture to dry ingredients then add eggs and sugar and blend thoroughly.
  • Cook as you would pancakes on a preheated griddle.
  • Serve with chopped walnuts, maple syrup and creme fraich.

1/3 cup rolled oats
1/3 cup sugar
1/3 cup brown sugar, packed
1/8 teaspoon salt

1/4 cup margarine or 1/4 cup butter, cut into small pieces
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup apple juice
1 teaspoon vanilla
1 egg
1 1/2 cups apples, peeled and chopped

Steps:

  • Preheat oven to 350.
  • Combine flour, oats, sugar, brown sugar, salt and nutmeg in a bowl.
  • Cut in margarine with a pastry blender until mixture resembles coarse meal.
  • Reserve 1/2 cup of flour mixture for topping; set aside.
  • Add baking powder, soda, apple juice, vanilla and egg to remaining flour mixture.
  • Beat mixture at medium speed until blended; fold in chopped apple.
  • Spoon batter into a greased 8-inch round cake pan and sprinkle with the reserved 1/2 c flour mixture over top.
  • Bake for 30 minutes or until cake springs back when touched lightly in the center.
  • Cool on wire rack.

  • Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
  • Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
