Crispy Apple and Kohlrabi Salad image

This super simple kohlrabi salad features honeycrisp apple, lemon, tarragon and olive oil! It's a delicious and unique fall side salad. You'll love it! Recipe yields 4 side servings or 2 large.

2 small kohlrabi (about 1 pound, I used the green variety but purple would be prettier), cut into matchsticks about 1/4″ wide
1 large Honeycrisp apple (about 1/2 pound), cored and cut into matchsticks about 1/4″ wide
1/3 cup grated gouda cheese (optional, not shown)
1/4 cup fresh tarragon leaves
3 tablespoons toasted sunflower seeds*
Lemon zest, to taste
1 to 2 tablespoons olive oil, to taste
1 to 2 tablespoons lemon juice, to taste
Flaky sea salt (like Maldon) and freshly ground black pepper, to taste

Steps:

  • In a large serving bowl, combine the kohlrabi and apple matchsticks. Add the cheese, if using, and the tarragon leaves and sunflower seeds. Shave lemon zest liberally over the bowl (I probably used about half of a small lemon's worth or more).
  • Drizzle in 1 tablespoon olive oil and 1 tablespoon lemon juice, then sprinkle lightly with salt and black pepper. Use your hands to gently toss the salad, then add another drizzle of olive oil and lemon juice if the salad seems dry. Finish with another light sprinkle of salt and pepper and serve immediately.

1/2 cup sugar
1/2 cup fresh tarragon leaves (from about 4 large sprigs)
3 cups apple juice
4 teaspoons freshly squeezed lemon juice

Steps:

  • Place the sugar and tarragon in a food processor or blender and pulse until the tarragon is finely ground and the sugar is green. Transfer the tarragon sugar to a medium bowl; add the apple juice and lemon juice and whisk to combine. Let the mixture stand for 10 minutes, stirring it occasionally, until the sugar has dissolved.
  • Pour the mixture into a 9-inch-square nonreactive metal baking pan and place it in the freezer. Stir the mixture, pulling a fork back and forth through it, every 45 minutes or so for 4 hours, or until frozen. The mixture will become a fluffy, icy concoction.
  • To serve the granita, spoon it into chilled dishes.

4 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons butter, divided
1/4 teaspoon salt
1/8 teaspoon pepper
2 medium tart apples, peeled and sliced
1/2 cup apple juice
1/2 cup 1% milk
1 teaspoon cornstarch
1 tablespoon water
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
Hot cooked long grain and wild rice, optional

Steps:

  • In a nonstick skillet, brown chicken in 1 tablespoon butter for 3-4 minutes on each side. Sprinkle with salt and pepper; remove and keep warm. In the same skillet, cook apples in remaining butter for 6-8 minutes or until tender; remove and keep warm., Add apple juice to pan; cook and stir over medium heat for 4 minutes or until juice is reduced by half. 1 small yellow onion, thinly sliced
0.25 teaspoon black pepper
2 sprigs fresh tarragon, plus 1/2 tablespoon chopped leaves
1 cup heavy cream
0.25 teaspoon kosher salt

Steps:

  • In a large saucepan, over medium-high heat, bring the wine, onion, pepper, and whole tarragon sprigs to a boil. Reduce heat and simmer, uncovered, until the mixture is reduced by two-thirds, 20 to 25 minutes, depending on size of pan.
  • Remove and discard the tarragon sprigs. Add the cream, reduce heat, and simmer gently until slightly thickened, about 15 minutes.

1/2 cup apple cider vinegar
1/4 cup minced shallots
3 tablespoons finely chopped fresh tarragon or 4 teaspoons dried tarragon
2 cups + 1 tablespoon dry sherry, divided
1 can (14 to 14-1/2 ounces) low sodium beef broth
2 teaspoons cornstarch
2 tablespoons coarse-grain Dijon-style mustard
4 teaspoons honey
2 teaspoons unsalted butter, cold

Steps:

  • Combine vinegar, shallots and tarragon in medium skillet; bring to a boil. Reduce heat to medium low and simmer until reduced to 1/3 cup.
  • Add 2 cups sherry and broth; bring to a boil. Reduce heat and simmer 25 to 30 minutes or until reduced to 1 cup.

1 bone-in pork loin, 3-4 lb (1.5-2 kg)
3 large cloves garlic, slivered
Salt and ground pepper
4 tablespoons (2 oz/60 g) unsalted butter
3 tablespoons minced shallot
1/2 cup (4 fl oz/125 ml) chicken broth
2-3 tablespoons Dijon mustard
1 cup (8 fl oz/250 ml) heavy (double) cream
2-3 tablespoons chopped fresh tarragon

Steps:

  • Preheat the oven to 400°F (200°C).
  • With the tip of a sharp knife, cut slits 3/4 inch (2 cm) deep all over the pork loin. Insert the garlic slivers into the slits. Sprinkle the meat generously with salt and pepper and place in a roasting pan.
  • Roast until an instant-read thermometer inserted into the thickest part of the loin away from the bone registers 135°-140°F (57°-60°C) for medium, about 55 minutes. Transfer to a cutting board, tent with aluminum foil, and let rest while you make the sauce.
  • In a sauté pan over low heat, melt the butter. Add the shallot and sauté slowly until soft, about 5 minutes. Add the broth and let cook until almost totally evaporated, about 5 minutes. Whisk in 2 tablespoons of the mustard and the cream and simmer until the sauce is slightly thickened, about 5 minutes. Stir in 2 tablespoons of the tarragon and season with salt and pepper. Taste and adjust the seasoning with more mustard or tarragon. Remove from the heat and keep warm.
  • To serve, carve the pork roast into single chops with the bone and arrange on a warmed platter or individual plates. Spoon the sauce over the chops.
  • Enriching sauces
  • Enriching, or finishing, a sauce with cream adds a bit more fat, but it gives the sauce a luscious, velvety quality. Always use heavy (double) cream for this step. Its high fat content keeps it from curdling at high temperatures.

1 tbsp runny honey
vegetable oil
salt and black pepper
75ml/2½fl oz medium dry white wine
150ml/5fl oz chicken stock
2 sprigs tarragon
150ml/5fl oz double cream
2 tbsp chopped tarragon

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • In a roasting tin, brown the chicken breasts in a little oil. Season both sides, turn skin side up and pour over the honey.
  • Roast until cooked through - about 20 minutes. Remove the chicken from the pan and keep warm while you make the sauce.
  • Pour off any excess fat, add the wine and bring to the boil, scraping to make sure you include any of the juices from the chicken. Reduce until you're left with a couple of tablespoons of richly flavoured liquid.
  • Add the stock and the sprigs of tarragon, bring to the boil and reduce by a third.
  • Stir in the cream, bring to the boil and allow to reduce a little before removing the sprig of tarragon and adding the fresh chopped herb.
  • Adjust the seasoning and serve spooned over the chicken.
