Apple Streusel Sourdough Muffins image

These delicious muffins are a perfect way to use some of your sourdough starter. Don't have sourdough starter? You could leave it out or just add some buttermilk as a replacement for the starter.

1/2 cup Butter (Melted)
1/2 cup Brown Sugar
2 Eggs
1/2 cup Unfed Sourdough Starter
1/2 cup Applesauce
1 3/74 cup All Purpose Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1/2 cup Brown Sugar
1/4 cup All Purpose Flour
2 TBS Butter (Melted)

Steps:

  • Preheat oven to 400 degrees. Line a muffin tin with muffin liners.
  • In a medium bowl, mix together the all purpose flour, baking soda, baking powder, cinnamon, and salt.
  • Mix the melted butter and brown sugar together until fully combined. Add the eggs, sourdough starter, and apple sauce. Mix until combined.
  • Add the dry ingredients to the wet ingredients and mix until just combined. Try not to overmix, as that will cause the muffins to be tough.
  • In another small bowl, add the streusel ingredients and mix them to combine them.
  • Scoop the batter into the muffin tins and top each with about a tablespoon of the streusel mixture. Put the muffin tin in the oven and bake for 22-25 minutes, or until a toothpick comes out clean.

Number Of Ingredients 20

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup butter, melted
1-1/4 teaspoons vanilla extract
1-1/2 cups peeled chopped tart apples
STREUSEL TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
GLAZE:
3/4 cup confectioners' sugar
2 to 3 teaspoons 2% milk
1 teaspoon butter, melted
1/8 teaspoon vanilla extract
Dash salt

Steps:

  • Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter
1 cup white sugar
2 eggs
1 ¼ teaspoons vanilla
1 ½ cups chopped apples
⅓ cup packed brown sugar
1 tablespoon all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
  • In a medium bowl, mix flour, baking powder, baking soda and salt.
  • In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
  • In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
  • Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

1 cup rolled oats
1 cup milk
1/2 cup sourdough starter
1/3 cup canola oil
1 egg, beaten
1/2 cup raisins
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar

Steps:

  • Preheat oven to 400°F (200°C).
  • In a medium bowl, combine rolled oats and milk. Set aside to soak.
  • Grease 12 muffin cups; set aside.
  • Stir sourdough starter, oil, egg and raisins into soaked oats; set aside.
  • In a large bowl mix together flour, baking powder, baking soda, salt and brown sugar. Add oats mixture.
  • Stir until dry ingredients are just moistened; don't over mix.
  • Divide batter among the 12 cups.
  • Bake in preheated oven 20 to 25 minutes or until golden brown. Remove promptly from muffin cups.
  • Can be served hot or cold.

This is a recipe from an old Company's Coming recipe book of my mom's. It is so simple, uses up bruised apples, and tastes great. *Note* It is not a typo, it really is 1 tablespoon of baking powder.

1/2 cup brown sugar, packed
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine, softened
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
2/3 cup milk
1/4 cup vegetable oil
3/4 cup shredded apple, packed (with peel or without)

Steps:

  • Topping: In small bowl rub together the first amounts of sugar, butter, cinnamon, and flour until crumbly.
  • Set aside.
  • Muffins: In large mixing bowl whisk together second amounts of flour, sugar, baking powder, and salt.
  • Make a well in the center.
  • In another bowl beat egg, milk, and cooking oil to blend.
  • Stir in apple.
  • Pour wet mixture into well of dry mixture.
  • Stir just until moistened.
  • Fill greased muffin cups 3/4 full.
  • Sprinkle with topping.
  • Bake in 400 F (200 C) oven for 15 to 20 minutes.

This is a combination of a couple of recipes. I wanted an apple muffin recipe with oatmeal in it and a streusel on top. I also had one with a caramel drizzle so I just combined the best of three recipes! This can be doubled.

1 1/2 cups quick oats
1 cup all-purpose flour
1/2 cup sugar
3/4 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 egg, lightly beaten
1 cup milk
3 tablespoons margarine
1 1/2 cups cored cored and peeled diced apples
1/2 cup oats (quick or regular)
2 tablespoons firmly packed brown sugar
2 tablespoons margarine
1/2 cup brown sugar
3 tablespoons butter
2 tablespoons cream
1/2 cup powdered sugar

Steps:

  • Preheat oven to 400°F.
  • Place oatmeal in a blender or processor for 2 min or till makes course flour.
  • In a bowl combine first 7 ingredients (dry).
  • Make a well in the center and add egg, milk and margarine, stir just till moist, don't over stir.
  • Add apples.
  • Fill greased muffin tins 2/3 full.
  • Streusel:.
  • Place all ingredients in a small bowl and blend with a fork.
  • Sprinkle over tops of muffins.
  • Bake 15-20 minutes or till tops test done.
  • While they bake, place all caramel drizzle ingredients except powdered sugar in sauce pan and bring to a boil. Cook and stir 2 minutes.
  • Remove from heat and blend in powdered sugar.
  • Remove muffins from oven and then from pan.
  • Place on wire rack and drizzle all with caramel drizzle. Cool and store in airtight container.

1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup butter, melted
1-1/2 teaspoons grated orange zest
1 cup fresh or frozen cranberries, thawed
1/4 cup chopped dried apricots

Steps:

  • Let Sourdough Starter come to room temperature before using., Preheat oven to 400°. In a small bowl, mix brown sugar, 1/3 cup flour and cinnamon; cut in cold butter until crumbly. Stir in hazelnuts., In a large bowl, whisk sugar, baking powder, baking soda, salt and remaining flour. In another bowl, whisk egg, melted butter and orange zest until blended; stir in Sourdough Starter. Add to flour mixture; stir just until moistened. Fold in cranberries and apricots., Fill paper-lined muffin cups three-fourths full. Sprinkle with hazelnut mixture., Bake 16-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
