A can't-resist breakfast treat combines autumn's flavors: cinnamon, toasted nuts, and tart Granny Smith apples.

Vegetable cooking spray
1 medium Granny Smith apple, peeled, cored, and quartered
1 cup sugar
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon plus 2 pinches salt
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts, toasted (omit if serving to children under 4)
2 large eggs
1 cup buttermilk, room temperature
1/2 cup (1 stick) unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees. Spray a 12-cup standard muffin tin with cooking spray; set aside. Cut 3 apple quarters into 1/4-inch dice; cut remaining apple quarter into 12 thin slices for garnish.
  • Whisk together sugar, flour, baking soda, salt, and cinnamon in a medium bowl. Add diced apple and walnuts, if using; toss to coat. Whisk together eggs, buttermilk, and butter in a small bowl. Gently fold buttermilk mixture into flour mixture until just combined; do not overmix. Divide batter among muffin cups, filling each about three-quarters full. Top each with an apple slice. Bake until muffins are brown around edges and spring back when touched, 16 to 18 minutes. Let muffins cool slightly, about 5 minutes, before turning out of tin onto a wire rack. Serve warm or at room temperature.

2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/2 teaspoon ground cinnamon
3/4 cup sugar
2 large eggs
1 stick unsalted butter, melted and cooled
1/2 cup whole milk
1 Macintosh apple, peeled and cut into 1/4-inch dice (1 1/4 cups)
Crumb Topping for Muffins(optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, oats, baking powder, salt, and cinnamon. In a separate bowl, whisk together sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients, then stir in apple.
  • Divide batter evenly between muffin cups, adding a scant 1/4 cup to each. Sprinkle with crumb topping if desired. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1-1/4 teaspoons ground cinnamon

1-1/2 cups chopped peeled tart apples
TOPPING:
1/4 cup sugar
3 tablespoons all-purpose flour

2 tablespoons cold butter

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. , For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

3/4 cup rolled oats
6 tablespoons cold unsalted butter, cut into small pieces
6 tablespoons sugar
1/2 teaspoon salt
6 tablespoons all-purpose flour
1 tablespoon pure maple syrup
2 1/4 cups all-purpose flour
1/2 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup pure maple syrup, room temperature
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup plain yogurt

Steps:

  • Make the streusel: In a medium bowl, combine oats, butter, sugar, salt and flour and work with hands until mixture is no longer dry and large clumps form. Add maple syrup and mix to combine. Cover and refrigerate.
  • Make the muffins: Preheat oven to 400 degrees with racks in upper and lower thirds. Line 2 standard 12-cup muffin tins with baking cups. In a medium bowl, whisk together flour, oats, baking powder, baking soda, and salt.
  • With an electric mixer on medium speed, beat butter, maple syrup, and sugar until pale and fluffy, 3 to 5 minutes. Add eggs, one at a time, beating well after each addition; mix in vanilla.
  • Reduce mixer to low. Add flour in 3 additions, alternating with 2 batches of yogurt; beat until combined. Transfer batter evenly amongst 24 muffin tins (a scant 1/4 cup per tin). Remove streusel from refrigerator and break up into small pieces. Scatter evenly over the top of the muffins. Bake, rotating once, until tops spring back and a toothpick inserted into the middle comes out clean, 16 to 18 minutes. Let cool 5 minutes in tin, then transfer to a wire rack to cool completely. Brush muffins with more maple syrup while warm, if desired.

2 teaspoons ground cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon freshly ground nutmeg
1/8 teaspoon ground cloves
8 ounces (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 1/2 cups packed light-brown sugar
4 large eggs
Apple-Cider Applesauce or 1 1/2 cups store-bought applesauce
1 cup toasted pecans, chopped
1 package (8 ounces) cream cheese, room temperature

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin and a 6-cup tin with paper liners. Sift flour, cinnamon, baking soda, salt, nutmeg, and cloves together into a medium bowl. Set aside.
  • Put 8 tablespoons (1 stick) butter, the granulated sugar, and 1/2 cup brown sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until smooth, about 3 minutes. Mix in eggs, one at a time. On low speed, mix in applesauce and then flour mixture. Stir in nuts by hand.
  • Divide batter among muffin cups, filling each about three-quarters full. Bake until a cake tester inserted in centers comes out clean, 18 to 20 minutes. Let cool completely in tins on a wire rack.
  • Meanwhile, in the clean bowl of electric mixer, mix cream cheese with remaining 8 tablespoons (1 stick) butter and 1 cup brown sugar on medium speed until smooth. Spread cream-cheese frosting on muffins.

Mix glaze ingredients; drizzle over tops.

Steps:

  • FOR STREUSEL: Stir brown sugar, flour, and cinnamon in small bowl. Cut in butter with a pastry blender. Set aside.
  • FOR MUFFINS: Lightly oil twelve 2 1/2-inch muffin cups or line with paper baking cups; set aside. In a medium mixing bowl stir together flour, granulated sugar, baking powder, and salt. Make a well in the center. In a small mixing bowl combine egg, apple cider, and oil; add all at once to flour mixture. Stir just till moistened. (The batter should be lumpy.).
  • Spoon about 1 tablespoon of the batter into each prepared muffin cup. Sprinkle 1 teaspoon of the brown sugar mixture over each. Fill with remaining batter. Sprinkle tops of muffins with remaining streusel.

The addition of sour cream makes these muffins super moist, with a awesome rich flavor. This recipe makes two dozen muffins, which is a great because you can share with friends! Use your favorite apples, this recipe used Northern Spy. Honey Crisp are one of my favorite apples, along with Gala and Fuji. A tart apple would do well here too. 2 1/2 teaspoons baking powder

  • For Topping:
  • With your hands blend sugar, flour, cinnamon(and nutmeg if using) and softened butter until mixture reaches a crumb-like texture.
  • Grease muffin tin well(may use cooking spray or butter or margarine) and fill each section ¾ full with muffin batter. Top generously with streusel topping.
  • Bake at 400 degrees for about 20 minutes.
  • To test: gently press the top of a few muffins with your index finger, if the top gives and then springs back the muffins are done. Enjoy!

2 tablespoons soy margarine, firm stick
1/4 cup all-purpose flour
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
1 cup rice milk
1/4 cup safflower oil
1/2 teaspoon vanilla
1/4 cup unsweetened applesauce
1 cup shredded apple
2 cups whole wheat flour
1/3 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400. Line muffin pan with 12 baking cups.
  • Prepare Streusel Topping by cutting margarine into flour, brown sugar and cinnamon in a medium bowl using a pastry blender or crisscrossing two knives until crumbly. Set aside.
  • Beat rice milk, oil, vanilla and applesauce in large bowl. Stir in shredded apple.
  • Stir in flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy).
