APPLE MEAT LOAF
"This is a little twist on the great meatloaf my mom made when I was a kid," says Deborah Williams of Peoria, Arizona. "The apple gives it a bit of a sweet flavor and helps keep it moist."

Steps:
- In a small skillet, saute onion in butter until tender. In a large bowl, combine the apple, bread crumbs, egg, ketchup, mustard, salt, pepper and allspice. Stir in onion. Crumble beef over mixture and mix well. Shape into a 6x5-in. loaf., Place in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 40-45 minutes or until no pink remains and a thermometer reads 160°.

Steps:
- Preheat oven to 350 degrees F.
- Mix beef, bread crumbs, onion, eggs, diced apple, soy sauce, and salt and pepper, to taste in a bowl,.
- Form meat mixture into a loaf and place on a baking pan.
- Insert the 8 apple wedges into the top of the meatloaf.
- Combine the honey and ketchup and drizzle it over the top of the meatloaf.
- Bake in preheated oven or 1 hour.

Steps:
- Preheat oven to 350 degrees. Cook onion and garlic in microwave for 2-3 minutes until tender.
- Combine onion and garlic with sage, parsley and bread crumbs, 3/4 cup applesauce, egg, cinnamon, cardamom, salt and pepper in large bowl and mix well.
- Stir in beef and pork and mix gently just until combined.
- Shape mixture into loaf and place in a 1 quart baking dish. Bake at 350 degrees for 1 1/2 hours.
- Meanwhile, make Apple Glaze. Combine 1 cup applesauce, apple liquour, mustard and brown sugar in small saucepan. Heat and stir until well blended.
- After the meatloaf has been in the oven for 1/2 hour, spoon some of the apple glaze over and continue baking. Baste with the glaze every 20 minutes until internal temperature registers 160 degrees.
- Remove from oven and let meatloaf sit for 15 minutes before serving.

APPLE & SPICE TEALOAF

- Heat oven to 180C/fan 160C/gas 4. Butter a 900g/2lb loaf tin and line with a strip of baking paper, or use a loaf tin liner (see tip, below). Beat together the butter and sugar until pale and creamy, then beat in the eggs one by one. Grate half the apple and mix it into the batter with the vanilla, dried fruit and ground almonds. Mix the baking powder, flour and spices together with a pinch of salt, then fold into the mix until even. Spoon into the tin and level the top.
- Thinly slice the remaining apple half, toss with the lemon or orange juice, poke the slices a little way into the batter, then sprinkle with 1 tsp more sugar. Bake for 45 mins, then turn the oven down to 140C/fan 120C/gas 1. Cover the cake with foil, then bake for another 45 mins until a skewer inserted into the middle comes out clean. Cool in the tin.
- To finish the cake, melt the marmalade or jam in a small pan, sieve to remove any lumps, then brush it over the cake to glaze the top. Serve cut into thick slices, and spread with a little butter, if you like. Will freeze for up to 1 month.
