Steps:
- Preheat oven to 350.
- Grease a 13 x 9 x 2 baking pan.
- Cream butter and sugar.
- Add eggs and vanilla, beat well.
- Sift together flour, baking soda, baking powder, and salt.
- Add dry ingredients to the first mixture alternately with 1 cup sour cream.
- Stir in chopped apples.
- Spread evenly in greased pan.
- Mix together ingredients for nut topping.
- Sprinkle over batter.
- Bake for 35-40 minutes.
SOUR CREAM APPLE CAKE
I posted this recipe in answer to a message board request. It is a family favorite that I make frequently in the Fall (when the apples are in season). I only use red delicious apples because of their flavour and because they do not get "too mushy" when baked in the cake.

Steps:
- In a bowl, sift together the flour, salt, cinnamon, baking soda and baking powder, and set aside.
- In a small bowl, mix the brown sugar, 1/2 cup nuts and cinnamon together, and set aside (for topping).
- In a large bowl, with electric mixer, beat oil and sugar together until creamy.
- Add eggs and beat until mixture is fluffy.
- Stir in sour cream (by hand).
- Stir in flour mixture (by hand), batter will be very thick.
- Add vanilla, apples and 1 cup nuts, and blend well.
- Pour mixture into a buttered& floured bundt pan (or 9-inch tube pan).
- Sprinkle the sugar/nut topping mixture over the top of the batter.
- Bake for about 60 to 75 minutes in a preheated 350°F oven (or until toothpick inserted in center comes out clean).
- Cool cake in pan, on rack for about 15 minutes.
- Remove cake from pan, and finish cooling on rack.
- In a small bowl, mix the powdered sugar together with enough milk to make a glaze that is thin enough to drizzle over the top of the cake (in thin squiggly strands).
- When cake is completely cooled, drizzle the glaze across the top.

- Heat oven to 350°F.
- Beat eggs, cake mix, water and oil in large bowl with mixer until blended. Stir in pie filling.
- Pour into 13x9-inch pan sprayed with cooking spray.

- Preheat oven to 350. Grease and flour a 10″ bundt cake pan and set aside.
- In a large bowl (like the bowl of your stand mixer), combine the butter and sugar and beat with an electric mixer on high speed until light and fluffy (about 90 seconds). Add eggs, one at a time, mixing completely after each addition. Add the vanilla and mix to combine.
- In a medium bowl, combine flour, baking powder, baking soda, and salt. Add 1/3 of the flour mixture, beating until completely combined. Add 1/2 of the sour cream, mix completely, then add another 1/3 of the flour, mix completely. Add the last of the yogurt, mix completely, then add the final 1/3 of the flour mixture. Mix until combined and set aside.
- Place the chopped apples in a small mixing bowl. Sprinkle with flour, brown sugar, and spices and toss to coat evenly. Set aside (but not too far aside-you'll need them in just a second.)
- Pour enough batter into the bottom of the pan to cover about 1″ of the bottom of the pan. Cover this layer with about 1/2 of the apples. Spread enough batter over the apples to completely cover them, then spread the remaining apples over the batter layer. Spread the last of the batter over the apples. Bake in the preheated oven for 45-55 minutes or until golden and a pick inserted into the center of the cake comes out clean. Remove the cake from the oven and allow to cool completely.
- Invert the cake onto a serving plate. If desired, whisk together the glaze ingredients and drizzle over the cake. Makes 16 servings.

- Set oven to 375 degrees.
- Butter a 13x9-in baking pan.
- FOR TOPPING: Sprinkle bread crumbs evenly in the bottom of baking dish; set aside.
- In a bowl, toss apple slices with brown sugar, slivered almonds and cinnamon.

- In a small bowl mix nuts, cinnamon, and 1 cup of the sugar; set aside.
- Cream butter and the rest (1 cup) of sugar, beating until light and fluffy with electric mixer on high.
- Add Eggs one at a time, beating after each addition.
- Add vanilla.
- Add flour, baking powder, salt and baking soda, beating well.
- Add sour cream; mix well.
- Spread 1/2 of the batter in a 9 or 10 inch square pan.
- Top with all of the slices of apples. Over the top of the apples put 1/2 of the nut, sugar, cinnamon mixture.
- Add remaining batter and then sprinkle remaining nut mixture over all.
- Bake at 350° for 40 minutes or until knife inserted in center comes out clean.

FANTASTIC APPLE SOUR CREAM COFFEE CAKE
This addition of sour cream in this coffee cake makes it so moist and delicious! This is one of my all-time favorite cake recipes, I have even made this cake with fresh blueberries adding in 1 tsp almond extract to replace the vanilla, or you can even add it in when using apples --- this cake is fantastic without the topping and just used as a white cake --- I usually double the brown sugar topping and spread half of the cake batter in the pan then sprinkle half of the topping then top with remaining batter, the batter will not really cover the topping mix if you are using a 13x9-inch pan but not to worry it will bake together just fine and besides you will be sprinkling the remaining batter on top anyway! --- serve this with whipped cream or ice cream, *SO* delicious!

- Peel, deseed and cut the apples into eighths. Pour the lemon juice over the apples and sprinkle with a little caster sugar so that they do not darken.
- Heat the oven to 190C/fan 170C/gas 5. Beat the eggs with the remaining caster sugar in a mixer until you have a thick, pale, mousse-like mixture. Sift over the flour and baking powder, and fold it in followed by the soured cream, rum and butter.
- Butter the inside of a 23cm springform tin and arrange the apples on the base. Spoon the batter on top and level it with a spatula. Put the cake in the oven and bake for 50 minutes-1 hour without opening the door. Cool the cake and then turn it out onto a plate, and sprinkle it with icing sugar to finish.

- Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour.
- Make caramelized apples:
- Peel and core apples, then cut into 1/2-inch-thick wedges.
- Spread softened butter in an even layer over bottom of a 12-inch heavy skillet and sprinkle with brown sugar. Add apple wedges and cook over moderate heat, without stirring, until sugar is melted and apples start to give off liquid, about 10 minutes. Cook, stirring occasionally, until apples are just tender and juices become syrupy, about 30 minutes more.
- Pour syrup from skillet into a small heatproof bowl, then sauté apples, stirring occasionally, until caramelized and very tender, about 30 minutes more. Return syrup to apples and cook until heated through, about 2 minutes.
- Make cake while apples cook:
- Whisk together flour, baking powder, baking soda, salt, and spices in a bowl.
- Beat together butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Beat in egg until combined. Add maple syrup, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, then mix until just incorporated.
- Spread batter in cake pan and bake until cake is golden brown and a wooden pick or skewer inserted in center comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes.
- Make cream just before serving:
- Beat cream with sour cream and sugar using cleaned beaters at high speed until it just holds soft peaks.
- To serve:
- Run a thin knife around edge of pan, then invert cake onto a plate and cut into squares. Serve warm or at room temperature, topped with warm apple mixture and cream.
