MOUNDS CAFE
So named because it has the flavors of a Mounds candy bar. I came up with this one this morning and it is quite tasty if I do say so myself! This holds well in a good thremos.

Steps:
- Pour coffee into a 10 oz cup.
- Add extracts and as much Splenda as you like and stir well.
- Add the fat free evaporated milk if desired.

Steps:
- Melt chocolate in a small pan over very low heat; you can use a double boiler if you wish and temper the chocolate.
- Using a small paint brush, coat the bottom and sides of a mounds candy mold.
- Place mold in freezer for 10 minutes to allow chocolate to harden.
- In a small bowl, combine shredded coconut, coconut oil and agave.
- Remove mold from freezer.
- Fill chocolate lined molds with coconut mixture.
- Paint chocolate over coconut mixture to cover bars.
- Place in freezer for 10 minutes to harden.
- Remove from freezer, turn mold upside down and pop mounds out of mold.
- Serve.

- Place shredded coconut in a medium-sized mixing bowl. (You could also mix in a food processor).
- Press mixture into a tablespoon measure. Press down and then scoop out and place on a baking sheet that has wax paper. Continue to place coconut scoops on the wax paper. Place baking sheet in the freezer for 30 minutes.
- To prepare the chocolate coating - place chocolate chips in a microwavable bowl along with the coconut oil. Microwave in 30-second intervals until almost, but not completely melted. When almost melted, remove from microwave and stir to melt.
