- Add chicken, onion and garlic to slow cooker. Turn slow cooker to high and cook for up to an hour.
- Add all spices, corn, green beans, black beans, kidney beans, diced tomatoes, tomato paste and chicken stock. Mix well to combine. Turn the cooker's heat to low to cook for an additional 6 - 7 hours, or until chicken is very tender and falling apart.
- Before serving, remove chicken tenderloins and shred. Add chicken back to soup.
- Serve your soup topped with cheese and a pinch fresh cilantro.

- Preheat large dutch oven or heavy bottom pot on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces.
- Add taco seasoning and cook for 1 more minute, stirring frequently.
- Add tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir.
- Cover, bring to a boil, reduce heat to low and simmer for 20-60 minutes (longer - deeper flavours but overall soup is ready fast).
- Preheat large ceramic non-stick skillet on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces. Add taco seasoning and cook for 1 more minute, stirring frequently.
- Transfer to a large slow cooker along with tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir. Cover and cook on Low for 7 - 8 hours or on High for 3 - 4 hours.

- If your slow cooker has a sauté option, turn on and add the oil. Add in the onion and cook until soft, about 5 minutes, until softened. Stir in the minced garlic and cook until just fragrant, about 30 seconds then add in the chili powder, ground cumin and smoked paprika and cook another 30 seconds. Turn off.
- If your slow cooker doesn't have a sauté option, sauté the onion until softened in a separate sauce pan, then add in the garlic and spices as directed above. You don't have to do this step, but does help give the soup additional flavor. Add to the base of a slow cooker.
- Add in green chiles, tomatoes with juices, vegetable broth, beans and corn. Cover and set the slow cooker for 4 hours on high.
- When ready to eat, season to taste adding in salt/pepper as desired. Right before stirring, add in the lime juice and serve! Top as desired.

- (OPTIONAL): About 15 minutes before serving, mix the Masa Harina with hot water and pour into the soup. Stir. The soup will begin to thicken during the last minutes of cooking. One maker, Sabrina, added a good squeeze of lime at the end of cooking - I agree!
- Ladle into soup bowls and garnish with any toppings you like: avocado, jalapeño, cilantro, sour cream, diced onions, lime wedges or shredded cheddar.
