16 cups 1-inch bread cubes, white or whole wheat (2 baguettes)
4 tablespoons unsalted butter (1/2 stick)
2 cups medium-diced yellow onion (2 large)
2 cups medium-diced celery (3 large stalks)
2 Granny Smith apples, unpeeled, cored and large diced
2 tablespoons chopped flat-leaf parsley
1 1/2 teaspoons minced fresh rosemary leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup chicken stock
1/2 cup sliced blanched almonds, toasted, optional

Steps:

  • Preheat oven to 300 degrees F.
  • Put the bread cubes on a 13 by 18 by 1-inch baking sheet and bake them in the oven for 7 minutes.
  • In a large saute pan, melt the butter and add the onion, celery, apples, parsley, rosemary, salt, and pepper. Saute for 10 minutes, until the mixture is soft.
  • Combine the bread cubes and cooked vegetables in a large bowl and add the chicken stock, and almonds, if desired.
  • Place the stuffing into the main cavity of the turkey and into the neck of the bird. I cook a 12-pound turkey for 2 1/2 hours at 350 degrees F in a preheated oven. Make sure the stuffing in the cavity is secured by wrapping the legs tightly with string.

1 medium onion, roughly chopped
2 celery stalks, roughly chopped
2 medium green apples, roughly chopped (do not peel)

freshly ground black pepper
1 medium loaf rustic country bread, cut into 1-inch cubes (about 10 cups)
1 1/2 cups low-sodium chicken broth, plus more if necessary
1/2 cup apple cider
1 teaspoon chopped fresh rosemary leaves
1 1/2 teaspoons chopped fresh thyme leaves
1/2 cup dried cranberries
2 eggs, lightly beaten

Steps:

  • Preheat the oven to 375°F. In the bowl of a food processor, pulse the shallot, onion, celery, apple, and garlic, scraping down sides of the bowl, until finely chopped.
  • In a 12-inch cast iron or other oven-safe skillet over medium-high heat, heat butter. Add the chopped vegetable mixture, season with a generous pinch of salt and pepper, and cook, stirring occasionally, until tender, 7 to 8 minutes. Reduce heat to medium, add the bread cubes and cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Remove pan from heat and stir in the broth, cider, rosemary, thyme, and cranberries. Once the liquid is completely absorbed, stir in the eggs, transfer the pan to the oven and bake until browned on top and cooked through, 20 to 25 minutes.

5 tablespoons unsalted butter, divided
10 shallots, peeled and thinly sliced in strips
kosher salt
1 bulb fennel
1 celery root
1 McIntosh apple, peeled, cored, and cut into ½-inch dice, or apple of your choice
Freshly ground black pepper
1 loaf French bread (about 1 lb), torn into 1-inch pieces and dried, spread pieces on baking sheet, let dry overnight at room temperature
1 cup golden raisins
7 leaves sage
3 sprigs thyme
1/2 teaspoon ground coriander
3 cups whole milk, plus more as needed

Steps:

  • In a large stock pot over medium heat, melt 4 tablespoons butter. Add the shallots, season with salt, and sauté, stirring occasionally, until soft and translucent, 6-8 minutes. Remove fennel stalk and fronds from bulb; save for another use or discard. Cut bulb in half, then cut out and discard the core from each half. Slice fennel into a ½-inch dice and set aside.Using a knife to peel off the tough skin of the celery root; discard the skin. Slice celery root into a ½-inch dice. To the pot, add fennel, celery root, apple, and walnuts; stir to combine. Sauté over medium heat, stirring occasionally, until tender, 3-4 minutes. Season with salt and pepper.
  • Turn off the heat; add the bread and raisins to the pot. Stack sage leaves, then roll like a cigar and thinly slice across to create fine ribbons of sage (also known as a "chiffonade"). Remove thyme leaves from the stem by pinching the tip of the sprig and pulling straight down. Add coriander, sage, and thyme leaves to the pot; season generously with more salt and pepper.
  • Add milk a little at a time, and use your hands to gently combine all the ingredients after each addition. (If mixture is too hot, gently mix with wooden spatula or spoon until the stuffing cools.) Make sure each crouton is coated with milk, but not soggy. When enough of the milk has been added, allow the stuffing to rest, stirring occasionally, until the milk has fully absorbed, about 15 minutes. Meanwhile, grease a 13-by-9-inch baking dish with 1 tablespoon butter and preheat oven to 350 F.
  • Transfer the dressing to the prepared baking dish and bake until browned and crispy, about 50-60 minutes.

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

Pork Roast With Apples and Shallots image

This is an adapted recipe - it was initially published in "The Best Slow & Easy Recipes" by the editors of Cook's Illustrated ( 2008, $35) using boneless pork loin. I prefer to use a Boston butt or boned rolled pork shoulder, moister & much more economical. The cocotte method of using a tightly covered cooking vessel, low heat & minimal extra liquid makes for a wonderful dish. I've listed the ubiquitous Granny Smith apples but we use Limber Twigs, a great keeping/cooking apple, stored over winter in the garage. Any cooking apple works well. I also add about 2 tablespoons of Calavados (well, a glug) before covering & putting in the oven. The cooking time for the butt & shoulder is longer - I cook until an internal temp of 160F is obtained - about 85 minutes. This works well with mashed potatoes & cooked kale, mustard greens or turnip greens.

2 1/2-3 lbs boneless pork loin roast (or Boston butt as above)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon marjoram
1/2 teaspoon lavender (optional)
2 teaspoons kosher salt
1 teaspoon black pepper, freshly ground
3 tablespoons vegetable oil (use 1 t if using butt or shoulder)
8 shallots, peeled and quartered
1 lb apple, peeled, cored and cut into 1/2-inch-thick wedges (Golden Delicious or Granny Smith - 2 to 3 medium)
1 teaspoon sugar
1 tablespoon butter

Steps:

  • Heat oven to 250 degrees. Pat pork dry, sprinkle with herbs and season to taste with salt and pepper.
  • Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Brown pork well on all sides. Transfer pork to a large plate.
  • Add remaining 1 tablespoon oil to pot. If using butt or shoulder, drain all but 2 tablespoons oil from pot as these are cuts with fat versus the loin. Add the shallots and cook about 3 minutes. Add the apples and sugar and cook about 5 minutes.
  • Off the heat, return the pork and any accumulate juices to the pot. Place a sheet of foil over the pot and press to seal, then cover tightly with a lid. Transfer the pot to the oven and cook until pork reaches an internal temperature of about 145 degrees, about 35 to 55 minutes (160F for butt & shoulder, about 85 minutes).
  • Remove pot from oven and transfer pork to a cutting board, tent loosely with the foil and let rest 5 to 10 minutes.
  • Stir butter into the apple-shallot mixture, season with salt and pepper.
  • Slice the pork and serve with apple-shallot mixture.

1 C quinoa
1/4 tsp sea salt
1 1/2 C + 1/2 C low-sodium vegetable stock
1 diced apple
1 tsp fresh thyme
2 tbsp + 1 tbsp olive oil
1 C finely chopped leek
3/4 C finely chopped celery
1 finely chopped shallot
2 garlic cloves, minced
1 tbsp finely chopped sage
1 tsp finely chopped rosemary
1/2 tsp nutmeg
1/4 tsp sea salt
1/4 tsp ground black pepper
1/2 C dried cranberries
1/3 C finely chopped parsley

Steps:

  • Rinse quinoa in a sieve under water for approximately 30 seconds and drain thoroughly. Add it to a pot with the low-sodium vegetable stock and sea salt, and bring to a boil. Once boiling, stir in diced apple and cover with a lid. Reduce heat to low and cook for 10 minutes. Once all the water is absorbed, remove the pot from the heat and stir in fresh thyme and 2 tablespoons of olive oil.
  • While the quinoa is cooking, you can create the other component to the stuffing. Heat 1 tablespoon of olive oil in a pan over medium heat and sauté leek, celery, and shallot for 4 minutes until soft.
  • Add in garlic, sage, rosemary, nutmeg, sea salt, and ground black pepper, and cook for 2 minutes. You may need to reduce the heat to med-low so you don't burn the garlic. Then add in a 1/2 cup low-sodium vegetable stock and simmer, stirring occasionally for 5 minutes. Add in dried cranberries and parsley and cook for another 2 minutes. Mix this into the quinoa and apple component and serve warm.
  • You could also make this dish ahead of time and then reheat in the oven before serving.

1/4 teaspoon freshly grated nutmeg
Pinch of ground allspice
1 cup walnuts (1/2 lb), toasted and coarsely chopped

Steps:

  • Preheat oven to 325°F.
  • Spread bread cubes in 2 shallow baking pans and bake in upper and lower thirds of oven, switching position of pans halfway through baking, until golden, 20 to 25 minutes total. Cool bread in pans on racks, then transfer to a large bowl.
  • Melt butter in a 12-inch heavy skillet over moderate heat, then add shallots and cook, stirring frequently, until shallots are well browned, 15 to 20 minutes.
  • While shallots are cooking, peel, core, and coarsely chop apples. Boil currants and cider in a 1-quart heavy saucepan, stirring occasionally, until cider is absorbed, 6 to 8 minutes. Add apples to browned shallots along with marjoram, salt, pepper, nutmeg, and allspice and cook, stirring occasionally, until apples begin to soften, about 8 minutes.
  • Transfer currants and apple mixture to bowl with bread cubes, then add walnuts, zest, and stock and toss well.
  • Transfer stuffing to a buttered 3- to 3 1/2-quart shallow baking dish. Bake, covered, in middle of oven 30 minutes, then uncover and bake until browned, about 30 minutes more.
