SAUSAGE-APPLE STUFFING

1 stick unsalted butter, plus more for tasting
6 medium firm apples (such as Macoun or Braeburn), peeled and cut into large cubes
1 tablespoon honey
1 tablespoon red wine vinegar
12 slices white sandwich bread, cut into 1/2-inch cubes
1 pound spicy Italian sausage, casings removed, broken into bite-size pieces
10 sage leaves, cut into thin strips
2 tablespoons fresh thyme
1 teaspoon chopped fresh rosemary
4 leeks (white and light green parts only), halved lengthwise and thinly sliced crosswise
6 stalks celery, halved lengthwise and thinly sliced crosswise
1 pound small parsnips, peeled, quartered lengthwise and thinly sliced crosswise
Kosher salt and freshly ground white pepper
1 cup low-sodium chicken stock

Steps:

  • Preheat the oven to 450 degrees F. Heat 1 tablespoon butter in a large skillet over medium-high heat until it melts and starts to brown; add the apples, reduce the heat to medium and cook, stirring, until slightly tender, about 4 minutes. Stir in the honey and vinegar, then transfer to a large bowl to cool.
  • Melt 2 tablespoons butter in the same skillet over medium-low heat. Add the bread cubes and toss to coat, then transfer to one side of a large rimmed baking sheet; add the sausage to the other side. Bake until the sausage is cooked through and the bread is toasted, 8 to 10 minutes. Add the sausage and bread to the bowl with the apples; add the sage, thyme and rosemary.
  • Heat another 1 tablespoon butter in the skillet over medium heat. Add half each of the leeks, celery and parsnips, and 2 tablespoons water; season with salt and pepper. Cook until the vegetables are translucent, about 8 minutes, then transfer to the bowl with the sausage-apple mixture. Add the remaining leeks, celery and parsnips, and 2 tablespoons water to the skillet, season with salt and pepper and cook about 8 minutes; transfer to the bowl and toss. Warm a spoonful of the stuffing in the skillet with a touch of butter and taste the seasoning; adjust as needed. (It's so important to taste your stuffing while it's hot to get a sense of the seasonings and flavors.) Add the chicken stock to the bowl and toss to moisten all of the ingredients.
  • Reduce the oven temperature to 350 degrees F. Brush a 9-by-13-inch baking dish with 1 tablespoon butter. Transfer the stuffing mixture to the dish and dot with the remaining 3 tablespoons butter. Cover with aluminum foil and bake 40 minutes, then uncover and continue baking until golden brown, about 40 more minutes.

2 medium onions, finely diced
3 cups chopped celery, (about 6 large stalks)
6 cups coarsely chopped leeks, (about 12)
4 apples, peeled, cored and chopped
1 pound breakfast sausage or Italian sausage, casings removed
6 teaspoons poultry seasoning
2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)
2 teaspoons chopped fresh sage leaves, (about 6 leaves)
2 teaspoons chopped fresh parsley leaves, (about 4 to 6 sprigs)
2 cups dried cranberries
1 box stuffing mix (not cornbread) (recommended: Pepperidge Farm)
2 cups (1 pint) vegetable stock
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in a large skillet and saute the onions, celery, leeks, apples, and sausage, breaking up the sausage as you cook. After about 10 minutes, add the poultry seasoning, fresh herbs and dried cranberries. Add the dried stuffing mix and moisten with the vegetable stock. Season stuffing mix with salt and pepper, to taste. (I like the stuffing a little wetter - if you don't, just add less stock)
  • Place into a buttered casserole dish and bake for 45 minutes.

1 lb bacon, diced
1 large onion, chopped
1 cup celery, chopped

Steps:

  • Broth Mixture- Combine gravy mix, melted butter& broth.
  • Bring to a boil in a saucepan over medium heat until slightly thickened.
  • Stuffing Mixture- In a large skillet fry sausage and bacon until almost crisp then remove to a large bowl.
  • Discard all but 2 tbl of the bacon drippings; add onion, celery, mushrooms, apples, parsley& herbs.
  • Sauté mixture for 5 minutes.
  • Mix in stuffing cubes.
  • Add to the bowl with bacon& sausage.
  • Pour broth mixture over ingredients.
  • Mix well.
  • Season to taste with salt& pepper.
  • Place stuffing into 9x13 pan, cover with foil and heat in 350F oven for 30 to 45 minutes until hot.

6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casings removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
Kosher salt
3 cups chicken broth, homemade or low-sodium canned
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (see Cook's Note)
2 large eggs, beaten

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
  • Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 2 tablespoons butter in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Remove with a slotted spoon and transfer to a plate.
  • Melt the remaining 6 tablespoons butter in the skillet, then add the onion, celery, apples, sage, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the cider. Bring to a boil, scraping up any browned bits, and cook until reduced by half, about 5 minutes. 3/4 cup heavy cream
2 large eggs
1/4 teaspoon garam masala, plus a pinch for the apples
6 cups day-old sourdough bread, cubed

1 bulb fennel
1 Spanish onion
2 tablespoons Chopped tarragon, plus additional to garnish

Steps:

  • For the French toast batter: In a bowl, whisk buttermilk, heavy cream, eggs, and garam masala. Pour over bread cubes, toss, and let rest so the bread can absorb all of the liquid. For the stuffing: Peel, core, and evenly slice the apples. Melt 2 tablespoons butter in a skillet over high heat; add the apples, turn the heat to medium, and cook for 5 minutes. While the apples are cooking, core and thinly slice the fennel and onions so they are the same size. Season apples with a pinch of garam masala, a pinch of salt, then toss, remove from skillet and set aside.
  • Add 1 tablespoon butter to the same skillet and add the fennel and onions, along with the tarragon and a pinch of salt. Cook until just tender, 5 minutes. Remove from the skillet and set aside.
  • In the same skillet over medium heat, brown the sausage and break it up. After a minute or two, flip to brown on the other side. Remove and set aside. Over medium heat, melt 2 tablespoons of butter in the skillet and add half of the bread/French toast mixture in an even layer. Add a pinch of salt and continue cooking until the bread is brown and caramelized in parts; set the browned bread aside. Repeat with the remaining butter and bread/French toast mixture. Add all of the bread to a serving bowl along with the apples, fennel, onion, and sausage. Toss, then top with the tarragon and pistachios, and serve.

I found this recipe in an old Homemaker's magazine. I made it for a Thanksgiving dinner a few years ago, and now whenever it's my turn to cook a holiday meal, I have to make this! It's easy and delicious. I prefer making the stuffing as a side dish, rather than stuffing the turkey, so the turkey cooks quicker and it makes less of a mess.

3 stalks celery, chopped
1 tablespoon sage
1 teaspoon thyme
1 teaspoon marjoram
10 cups cubed bread (stale works best)

1 1/4 cups chicken stock
1/2 cup fresh parsley, chopped
salt and pepper

Steps:

  • Cook sausage until no longer pink, about 10 min, stir often.
  • Drain most of the fat (leave about a tablespoon).
  • Add onions and celery, cook another 3 minute.
  • Stir in apples, sage, thyme, and marjoram, cook another 5 minutes.
  • Add 1 cup of chicken stock, and bring to a boil.
  • Remove from heat, stir in bread, parsley, salt and pepper.
  • Spoon into a lightly greased casserole dish.
  • (This recipe can be made ahead to this point, it will keep in the fridge for 2 days or in the freezer for 2 weeks. If frozen, thaw in fridge before baking).
  • Bake, covered, in 325°F oven for about 40 minutes. Halfway through cooking time, drizzle with the remaining chicken stock.
  • Remove the lid and bake 10 more minutes, until the stuffing has a crusty top and is heated through.

1/4 teaspoon ground allspice
1/4 cup Cognac
13 to 14 cups 1/4-inch day-old French bread pieces (crusts trimmed)
10 tablespoons (1 1/4 sticks) unsalted butter
2 cups finely chopped peeled tart green apple (about 1 1/4 pounds)
1 1/2 cups minced onion
1 cup minced celery
3/4 cup minced fresh parsley
1 tablespoon ground sage
1 1/2 teaspoons dried thyme, crumbled

Steps:

  • Place pork tenderloin and pork fat on baking sheet. Freeze 20 minutes. Quickly cut meat and fat into 1-inch cubes. Pass cubes through meat grinder fitted with fine blade (or have butcher grind meat and fat together twice). Transfer mixture to large bowl. Add salt, thyme, sage, nutmeg, pepper, and allspice and mix well. Blend in Cognac. Cover and chill overnight.
  • Preheat oven to 300°F. Spread French bread on 2 large baking sheets. Bake until brown and dry, stirring frequently, 20 to 30 minutes. Let cool. Transfer to large mixing bowl.

  • Melt remaining butter in same skillet over low heat. Add apple, onion, and celery and cook until vegetables begin to soften, 5 to 7 minutes, stirring occasionally. Stir in parsley and cook 2 to 3 more minutes. Add mixture to bread and toss gently. Blend in remaining ingredients. Taste and adjust seasoning. Cool completely.
  • If serving stuffing separately (without turkey), cover and bake 1 hour in 325°F oven.

  • Heat oil in heavy large skillet over medium heat. Add sausage; sauté until cooked through and brown, breaking into pieces with spoon, about 8 minutes. When my husband and I remodeled our kitchen, the Dacor sales rep sent us a few recipes from their kitchen. I made it this year for Thanksgiving and it was awesome! Even my picky son (who hates everything) loved it! I have finally found the missing link to our holiday dinners! When I prepared this, I almost left out the apples because I thought the "picky one" would discover them and not try it. I decided to go ahead and include them and I am glad I did, they really make the recipe and the kids never even noticed them. Enjoy! One note: My sister made this and substituted the bread cubes with Cornbread stuffing crumbs and really liked it. If you use the french bread cubes, you should brown them in the oven for a little while on a cookie sheet, or leave them out for a few days to dry out.

2 tablespoons vegetable oil
1 lb bulk spicy pork sausage
1 cup celery, diced
1 cup onion, diced
1 cup apple, cored, diced
2 garlic cloves, minced
1 tablespoon fresh parsley, chopped
2 teaspoons fresh sage, chopped
1 bay leaf
8 cups French bread cubes
1 cup milk
1 cup chicken stock
3 large eggs, beaten to blend
2 tablespoons butter, melted
salt and pepper

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Add sausage and sauté until cooked through and brown, cutting into small pieces with a spatula as it cooks. Transfer the cooked sausage to a bowl.
  • Place the celery, onion, apple, garlic, and herbs in the skillet, and sauté over medium heat for 5 minutes. Add the sautéed mixture and the french bread cubes to the sausage.
  • In a separate blow, whisk together the milk, broth, eggs and butter. Pour into bowl with stuffing mixture. Gently fold milk mixture into the stuffing mix. Season with salt and pepper. Transfer the stuffing to the greased baking dish. Bake uncovered until cooked through and brown, about 25 minutes.
