3 large eggs
3/4 cup sugar
1/4 cup kosher for Passover vegetable oil
3/4 cup matzo meal
2 tablespoon potato starch
6 to 8 cups peeled and sliced fruit, like apples, pears, and strawberries

1/8 cup cinnamon sugar

Steps:

  • Preheat oven to 350 degrees F. Lightly oil a 9 by 9-inch square baking pan.
  • Beat eggs with sugar until well blended. Add the oil, matzo meal, potato starch, salt and blend well.
  • Put all the fruit in the pan and sprinkle with most of the cinnamon sugar, reserving a little for the top. Spoon the batter over the fruit, covering as much of the fruit as you can. Sprinkle with remaining sugar.
  • Bake until the topping is set and just turning tan, about 45 minutes. Serve hot, warm or at room temperature.

1/2 cup packed brown sugar
1/4 teaspoon salt
1 dash cinnamon
1/4 cup butter or 1/4 cup margarine, cut into small pieces
2 tablespoons orange juice
5 cups sliced peeled granny smith apples
1 cup chopped rhubarb
3/4 cup sugar
1/2 cup canned sour pitted cherries
1/4 cup orange juice
2 tablespoons potato starch
1/2 teaspoon cinnamon
cooking spray

Steps:

  • Preheat oven to 350°.
  • For the topping: Mix together the first 5 ingredients with a whisk.
  • Cut in butter with a pastry blender until it resembles coarse meal.
  • Stir in orange juice.
  • For filling: Combine apples and the rest of the filling ingredients; toss gently.
  • Spray a 11x7-inch baking dish.
  • Spread 1 1/2 cups of topping on the bottom of the dish to form a crust and then spoon filling over crust.
  • Top evenly with remaining topping.
  • Bake for 45 minutes until bubbling and light brown.
  • Let it stand 10 minutes before serving.

1 1/2 cups plus 2 tablespoons bleached all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/4-inch pieces and chilled
2 tablespoons vegetable shortening, chilled
3 tablespoons ice water, or as needed
1/2 pound rhubarb (2 stalks), peeled and cut into 1-inch thick slices
2 apples, peeled and cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
5 tablespoons sugar
1/4 cup water
1 tablespoon all-purpose flour
1 teaspoon finely grated lemon zest
Pinch table salt
1 1/2 teaspoons unsalted butter, cut into slivers
Vanilla ice cream, for serving

Steps:

  • Crust: Sift the flour, sugar, and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to overmix.
  • Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes and up to 2 days.
  • Cobbler: Preheat oven to 350 degrees F.
  • To prepare the cobbler, place the rhubarb and apples in a large, heavy saucepan. Add olive oil, 1 tablespoon sugar and water. Stir over high heat until the sugar has started to dissolve, 1 to 2 minutes. Reduce the heat to medium and cook, stirring often, until the fruit has exuded some of its liquid, about 5 minutes. Transfer mixture to a large bowl with the remaining 4 tablespoons sugar, flour, lemon zest, and salt. Cool slightly; pour into a lightly buttered 1-quart baking dish, and dot with the slivers of butter.
  • When ready to use crust, sprinkle a little flour on a smooth work surface, and using a rolling pin or dowel, roll the pie dough about 1/8-inch thick and large enough to cover the baking dish.
  • Cover cobbler with pie dough. Bake for 35 to 40 minutes, until top is golden. Let cobbler cool for 15 minutes before serving. Serve with vanilla ice cream.

2 tart apples, such as Granny Smith (1 pound total), peeled, cored, and cut into 1/2-inch pieces (2 1/2 cups)
1 1/2 cups granulated sugar
3 tablespoons cornstarch
1/2 teaspoon grated fresh ginger
2 teaspoons fresh lemon juice
1/2 teaspoon kosher salt (we use Diamond Crystal)
1 1/2 cups unbleached all-purpose flour
1/4 cup finely ground almond flour
1/4 cup granulated sugar
1 3/4 teaspoons baking powder
3/4 teaspoon kosher salt (we use Diamond Crystal)
6 tablespoons cold unsalted butter, cut into pieces
3/4 cup heavy cream, plus more for brushing and serving
1/4 teaspoon pure almond extract (optional)
Sliced almonds and fine sanding sugar, for sprinkling (optional)

Steps:

  • Filling: Preheat oven to 375°F. In a large bowl, combine rhubarb, apples, granulated sugar, cornstarch, ginger, lemon juice, and salt. Transfer to a 2 1/2-to-3-quart baking dish or 9-by-13-inch baking pan.
  • Biscuit: Whisk together both flours, granulated sugar, baking powder, and salt. Add butter; using your fingers, work it into dry ingredients until largest pieces are the size of small peas. Add cream and almond extract; stir with a fork until a soft, sticky dough forms. Scatter in small clumps evenly over fruit in baking dish. Brush dough with cream. Sprinkle with almonds, then sanding sugar.
  • Bake until cobbler is bubbling in center and biscuits are golden brown, 55 to 60 minutes (if browning too quickly, tent with foil after about 45 minutes). Let cool on a wire rack at least 1 hour before serving warm or at room temperature, topped with more cream.

1 cup buttermilk
2 tablespoons granulated sugar, for sprinkling
4 (24 ounce) jars morello cherries, drained (about 8 cups drained cherries)
3/4-1 cup granulated sugar
3 tablespoons cornstarch, plus
1 teaspoon cornstarch
1 pinch table salt
1 cup dry red wine
1 cinnamon stick (3-inches)
1/4 teaspoon almond extract

Steps:

  • Use smaller amount sugar in the filling if you prefer your fruit desserts on the tart side and the larger amount if you like them sweet.
  • Adjust rack to middle position and heat oven to 425F Line baking sheet with parchment paper.
  • In workbowl of food processor fitted with steel blade, pulse flour, 6 tablespoons sugar, baking powder, baking soda, and salt to combine. Scatter butter pieces over and process until mixture resembles coarse meal, about 15 one-second pulses. Transfer to medium bowl,; add buttermilk and toss with rubber spatula to combine. Using a 1 1/2 inch to 1 3/4 in spring-loaded ice cream scoop, scoop 12 biscuits onto baking sheet, spacing them 1 1/2 - 2 inches apart. Sprinkle biscuits evenly with 2 tablespoons sugar and bake until lightly browned on tops, and bottoms, about 15 minutes. (Do not turn off oven.).
  • Meanwhile, spread drained cherries in even layer in a 9x13 inch glass baking dish. Stir sugar, cornstarch and salt together in medium nonreactive saucepan. Whisk in reserved cherry juice and wine, and add cinnamon stick; set sauce pan over medium-high heat, and cook, whisking frequently, until mixture simmers and thickens, about 5 mintues. Discard cinnamon stick, stir in almond extract, and pour hot liquid over cherries in baking dish.
  • Arrange hot biscuits in 3 rows of 4 over filling. Bake cobbler until filling is bubbling and biscuits are deep golden brown, about 10 minutes. Cool on wire rack 10 minutes; serve.

  • Spray an 8" pan with non stick spray.

  • Heat cherry juice, one tbls flour and 1/8 tsp salt.cook, stirring constantly, for 2 minutes; Add almond extract and a few drops of red food coloring, if desired; Pour over cherries.
  • Sift remaining flour with salt, baking powder and remaining sugar -- , Blend in margarine, till crumbly --, Stir in milk.Drop by tblsful over cherry mixture, brush with milk and sprinkle with sugar to taste.
  • Bake for 15-20 minutes at 425*.
