"Children seem to be fascinated by bugs. So during a spring visit, my great-nieces and I had fun making fresh fruit salads that looked like garden insects," says Sherry Masters, Cincinnati, Ohio. Mandy Paige-Wrischnik assembled this lovely ladybug while her sister made a cute caterpillar.

2 lettuce or kale leaves
1 medium Red Delicious apple, quartered
2 teaspoons creamy peanut butter
2 tablespoons raisins
5 seedless red grapes

Steps:

  • Place lettuce leaves on two salad plates. Arrange two apple quarters, peel side up, on the lettuce. Use dab of peanut butter to place raisins in the space between apple quarters. Place one grape at the stem end of apple for head. For legs, cut the remaining grapes lengthwise into four pieces; place three on each side of ladybugs. Place small dabs of peanut butter on remaining raisins; gently press onto apples for spots.

1 tablespoon peanut butter
8 thin pretzel sticks

Steps:

  • Slice apples in half from top to bottom and scoop out the cores using a knife or melon baller. If you have an apple corer, core them first, then slice. Place each apple half flat side down on a small plate.
  • Dab peanut butter on to the back of the 'lady bug', then stick raisins onto the dabs for spots. Use this method to make eyes too. Stick one end of each pretzel stick into a raisin, then press the other end into the apples to make antennae.

2 tablespoons unsalted butter
3 Granny Smith apples, peeled, cored, and sliced in 1/2-inch-thick wedges
Leaves from 2 fresh thyme sprigs
1/4 cup raisins
3/4 cup frozen apple juice concentrate, thawed
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch cardamom
Pinch dry mustard
Sea salt and freshly ground black pepper
Juice of 1/2 lemon

Steps:

  • Melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, cardamom, and dry mustard; season with salt and pepper. Squeeze in the lemon juice to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Serve spiced apples and raisins with holiday pork, turkey or ham.

8 raisins
8 thin pretzel sticks

Steps:

  • Slice apples in half from top to bottom and scoop out the core using a knife or melon baller. If you have an apple corer, core the apples before cutting them in half.
  • Place each apple cut side down on a small plate.
  • Dab small dots of peanut butter on the back of the "ladybug" then top the peanut butter with a chocolate chip for spots. Use this method to make eyes too.

1/4 cup raisins (or craisins)
1/4 cup Cheerios toasted oat cereal (optional)
1 tablespoon peanut butter (or almond butter)
8 thin pretzel sticks

Steps:

  • Slice apples in half from top to bottom and scoop out the cores using a knife or a melon baller. If you have an apple corer, core them first, then slice. Brush or dip cut side of apples in lemon juice mixed with the water to keep from browning.Place each apple half flat side down on lettuce leaves(if using), then place on a small plate. The lettuce leaves help keep little fingers off the peanut butter.
  • Dab peanut butter(or almond butter) on to the back of the 'lady bug', then stick raisins(or craisins) onto the dabs for spots. If using cheerios, place raisins inside of cheerios and stick on peanut butter dabs.
  • Use this method to make eyes too. Stick one end of each pretzel stick into a raisin, then press the other end into the apples to make antennae.
  • Kids will have fun playing with their food, then eating it!

1 cup white wine

  • Melt butter in a skillet over low heat. Add apples, and increase the heat to medium-high. Cook for 5 minutes, stirring occasionally. Stir in the white wine, brown sugar, cinnamon, vanilla, and golden raisins. Cook over medium heat until the liquid has reduced and is thick.

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup walnuts, chopped
Filling
4 pounds pippin or Granny Smith apples, peeled, cored, sliced
1 1/2 cups golden or brown raisins
1/2 cup sugar
1 tablespoon fresh lemon juice
1 tablespoon all purpose flour
3/4 teaspoon ground cinnamon
Vanilla ice cream

Steps:

  • Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
  • For Topping:
  • Mix old-fashioned oats, brown sugar, all purpose flour, ground cinnamon and salt in large bowl. Add unsalted butter and rub into mixture until coarse crumbs form. Mix in chopped walnuts.
  • For Filling:
  • Combine sliced apples, raisins, sugar, fresh lemon juice, flour and ground cinnamon in large bowl. Mix well to blend. Transfer apple-raisin filling to prepared dish. Spread topping over. Bake until topping is golden brown, about 55 minutes. Serve crisp warm with scoops of vanilla ice cream.
