- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, mix together the shortening, brown sugar, applesauce and egg until smooth, Combine the flour, baking soda, salt, cinnamon and cloves; stir into the applesauce mixture. Drop dough by rounded teaspoons onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.

- Stir in applesauce and coffee.

- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flours, baking soda, nutmeg, salt, and pinch of cloves. In a large bowl, using an electric mixer, beat butter and brown sugar on high, scraping down bowl as needed, until light and fluffy, about 4 minutes. Beat in eggs, one at a time, scraping down bowl after each addition. With mixer on low, beat in half the flour mixture, then milk and remaining flour mixture. Beat just until combined.
- With a rubber spatula, fold apples and raisins into dough. Drop dough in 2-tablespoonful mounds, 2 inches apart, onto two baking sheets. Bake until cookies are firm around edges, about 14 minutes, rotating sheets halfway through. Let cool completely on wire racks.
- In a small bowl, whisk together confectioners' sugar and 1 tablespoon water. Transfer to a zip-top bag. Snip a very small hole in one corner and drizzle glaze over cookies.

- In large bowl, combine oats, brown sugar, cinnamon, nutmeg and salt.
- In small bowl, whisk together milk, egg and vanilla. Add the milk mixture to the oat mixture and stir until combined.
- Stir in the apples, raisins and chopped nuts.
- Pour into 4-6 small souffle or brulee dishes or one larger baking dish (such as an 8x8-inch dish). (You may want to lightly spray baking dish with cooking spray.).

This is a great recipe for the Holidays. It's sweet and crunchy and has a lot of healthy ingredients, but not low calorie by any standard.

- Butter a 9x13 cake pan. Preheat oven to 350 degrees.
- In a large mixing bowl, add all cookie base ingredients except melted butter. Blend well. Add butter and stir. Blend until you have pea sized balls of dough. Press 1/2 of the mix into the prepared pan, cover the bottom of the pan as well as a little ways up the sides of the pan. Reserve the remaining cookie mix for later.
- In a medium sauce pot, add all the filling ingredients. Mix well and bring the filling to a low boil. Stir and heat until the filling thickens. Remove from heat and cool slightly.
- Spread the filling over the cookie base in the pan, covering the cookie base evenly. Crumble the reserved cookie base over the filling evenly.
- Bake in preheated oven for 35 minutes until the cookie base is lightly browned and the filling is bubbling up. Remove from oven and cool.
- In a small bowl, mix together the icing ingredients, adding just enough milk to make a good drizzling consistency. Drizzle the icing over the cookie base. Allow to cool completely. Cut into bars. Enjoy.
