This Cheesy Green Chili Rice Casserole is a quick and easy side dish to serve alongside any of your favorite Tex-Mex dishes. It has all of the cheesy, creamy comforting goodness that you look for in a rice casserole, and it's a perfect way to use up leftover rice.

4 cups White Rice (cooked)
8 oz Green Chilis (canned)
2 cups Shredded Cheddar Cheese (reserve 1/2 cup for topping)
1 cup Sour Cream
1 tsp Garlic Powder
1 tsp Salt
1/4 tsp Pepper
2 tablespoons Parsley or Cilantro (chopped)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the cooked rice, green chilies, 1 1/2 cups shredded cheese, sour cream, garlic powder, salt and pepper. Stir until well combined.
  • Spray a 9 by 13" baking dish with non-stick cooking spray, then spread the rice mixture in the baking dish and sprinkle with the remaining 1/2 cup of cheese.
  • Bake for about 20 minutes, or until the mixture is bubbly and the cheese is lightly golden brown.
  • Remove from the oven and let cool for about 10 minutes, then garnish with chopped parsley or cilantro before serving. Enjoy!

1 (6 ounce) package dry instant long grain and wild rice mix
1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • Prepare the instant long grain and wild rice mix according to package directions.
  • Spread 1/2 the cooked rice mix over the bottom of the prepared baking dish. In a bowl, mix the sour cream and green chiles. Spread 1/2 the sour cream mixture over rice, and top with 1/2 the cheese. Repeat the layers.
  • Bake 25 minutes in the preheated oven, or until bubbly.

7-8 ounces diced mild green chiles (either two 4 ounce cans or one 7 ounce can - depending on what's available in your store; mostly drained if packed in water - see note below)
8 ounces cheddar cheese, shredded and divided
16 ounce container sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart casserole baking dish (we use cooking spray).
  • Combine all ingredients, except about 1/2 cup of cheese, together in a large bowl. Spread the mixture into prepared dish. Sprinkle remaining cheese on top of mixture. Place in oven and bake for about 35 minutes and the cheese has melted and begun to brown.

Steps:

  • Preheat oven to 350F.
  • Lightly spray an 8-in square casserole dish with cooking spray,
  • Combine sour cream and diced green chiles in a small bowl. Set aside.
  • Spoon 1 cup of rice into the bottom of the casserole dish.
  • Spread one-third of the sour cream mixture on top of the rice.
  • Top with one-third of the shredded pepper jack cheese.
  • Repeat layers two more times.

1/4 cup melted butter
1 pint sour cream
1/8 cup milk
1 lb grated monterey jack cheese
1 (8 ounce) can diced green chilies

Steps:

  • Cook rice first, as per directions on the package, usually two parts water, one part rice bring to a boil, reduce heat until water is gone.
  • Preheat oven to 350°F.
  • Add Butter, Sour Cream, Milk, Jack Cheese, Chilies, and Salt to cooked rice.
  • Mix well.
  • Put in a casserole dish, sprinkle top with Cheddar cheese, and cook until center is hot.

1 teaspoon salt
1 cup uncooked long grain rice
2 tablespoons butter
1 medium onion, chopped
1 (4 ounce) can diced green chilies
1/2 teaspoon salt

1 cup half-and-half
8 ounces monterey jack cheese, cubed or shredded
2 cups sour cream

Steps:

  • Bring the water to a boil, stir in the salt and rice, then cover and reduce heat to simmer.
