1 cup safflower oil
1/4 cup apple juice
2 tsp. vanilla
4 eggs
1-1/2 cups chopped walnuts

Steps:

  • Preheat the oven to 350 F. Grease and flour a Bundt pan and set aside.
  • In a medium bowl, combine the diced apples, 2 tbsp. sugar, 1 tsp. cinnamon, and nutmeg; set aside. Sift together flour, baking powder, and salt.
  • In a large bowl, combine 1 cup white sugar, brown sugar, oil, apple juice, vanilla, and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts and apple mixture.
  • Pour the batter into prepared pan. Bake at 350 F for 55 to 60 minutes, or until cake is firm, well browned, and begins to pull away from pan edges. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with confectioners' sugar, if desired, before serving.

4 large eggs
2 cups superfine sugar
2 3/4 cups cake flour
1/2 teaspoon ground cinnamon

1 cup warm milk
2 cups small-diced apples
1/2 teaspoon ground nutmeg
1/2 cup pine nuts, toasted, divided
1 1/2 teaspoons vanilla extract
Brown Sugar Buttercream, recipe follows
Caramel sauce, for garnish
1/4 cup brown sugar
1/2 cup plus 2 tablespoons unsalted butter
6 cups powdered sugar, divided
1 teaspoon vanilla extract
1/4 cup milk

Steps:

  • Preheat the oven to 325 degrees F. Line a 24 count regular-size cupcake pan with cupcake liners.
  • In a heavy-duty mixing bowl, cream together the butter and shortening on medium speed. Add the eggs, 1 at a time, until completely combined. Scrape down the sides of the bowl with a rubber spatula. Add the superfine sugar with the mixer set to low speed. Once combined, set the mixer to medium speed and mix for 5 minutes.
  • Sift together the cake flour, cinnamon, salt, and baking powder. Begin to add the sifted dry ingredients to the batter, alternating with the warm milk.
  • Mix together the apples and nutmeg. Cook in the microwave for 3 minutes, and then drain any excess juices. Fold the apples and half the toasted pine nuts into the batter. Add the vanilla extract.
  • Fill the cupcake liners two-thirds of the way and bake for 16 to 20 minutes. Use a toothpick to poke in the center of the cupcake and if it comes out clean then the cupcakes are done. Remove from the pan and place onto a tray to cool.

(If it cools completely, it will harden too much and make it difficult to cream with the butter.) 1 tablespoon lemon juice

1 cup all-purpose flour
2 cups wheat flour (or use 3 cups of All Purpose)
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 1/2 cups sugar
2 large eggs
1/2 cup molasses or 1/2 cup dark corn syrup
1 cup applesauce
1/2 cup raisins (soak in Orange juice)
1 1/2 cups diced fuji apples
1/2 cup orange juice
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375* next Grease and flour a Bundt pan.
  • Except for the Sugar, Sift Dry Ingredients together into a large mixing bowl. Add Sugar, beaten Eggs, Applesauce, Molasses, Orange juice, Raisins, Apples and Nuts. Batter should be thick.
  • Pour Batter into the bundt pan and Bake for 45 minutes or until toothpick inserted comes out clean.
  • Let cake cool, remove from pan and sprinkle with powdered sugar or make a glaze.

The pairing of fennel and pine nuts give a Mediterranean flavor twist to a classic apple bundt cake, to suit my Italian family's tastes. This cake has been a huge hit with family, friends, and coworkers.

CAKE:
3 cup(s) flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2 large eggs
1 cup(s) sugar
6 ounce(s) greek yogurt, plain
3/4 cup(s) oil, canola or vegetable
2 teaspoon(s) ground fennel seed*
1 teaspoon(s) vanilla extract
1 tablespoon(s) orange zest, grated
4 cup(s) apples, peeled & diced (about 4 medium apples)
3/4 cup(s) dried cranberries
1/2 cup(s) pine nuts, toasted**
ICING:
2 cup(s) powdered sugar
3/4 teaspoon(s) cinnamon
1/4 teaspoon(s) vanilla extract
1/4 cup(s) water

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, sift together flour, baking soda, & salt. Set aside.
  • In large bowl, beat together eggs and sugar, then add yogurt, oil, ground fennel, vanilla, & orange zest. Mix well.
  • Slowly add dry ingredients to wet mixture. Mix until thoroughly combined. Fold in apples, cranberries, and pine nuts until fully incorporated and evenly distributed.
  • Thoroughly coat 10" bundt pan with non-stick spray(or grease and flour pan well). Spread batter into pan evenly. Bake at 350 degrees for 55-60 minutes, or until toothpick or knife comes out clean. Let cool in pan for a few minutes, remove from pan and let cool completely on a rack.
  • To make icing: sift together powdered sugar and cinnamon. Whisk in vanilla then whisk in water, 1 tablespoon at a time, until desired thickness/consistency and lump free. Pour over cake and let drizzle down sides.
  • * Ground fennel is difficult to find in stores. Buy whole fennel seeds and grind finely in a spice grinder. ** To toast pine nuts, put nuts in a dry skillet and toast on medium heat for a few minutes until slightly golden brown. Stir often and watch closely as they can turn too brown/burn quickly.

I have to make this cake at least once a month for my family . I sometimes leave the walnuts out and even without the nuts this cake is a HIT. I use Fiji apples for this cake.

2 cups apples, peeled,cored and diced
1 tablespoon sugar
1 teaspoon cinnamon
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil
1/4 cup orange juice
2 1/2 teaspoons vanilla extract
4 eggs
1 cup chopped walnuts
powdered sugar, for decoration
all-purpose flour

Steps:

  • Preheat oven to 350 degrees F.
  • Mix apples, cinnamon and sugar, set aside.
  • Mix all the rest of the ingredients, mix well.
  • Grease bundt pan.
  • Add 1/3 of batter mixture to the pan.
  • Sprinkle half of the apple mixture over the batter then follow with 1/3 batter, and then add rest of apples and top with rest of batter.
  • Bake for 55- 60 minutes.
