- In a large bowl, combine flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. Chill for 30 minutes. , Roll out one portion of dough between two large sheets of waxed paper into a 17x12-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press pastry onto bottom and up sides of pan; trim even with top edge. , In a large bowl, toss the apples, sugar, flour, cinnamon and nutmeg; spread into crust. Roll out remaining pastry to fit top of pan; place over filling. Brush edges with water or milk; pinch to seal. Cut slits in top. , Bake at 375° for 45-50 minutes or until golden brown. - Preheat oven to 350 degrees F (175 degrees C).
- Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
- Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
- Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.

- In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. - Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a medium bowl, stir together the flour, 2 tablespoons of sugar, and salt. Cut in the shortening until the mixture resembles coarse crumbs. Combine the egg yolks and 1/2 cup of milk, stir into the flour mixture.
- On a lightly floured surface, roll half of the dough out to the size of the prepared pan. Cover the inside of the pan with the dough. Spread dough with a light coating of egg white. Fill with sliced apples and sprinkle sugar and cinnamon on top. Roll out remaining dough and place on top of apples. Brush with a light coating of egg white.
- Bake for 35 to 40 minutes in the preheated oven, until the crust is golden. In a small bowl, beat together the confectioners' sugar, salt, vanilla and milk until smooth. Drizzle over cooled bars, cut into squares.

This is an old favorite at our house. I make this using fresh or frozen apples. I have made it at Christmas,drizzled with the glaze for my dainty tray. Delicious for snacks or as a dessert served with ice cream. Serve warm or cooled. Can also be frozen.

- Pastry: Mix dry ingredients together.
- blend in crisco and butter with pastry blender. This step can be done in the food processor as well.
- mix wet ingredients and pour over blended dry mixture.
- Mix with fork then using hands mix up as a pie crust.
- Place in fridge to set for 20-30 minutes.
- Roll out half the pastry and place in a 10"x14" cookie sheet bringing pastry up the sides.
- brush with some of the egg white.
- Filling: Mix sugar, flour and spices and sprinkle over apples and mix.
- pour apple mixture over pastry.
- Dot with butter.
- Roll out second half of dough and place on top of apples.
- Moisten edges and pinch together.
- Brush egg white over the top crust.
- Sprinkle lightly with sugar.
- Using a fork prick the pastry top. ( I use a knife cutting in short openings .).
- Bake at 375F for about 45 minutes and top is golden browned. ( I use an air bake pan so pans and ovens may vary).
- The glaze is optional. when cooled drizzle with glaze.
- NOTE: spices can be decreased or changed to personal preference.

- Sift together flour, sugar and salt.
- Cut in shortening.
- Add egg yoke.
- Add milk slowly.
- Mix together to form a ball.
- Roll out pie dough to fit the bottom of a jelly roll pan.
- Slice up 5 Granny Smith apples. (Keep them from browning by soaking them in cold salt water until you are ready to use them.).
- Crush cornflakes and place in a medium sized bowl.
- Add sugar and cinnamon.
- Drain Granny smith apples and rinse well with cold water to remove salty flavor.
- Add apples to cornflake mixture and mix well.
- Put apple mixture over bottom unbaked pie dough layer.
- Repeat pie dough recipe and carefully cover apple mixture with a second pie dough layer.
- Using a small knife, cut small slits in pie dough on top of pie.

- Add the 2 1/2 cups flour, 1/4 cup sugar, and 1/4 tsp salt into a food processor. Give it a few pulses.
- Cut 1 cup of COLD butter into tbsp size pieces. Transfer to food processor and pulse until the butter is cut into small lentil-sized clumps.
- Slowly drizzle the ice water and lemon juice into the processor while pulsing. If the mixture doesn't hold together when you squeezer a clump in your hand then add a bit more water and pulse.
- Transfer dough onto a pastry mat or counter and knead 2-3 times just to help it come together a bit. Gently flatten into a one inch-thick disk, and cover in plastic wrap. Place in the fridge to chill for about 30 minutes to an hour.
- Peel, core and slice your apples, then toss with the lemon juice. Add the sugar then toss to combine evenly.
- In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes. While the apples are cooking down you can mix in the corn starch.
- Pour the apples into a strainer set over a large bowl. Set the apples aside and pour juice back into the pan. Cook at medium-high heat stirring frequently until the liquid bubbles vigorously and thickens.
- In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely.
- Roll out your both of your chilled pie dough batches into two disks about 1/4 inch thick. Place one into your pie dish leaving half an inch of overhang. Cut the other into strips. You can choose any thickness for them but I tend to like mine to be almost an inch thick.
- Add your filling to the dish. smooth out surface with a spatula. Any voids can cause the lattice top to sag.
- Construct your lattice top by placing one set of strips on the pie then fold every other strip over. Place a strip of dough perpendicular to the others just next to the place you folded the others. Fold down the strips and repeat the process with the alternating strips until the lattice is complete.
- Trim the strips and fold under the bottom layer of pie dough. pinch together to bind the layers together.
- In a small bowl add one egg and a tablespoon of cream or milk. Mix very well together. Brush the lattice THOROUGHLY with the egg wash. Be gentle so as not to mar the lattice. The egg wash makes a huge difference in the pie's appearance giving a golden shiny finish.
- Sprinkle with cinnamon sugar and bake at 350f until golden brown in the center, about 45-50 minutes. I ALWAYS tent my pies. This means protecting the edge with a long sheet of foil folded in half. This way the pie's edge stays golden when the center bakes instead of burning!

- Sift together flour, baking powder and salt in large bowl. Add lard and cut in with pastry cutter or fingertips until the mixture resembles coarse crumbs. In a measuring cup, mix water, egg yolks and lemon juice together and pour over flour mixture. Blend gently with a fork until combined; mixture will be very moist.
- Divide dough in half. Roll or pat one half of dough directly into 9" by 13" jelly roll pan, bringing dough slightly up the edges. I patted with my hands, you could also try a mini roller. Spread apple filling evenly over the dough. Roll remaining dough to fit the top, either on a well floured pastry board or the back of a sheet pan and then carefully flip it over the top. Press or pinch the edges together, don't worry if it doesn't seal completely, as long as top is completely covering apples. Patch where necessary. Cut several slits in top dough for steam vents.
- Bake in 400º oven for 40 minutes, until crust is nicely browned, rotating pan halfway. Remove to rack to cool.
- Make glaze. Combine sugar, softened butter, vanilla and milk until smooth, adding more milk if necessary for consistency. Spread glaze over top of crust with an offset spatula and let glaze set and harden. Cut into 2- or 3-inch squares and enjoy!

- Preheat oven to 375 degrees F. Line 2 baking sheets with parchment. Microwave the butter, brown sugar and cinnamon in a medium microwave-safe bowl until melted, about 1 minute.
- Cut the apples, crosswise, into slices between 1/4-and-1/2-inch thick, using only full size slices from the center of the apple. You should get 4 slices from each apple, each about 2 inches in diameter. Remove the cores from the apples with a small round cutter or apple corer to make rings. Add the apples to the butter mixture and turn to coat well, taking care not to break the slices.
- Unroll the pie crusts and roll each on a floured surface into 13-inch rounds. - Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).
- In a large mixing bowl, add flour, sugar, coconut and salt. Stir together. Add melted butter and stir until combined. Mixture should resemble wet sand.
- Place mixture into prepared baking pan. Press down using the back of a dessert spoon to form one even layer. Bake for 10-12 minutes or until crust is just golden on the edges. Remove from oven.

- Heat the oven to 450 degrees. Line the bottom of a 9-inch pie plate with the first pie crust, prick the bottom several times with a fork.
- In a large bowl, mix the peeled and thin sliced apple slices, the white sugar, and brown sugar. Let sit for 20-25 minutes to allow some of juices to pool in the bottom of the bowl. After the apples have rested, remove the apples to another large bowl, and save the excess juices to make the sauce.
- In a separate smaller bowl, mix the cornstarch, salt, cinnamon, and nutmeg then pour into apples bowl and stir to combine. Spoon the apple mix into into pie late that’s been lined with the first pie crust. I say spoon them in because more juices will have pooled in the bottom of this bowl and we don’t want to pour that into the pie crust. Sprinkle 1 tablespoon of cubed butter over top the apples.
- Top the apple mixture with the remaining pie crust, press the edges of the top and bottom crust together all along the pie plate. You can make a decorate edge or use a fork to seal. Lightly brush the top crust with the milk. Then take additional white sugar and cinnamon and generously sprinkle over the crust. Lastly, cut several vent holes in top. Make them wider than just a slit, you need to let the steam vent out.
