2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
  • Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

1/4 cup all-purpose flour (spooned and leveled), plus more for rolling dough
1 recipe (2 disks) Basic Pie Dough for Apple Pie
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
4 pounds (8 to 10) apples, such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • Lightly flour a large piece of waxed paper; place a disk of dough in center. Rolling from center outward, form into a 12-inch circle. (Use paper to rotate dough, and flour rolling pin and paper as necessary to prevent sticking.) Transfer dough (still on paper) to a baking sheet; cover and refrigerate. Repeat with second disk of dough.
  • Preheat oven to 450 degrees with a rack set in lowest position. Remove first circle of dough from refrigerator; wrap around rolling pin (discarding paper), and carefully unroll over a 9-inch pie plate. Gently lift edges and lower dough into the pie plate so it hugs bottom and sides. Avoid stretching the dough, which will make it shrink during baking. Refrigerate.
  • Place lemon juice in a large bowl. Peel, core, and cut apples into 1/4-inch-thick slices; halve crosswise, and add to lemon juice (to keep them from turning brown) as you work. Add sugar, flour, cinnamon, and salt; toss to combine.
  • Remove dough-lined pie plate from refrigerator. Fill with apple mixture, gently packing apples and mounding slightly in center; dot with butter. Lightly brush rim of pie shell with water. Remove remaining circle of dough from refrigerator. Lay over apples; press along moistened rim to seal. Using kitchen shears, trim overhang to 1 inch.
  • With floured fingers, fold overhang under itself to form a thick rim; pinch between thumb and forefinger to form a uniform edge around the rim of the pie plate.
  • To crimp edges: With thumb and index finger of one hand, gently press dough against knuckle of other hand; continue around pie. (Deep indentations anchor dough on rim and prevent it from sliding down sides of pie plate during baking.)
  • With a floured paring knife, cut 5 to 6 slits in top of pie, radiating from center; place pie plate on a rimmed baking sheet. Bake 20 minutes; reduce heat to 375 degrees and bake until crust is golden and juices are bubbling, 50 to 60 minutes more. If edges brown too quickly, cover with aluminum foil. Cool completely, at least 6 hours, before serving.

6 tart apples - peeled, cored and sliced
½ cup white sugar
2 teaspoons ground cinnamon
2 tablespoons all-purpose flour
3 tablespoons butter, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a baking sheet on an oven rack.
  • Place sliced apples in a large bowl. In a small bowl, combine sugar, cinnamon, and flour. Stir well and pour mixture over apples. Cut half of butter into small pieces and add to apples. Toss apples until thoroughly coated.
  • Roll out pastry to fit an 8- or 9-inch pie plate. Roll out top crust and set aside. Pour apples into pastry-lined pie pan.
  • Dot apples with remaining butter. Place second pastry on top. Seal edges and cut steam vents in top crust.
  • Bake in preheated oven on the baking sheet until apple filling is bubbly and crust is golden brown, 50 minutes to 1 hour.

1/4 cup freshly squeezed lemon juice
3 lbs apples (Honey crisp, Cortland, or Mitsu)
2/3 cup sugar (plus more for sprinkling on the pie)
1/4 cup unsalted butter
1/2 tsp ground cinnamon
1 pinch ground nutmeg
1 tbsp corn starch
2 cups unsalted butter (Very cold, 452g)
5 cups all-purpose flour (600g)
1/2 cup sugar (100g)
1 tsp kosher salt
2 tbsp lemon juice
1/3 cup ice water
1 egg
1 tbsp cream
3 tbsp sugar
1/2 tsp cinnamon

Steps:

  • Add the 2 1/2 cups flour, 1/4 cup sugar, and 1/4 tsp salt into a food processor. Give it a few pulses.
  • Cut 1 cup of COLD butter into tbsp size pieces. Transfer to food processor and pulse until the butter is cut into small lentil-sized clumps.
  • Slowly drizzle the ice water and lemon juice into the processor while pulsing. If the mixture doesn't hold together when you squeezer a clump in your hand then add a bit more water and pulse.
  • Transfer dough onto a pastry mat or counter and knead 2-3 times just to help it come together a bit. Gently flatten into a one inch-thick disk, and cover in plastic wrap. Place in the fridge to chill for about 30 minutes to an hour.
  • Peel, core and slice your apples, then toss with the lemon juice. Add the sugar then toss to combine evenly.
  • In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes. While the apples are cooking down you can mix in the corn starch.
  • Pour the apples into a strainer set over a large bowl. Set the apples aside and pour juice back into the pan. Cook at medium-high heat stirring frequently until the liquid bubbles vigorously and thickens.
  • In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely.
  • Roll out your both of your chilled pie dough batches into two disks about 1/4 inch thick. Place one into your pie dish leaving half an inch of overhang. Cut the other into strips. You can choose any thickness for them but I tend to like mine to be almost an inch thick.
  • Add your filling to the dish. smooth out surface with a spatula. Any voids can cause the lattice top to sag.
  • Construct your lattice top by placing one set of strips on the pie then fold every other strip over. Place a strip of dough perpendicular to the others just next to the place you folded the others. Fold down the strips and repeat the process with the alternating strips until the lattice is complete.
  • Trim the strips and fold under the bottom layer of pie dough. pinch together to bind the layers together.
  • In a small bowl add one egg and a tablespoon of cream or milk. Mix very well together. Brush the lattice THOROUGHLY with the egg wash. Be gentle so as not to mar the lattice. The egg wash makes a huge difference in the pie's appearance giving a golden shiny finish.
  • Sprinkle with cinnamon sugar and bake at 350f until golden brown in the center, about 45-50 minutes. I ALWAYS tent my pies. This means protecting the edge with a long sheet of foil folded in half. This way the pie's edge stays golden when the center bakes instead of burning!

14 tablespoons cold butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 tablespoons freshly squeezed lemon juice
3 pounds baking apples like Golden Delicious, Cortland, or Mutsu
2/3 cup sugar, plus more for sprinkling on the pie
1/4 cup unsalted butter
1/4 teaspoon ground cinnamon
Generous pinch of ground nutmeg
1 large egg, lightly beaten

Steps:

  • Make the dough by hand. In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work the butter into the dry ingredients until it resembles yellow corn meal mixed with bean sized bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
  • Make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the butter and pulse until it resembles yellow corn meal mixed with bean size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand.
  • Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
  • Make the filling. Put the lemon juice in a medium bowl. Peel, halve, and core the apples. Cut each half into 4 wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.
  • In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes.
  • In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely. (This filling can be made up to 2 days ahead and refrigerated or frozen for up to 6 months.)
  • Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide. Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Place a rack in the lower third of the oven and preheat the oven to 375 degrees F.
  • Line the bottom of a 9-inch pie pan with one of the discs of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the center. Brush the top edges of the dough with the egg. Place the second disc of dough over the top. Fold the top layer of dough under the edge of the bottom layer and press the edges together to form a seal. Flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Pierce the top of the dough in several places to allow steam to escape while baking. Refrigerate for at least 15 minutes.
  • Bake the pie on a baking sheet until the crust is golden, about 50 minutes. Cool on a rack before serving. The pie keeps well at room temperature (covered) for 24 hours, or refrigerated for up to 4 days.

1/4 cup Brown Sugar
1/2 cup Granulated Sugar
1/4 cup All-Purpose Flour
1/4 teaspoon Ground Cinnamon

3 lbs. Granny Smith Apples, peeled, cored, thinly sliced
1 Golden Delicious Apple, peeled, cored, thinly sliced
2 Tablespoons Milk, for wash on top crust.

Steps:

  • Preheat oven to 450F degrees with oven rack in lowest position.
  • Place Brown Sugar in a large mixing bowl.
  • Add the Granulated Sugar.
  • Add Flour.
  • Add Cinnamon.
  • Add Nutmeg.
  • Add Dash of Salt.
  • Whisk dry ingredients together well. Set aside for now.
  • Peel the apples. Place in cold water to prevent browning.
  • Slice the apples into wedges, removing and discarding the center core.

  • Lightly butter the inside of your pie plate.
  • Place one sheet of dough in pie plate and trim as needed.
  • Add sliced apples to the dry ingredients.
  • Toss apples until fully coated.
  • Spread apples into the pie plate.
  • Place second layer of pie dough on top of apples.
  • Seal edges and decorate as desired.
  • Brush milk over center of pie but not on the edges.
  • Sprinkle top with one Tablespoon of sugar, but not on edges.
  • Cut slits in top of dough to vent the pie as it bakes.
  • Place pie on baking sheet, and place in preheated oven.
  • IMMEDIATELY REDUCE heat to 350F degrees.
  • Bake pie for 25 minutes until crust is lightly browned.
  • Cover top lightly with aluminum foil to prevent over browning.
  • Let pie bake another 25-35 minutes until bubbling hot and top is lightly browned.
  • Remove to wire rack and let cool completely.
  • Enjoy!

2/3 cup butter (chilled)
1 teaspoon salt
4 tablespoons water
5 medium apples (peeled and chopped up into small pieces)

Steps:

  • Preheat oven to 425 degrees. Get muffin pan out. No need to grease it.
  • In food processor blend flour, salt and butter until it looks like little peas.
  • Add in water and blend just until it looks like it's sticking.
  • Take out and combine it by hand until well blended.
  • Roll out on lightly floured surface until about 1/4 inch thick.
  • Cut 12, 4 inch circles with cup or bowl.(You will need to roll out twice).
  • Note: you can use the rest of the crust for anything you may want to do on top of the pies.
  • Press each circle in muffin tins until all the way up each side, to form little bowls.
  • Mix by hand all filling ingredients and spoon into muffin bowls.
  • Cut up butter into 12 little pieces and place one piece on each pie.
  • You can decorate them anyway you like with extra crust, or just leave plain.
  • Bake at 425 degrees for 16-18 minutes. (Until crust is light brown and apples are bubbling).
  • When cool, just loosen with a spoon and they'll come right out!

1 teaspoon salt
1 ½ sticks butter, 1 1/2 sticks, cold, cubed
8 tablespoons ice water, or as needed
2 ½ lb granny smith apple, cored, sliced, peeled
¾ cup sugar
2 tablespoons flour
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ lemon
1 egg, beaten
1 tablespoon sugar
1 scoop vanilla ice cream

Steps:

  • In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
  • Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
  • Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
  • Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
  • Peel the apples, then core and slice.
  • In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
  • Mix until combined and all apples are coated. Refrigerate.
  • Preheat the oven to 375°F (200°C).
  • On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
  • Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
  • Pour in apple filling mixture and pat down.
  • Roll the other half of the dough on top.
  • Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
  • Brush the pie with the beaten egg and sprinkle with the sugar.
  • Cut four slits in the top of the pie to create a vent.
  • Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
  • Allow to cool completely before slicing.
  • Top with ice cream and serve.
