Steps:
- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- In a small bowl, create a slurry by combining 1/4 cup of the apple juice with the cornstarch. Mix until smooth and set aside.
- In a large saucepan over medium heat, cook the apples with the remaining 1 cup apple juice, raisins, sugar and cinnamon until the apples are tender, 8 to 10 minutes. Stir the cornstarch slurry (it may have settled) and add it to the apple mixture, stirring constantly until smooth and lump free. Simmer for 1 minute more, stirring constantly. Remove from the heat and cool. Stir in the pecans, cover and chill.
- Lay out 1 phyllo sheet on a clean, flat, lightly floured surface. Brush with some melted butter and sprinkle with 1 tablespoon breadcrumbs. Repeat this procedure with two more layers of phyllo, butter and breadcrumbs. Top with the fourth sheet of phyllo. Spread the apple filling evenly onto the phyllo surface, leaving a 1/2-inch clean edge on all sides. Roll into a log, folding the edges at each end beneath the log and brush with some melted butter. Carefully place the strudel on the prepared baking sheet, seam-side down. Bake the strudel until golden brown, 15 to 18 minutes. Remove from the oven and cool for 15 minutes before cutting into 2-inch slices. Sprinkle with confectioners' sugar just before serving. Serve plain or with ice cream.

- In a large skillet, combine the apples, granulated sugar, cinnamon, brandy, raisins, and salt. Cook over medium heat, stirring frequently, until the liquid from the apples dissolves and the apples are soft, 10 to 12 minutes. Stir in the walnuts and set aside to cool.
- Preheat the oven to 350°F and set an oven rack in the middle position. Line a 13 x 18-inch baking sheet with parchment paper.
- Wet and wring out a clean dishtowel. Have the melted butter nearby with a brush. Unroll the phyllo and cover it with the plastic wrap from the package (it's usually rolled in a sheet of plastic) or a sheet of wax paper, followed by the damp towel; keep it covered as you work so it doesn't dry out. (Note: if you work quickly, you don't need to be quite as careful about this.)
- Place 1 phyllo sheet on a clean work surface with the long side facing you. Brush the sheet with melted butter. You may find it easier to drizzle a bit of butter on the dough with the brush and then spread it across the dough in gentle strokes. Layer with four additional phyllo sheets, brushing each layer with the melted butter. (You should have a stack of five buttery sheets.)

- Note: Readily available baking apples include Granny Smith, Golden Delicious, Fuji, Jonagold, and Honey Crisp. Use a mix of different varieties for best results.
- Note: Phyllo is more forgiving than you think. If it tears, just patch it back together with your fingers.

Apple Strudel - or Apfelstrudel in German - is a classic Austrian pastry. This delicious dessert made from thinly rolled dough packed with sweetened apples and rum-soaked raisins is best enjoyed with vanilla sauce!

- Add the flour, a pinch of salt, egg, and oil to a medium-sized mixing bowl.
- Mix everything together using the spiral dough hooks of your electric mixer while slowly adding the lukewarm water. Keep mixing for approximately 5 minutes until the dough has an elastic consistency and sticks together.
- Shape the dough into a ball using your hands. Brush all sides of the ball of dough with one teaspoon of oil and place it back into the bowl. Cover the bowl with a dishtowel and let the dough rest on the counter for 30 minutes.
- In the meantime, prepare the filling. First, melt three tablespoons of butter in a medium-sized frying pan. Add the breadcrumbs and fry them on medium heat until golden brown. Stir regularly. Once they are golden brown, remove them from the heat and set them aside.
- Next, peel the apples. Then cut them into quarters and remove the core. Cut each quarter into thin slices. Then cut these slices into small pieces (see process photo above for reference).
- Place the small apple pieces into a medium-large mixing bowl. Also add the sugar, cinnamon, lemon juice, rum, raisins, and browned breadcrumbs to the bowl and mix everything together. You can also decide to not add the breadcrumbs now and keep them separate. It's easier to mix everything together but adding them separately from the apples can make for a slightly more moist filling (because the breadcrumbs don't soak up as much juice from the apples during baking).
- Preheat the oven to 390 degrees Fahrenheit.
- Once you're done with preparing the filling and the 30 minute dough rest time is up, take a finely-threaded large dish towel (that will not give off small threads/fibers/"fuzzies"), sprinkle some flour onto it, and roll out the dough with a rolling pin. Use more flour as needed. Then carefully stretch out the dough with your hand until it has a dimension of approximately 24 x 17 inches. Be gentle so you don't rip the dough.
- Once the dough is rolled out thin and you can see the dishtowel through the dough, gently brush some melted butter (approximately 1 tablespoon) onto the whole surface of the dough.
- Now cover the left side of the rectangle with the filling leaving a gap of approximately 2 inches along the edges. If you didn't mix the breadcrumbs and the apples earlier, first place the breadcrumbs onto the dough and then add the apple-mixture on top of that.
- Fold over the long top and bottom edges, then gently roll up the dough from the left side - the side with the filling - using the dishtowel. Make sure that the seam is at the bottom once you are done rolling.
- Carefully place the strudel onto a baking sheet lined with parchment paper. Brush the top and the sides of the dough with some more melted butter.
- Bake the apple strudel on the medium rack of your oven for around 30-40 minutes. Take the strudel out after approximately 15 minutes and brush it with a little bit more melted butter.
- Once the strudel is done baking and lightly browned, remove it from the oven and let it cool for a few minutes on the baking sheet. Then dust it with powdered sugar. Apple strudel can be served warm or cold and tastes delicious with some homemade vanilla sauce.

Fold phyllo over once to cover apples. Brush with butter. Roll like a cigar almost to end, brushing all surfaces with butter. Fold in ragged edges, and brush with butter. Finish rolling, and place, seam-side down, in prepared pan.
- Brush with butter. Cut six 1-inch diagonal slits in top of roll. With fingers, slightly widen slits. Repeat with remaining phyllo and filling.
- Transfer to oven, and bake until golden, about 10 minutes. Lower heat to 350 degrees. Continue baking until juices are bubbling and apples are tender when pierced with a knife, 30 to 40 minutes more.
CINNAMON APPLE STRUDEL

- Preheat oven to 350 degrees. Stack layers of dough brushing each layer with butter before topping with next layer. Brush top layer with butter. In a bowl combine apples, raisins, sugar and cinnamon. Spoon filling down the left longside of phyllo rectangle. Fold top edge down and bottom edge up by about 2 inches to cover filling. Roll dough up along long side to enclose filling. Brush log with butter and sprinkle with cinnamon sugar mixture. Bake for 30 minutes or until golden and puffed.
