My husband and his buddies love to pack this tasty lunch when they go on fishing trips. My tangy tuna sandwich recipe gets fun flavor from sweet pickle relish and lots of crunch from apples, celery and walnuts. Each satisfying sandwich is a complete meal in itself. -Ivy Eresmas, Dade City, Florida

1/3 cup fat-free mayonnaise
1/4 cup finely chopped celery
1/4 cup finely chopped walnuts
2 tablespoons finely chopped onion
1 tablespoon sweet pickle relish
1 teaspoon sugar
1 pouch (7.1 ounces) light water-packed tuna
1/2 cup chopped red apple
6 slices reduced-calorie bread, toasted
6 lettuce leaves

Steps:

  • In a large bowl, combine the first six ingredients; stir in tuna and apple. Spread 1/2 cup tuna mixture on three slices of bread. Top with lettuce and remaining bread.

The first time I heard of tuna salad with chopped apples in it, I really had some doubts. And then I tried it! Since then I've played with the ingredients and have come up with this. It's a very flexible recipe. I've made it for sandwiches. I've added cooked macaroni for a whole meal salad. I've eaten it on crackers. I've used small shrimp instead of tuna. I've added celery and used different colors of peppers. I've used lemon instead of lime. I've used garlic salt instead of regular salt, and made many other substitutions. It always turns out good!

2 (6 ounce) cans tuna in water
1 large granny smith apple, unpeeled and chopped
1 orange bell peppers or 1 yellow bell pepper, finely diced
1/4 red onion, finely minced
1 jalapeno pepper, seeded and finely minced
2 hard-boiled eggs, chopped
1 cup mayonnaise (I used low-fat)
2 limes, juice and zest of
1/2 teaspoon garlic salt
1/4 teaspoon lemon pepper
1/4 teaspoon hot sauce (I used Cholula)

Steps:

  • Drain cans of tuna, then crumble and place in a medium bowl. Add apple, peppers, onion, eggs, and stir.
  • Combine mayonnaise, lime zest and juice, garlic salt, lemon pepper, pepper sauce, and pour over tuna mixture.

I grew up eating tuna salad made with sour pickles, onions, and mayonnaise. When I married, my m-in-law made a delicious tuna salad with apples as one of the main ingredients. I LOVED it and began to use that recipe. My husband likes pecans (Texas' state nut) in everything, so I always add a handful, but they are optional. It's better to begin with the chopped apple so you can sprinkle lemon juice over the pieces to keep them from turning brown. I also prefer unpeeled apples. I am saying this makes 6 servings because we like THIN sandwiches. I also sometimes make my sandwich ingredients the night before because allowing to set a while makes the flavors blend.

1 small granny smith apple, unpeeled cored and chopped
1 tablespoon lemon juice (or however much needed to coat apple pieces)
1 (5 ounce) can tuna fish, drained (do not use foil packaged, too fishy)
2 celery ribs, cleaned and chopped
1 tablespoon onion, grated (sweet kind is best)
5 tablespoons mayonnaise (we like the flavor and texture of "Real" better than "Lite")
1/4 cup pecans, coarsely chopped (optional)
1 pinch sugar, to taste
1 pinch salt, to taste
12 slices whole wheat bread, sandwich sliced

Steps:

  • Chop unpeeled Granny Smith (or any tart, crunchy apple -- Fuji and Gala are also good).
  • Sprinkle lemon juice (fresh or bottled) over apples and toss to coat evenly.
  • Add drained tuna fish and flake, mixing with apples.
  • Add celery, onion, and mayonnaise. Amount of mayonnaise may be adjusted according to texture preference. More crumbly (less mayonnaise) is better to eat with a fork on a lettuce leaf. More "pastey" texture is better for sandwiches.
  • Taste, and add a pinch of sugar and salt if needed. (Some apples require a tiny bit of sugar).

Welp, the name pretty much says it all. Tuna salad is very quick and easy to make, as well as being very versitile from light and sweet to heavier and spicey.

2 (6 ounce) cans tuna in water
1/4 cup mayonnaise
3 -5 tablespoons dill relish
1/4 cup parmesan cheese
3 slices bacon
2 slices provolone cheese, deli style
tortilla chips (preferabley the bowl shape)
lime juice
1 tablespoon ground cayenne pepper
1/2 tablespoon black pepper
1/2-1 tablespoon garlic powder
cilantro, if you want some more color (optional)
1/2 tablespoon salt

Steps:

  • Open the 2 cans of tuna and use the lid to squeeze out as much water as you can over a sink.Take off the lids and set aside.
  • Take 1 cap full of lime juice in each can and just let it sit until tuna is used again.
  • Get about 4 paper towels and stack them. manuever the bacon on the paper towels. Place in the microwave for about 3 minutes. (The benefit to microwaving bacon is only for the crispness.)
  • While that's goin, spice up the dill relish. Add the cayenne, pepper, and garlic with the relish and mix thoroughly.
  • Take the two cans of tuna and drain out all the extra lime juice. Now mix in the tuna. (make sure you do not "blend" you want the tuna to be decently chunky.
  • Put in the mayo and parm, and mix.
  • Set out about 20-24 tortilla chips on a couple of plates. Rip up the cheese and place evenly on each tortilla. Take out the bacon and place in the tortillas for probably 20 seconds or until the cheese looks "sweaty". Take out and spoon out 1 teaspoon or more of the tuna salad on each of the tortilla chips.
  • Dab the bacon to get off extra grease. Break up the bacon into about dime size pieces and place evenly ontop of the whole tortilla/tuna salad spread.
  • You can always add and/or take away ingredients in tuna salad. Enjoy.
