2 oranges (sliced)
1 lemon (sliced)

APPLE WINE

Apple Wine image

Homemade apple wine is light, sweet and delicious. This easy winemaking recipe uses any apple juice to craft a delicious apple wine, perfect for sharing with friends.

Provided by Ashley Adamant

Time P25DT15h

Number Of Ingredients 8

1-gallon apple juice, see note
1 pound cane sugar (about 2 cups)
1 teaspoon yeast nutrient
1 teaspoon acid blend
1/2 teaspoon pectic enzyme
1/4 teaspoon wine tannin powder
Wine Yeast, see note
Optional ~ Campden Tablet and Potassium Sorbate for Stabilizing (I do not use these)

Steps:

  • Start by removing about 1 quart of juice (4 cups) from the gallon, and then pour the other 3 quarts into a fermentation vessel.
  • Place 2 cups of the removed juice in a small saucepan, and set the other 2 cups aside for topping off the fermentation vessel later.
  • Gently warm the juice in the saucepan. Add all the ingredients (except yeast) and stir to dissolve. Turn off heat and allow the mixture to cool to room temperature.
  • Pour the sweetened juice mixture into the fermentation vessel with the other apple juice.
  • Dissolve the winemaking yeast in a small amount of unchlorinated water (about 1/4 cup). A packet is sufficient to start fermentation in 5 gallons of juice, so only use roughly 1/5 to 1/2 the packet. Allow the yeast to sit for about 10 minutes to rehydrate.
  • Add the wine yeast to the fermentation vessel with the juice.
  • Top off the fermentation vessel with some of the apple juice you set aside at the beginning until the level of the juice is at the base of the neck of the fermentation vessel. Be sure to leave 2-3 inches of headspace to allow the mixture to bubble.
  • Cap with a rubber bung and waterlock (filled with water) and allow the mixture to ferment in primary for about 7 to 10 days. Fermentation will be very active, and may bubble up into the water lock. If so, clean out the water lock and re-attach it as necessary.
  • After primary fermentation, use a brewing siphon to move the ferment to a clean fermentation vessel, leaving any sediment behind.
  • Re-cap with a water lock and allow the mixture to ferment in a cool, dark place in "secondary" for at least 6 weeks, but preferably longer, like 6 months.
  • When fermentation is complete, bottle the wine in wine bottles and allow it to bottle age for at least a month but preferably longer before drinking. If you'd like sweet wine, back sweetening may be necessary at this point. See notes for instructions.

HOW TO MAKE EASY HOMEMADE APPLE WINE - DELISHABLY

From delishably.com
Estimated Reading Time 4 mins
  • Pour off extra. To start, make sure to your funnel is very clean. Open the apple juice and pour out about two cups. This will make space for the sugar and any foam made during fermentation.
  • Add sugar. Put in the funnel and pour the sugar in. Yeast feeds on sugar and emits alcohol in a process called fermentation. The yeast will feed on the sugar in the wine until it runs out or the concentration of alcohol in the wine becomes too high and they die.
  • Shake. Put the top on and shake it until the sugar is dissolved. Read More From Delishably. Bajra Roti Ki Churi (Sweet Pearl Millet Flatbread Crumble) South Indian Vegetable Kurma or White Kurma Recipe.
  • Add yeast/ Pour the yeast in, put the top on, and tilt the bottle upside down and right side up a few times. You don't want to shake it too vigorously.
  • Add any optional ingredients. If you have them on hand, add 10 or 20 raisins. Raisins contain nutrients that will help keep your yeast healthy. If you want to make a spiced cider, you could try adding a cinnamon stick and/or one or two cloves.
  • Airlock it. Take off the cap, then poke a few holes in a balloon with a needle, then stretch it over the the mouth of the bottle. As the wine ferments, it will release CO2.
  • Wait. Put the wine in a room temperature (or above) place and wait 2-3 weeks. After a day, the balloon should be "standing up" and small bubbles will be rising to the top of the wine.

10 BEST RED WINE SUBSTITUTES FOR COOKING - SUBSTITUTE COOKING

From substitutecooking.com
  • Red and white vinegar. If you don’t have red wine, chances are that you have vinegar in your kitchen. Vinegar is used in a wide range of recipes and can replace red wine in many of them as well.
  • Cranberry juice. Cranberry juice is great as a red wine replacement as well. It has a similar color to red wine but also a tart taste that enriches the flavor of different meals.
  • Pomegranate juice. Pomegranate juice can be a good alternative to red wine because it is similar in its dark color and has a very pleasant taste. Be careful as pomegranate can have a strong taste so you might want to add less than you would add red wine.
  • Ginger juice. You can use ginger juice instead of red wine and end up with a tasty dish that you will love to enjoy with your friends or family. Ginger has a flavor that resemblances red wine but it is not quite the same.
  • Grape juice. Red wine is made of grapes so grape juice can be a good replacement for it as well. Grape juice is sweeter than red wine. Thus, the taste of your dish will be slightly different.
  • Vegetable stock. You can use vegetable stock instead of red wine in both stews or soups and you will love the result. This substitute will not work for salads or cold dishes but it will be a great option for cooked dishes.
  • Apple juice. It might surprise you that apple juice can substitute red wine in almost any type of recipe. This is secret many chefs use if they run out of red wine.
  • Lemon juice. Lemon juice might be another red wine substitute that surprises you. Its color will not be similar to red wine but in terms of flavor, it can be very close as lemon juice is acidic too.
  • Tomato juice. Tomato juice is commonly used instead of red wine but it is not the ideal substitute since it can taste different enough to change the flavor of your food.
  • Water. Assuming that you have none of these substitutes, you can always add water to your dish. Just make sure that you don’t make it too liquid. Even if it will not enrich the flavor of your food or alter its color, it can give you the saucy texture you want.

A good way to check for fermentation, is simply smelling the apple juice. If the odor is in any way sour, or is like beer or wine, than the juice has started fermenting and should be discarded.
