Steps:
- Heat oven to 350 degrees. Grease a 9x13-inch baking pan.
- Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
- Stir in melted butter, sour cream, eggs, and vanilla until smooth. Pour into prepared pan.
- Sprinkle apples on top of batter.
- In a medium bowl, stir together all topping ingredients until thoroughly mixed. Sprinkle on top of apples.
- Place pan in oven and bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
- Make glaze. Combine all ingredients in a small saucepan and place over medium heat until sugar and butter are melted. Drizzle over coffee cake. Serve warm or at room temperature.
CROCK POT APPLE COFFEE CAKE
This Crock Pot Apple Coffee Cake is perfect for breakfast, bunch or dessert!

- Take one tablespoon of your softened butter and spread all around the bottom and sides of your crock pot
- In a bowl, mix together your apple pie filling, 3 tablespoons of brown sugar and 1 teaspoon of cinnamon
- Take 1/2 of your apple mixture and spread across the bottom of your crock pot
- In a different bowl, mix together your dry cake mix, eggs, sour cream, evaporated milk, 4 tablespoons of butter and the rest of your cinnamon very well
- Take 1/2 of your batter and gently spread over your apple mixture
- Repeat your layers
- Cut together your remaining butter and brown sugar and sprinkle on top
- If you want pecans, sprinkle those on top of everything
- Place 2-4 paper towels under your lid, cover and cook on high for 4-6 hours until cake is done in the middle
- Periodically check your paper towels to make sure they are not dipping down into the cake and remove moisture from your lid.
- Serve warm with whipped cream

- Mix flour, brown sugar, 1/2 cup of white sugar, 1/2 teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in walnuts and set aside.
- Whisk together 1/3 cup sugar, cornstarch, ginger, and 1/2 teaspoon cinnamon. Place the apples in a slow cooker, stir in the cornstarch mixture; toss with lemon juice. - 1. Prepare a 5-6 quart slow cooker with nonstick spray or grease well with margarine. In small bowl, mix apple mixture ingredients: set aside
- 2. To make crumble mixture, in medium bowl, stir together oats,1/2 cup of brown sugar or Splenda brown sugar and the light salt. With a pastry blender or fork, cut in 1/2 cup of butter or light margarine until well combined. Set aside.
- 3. In large bowl, mix cake batter ingredients until well combined. In bottom of slow cooker, spread half of apple mixture. Top with half of crumble mixture and with half cake batter. Repeat layering again with remaining apple mixture, crumble mixture and cake batter
- 4. Cover: cook on high heat setting 3 hours to 3 hours 30 minutes or until cake is set in center Turn off slow cooker. Remove cover; let stand 15-20 minutes. When reading to serve, invert coffee cake onto serving plate. Serve: With light Cool whip or vanilla sugar-free icecream

- Put all the topping ingredients and a pinch of sea salt in a bowl and rub together with your fingers until combined into a crumb-like texture - this can also be done in a food processor. Chill until needed. Will keep chilled for up to two days.
- Toss the apples with the sugar and lemon zest and juice until evenly coated, and tip into a 23cm round baking dish that's at least 5cm deep, or a 20cm square dish. Flatten down with your hand and scatter over the topping. Will keep covered and chilled for a day.
- Heat the oven to 190C/170C fan/ gas 5. Sit the crisp on a baking tray and bake for 40 mins until the topping is a deep golden and the fruit is bubbling at the edges. Leave to cool for 10 mins, then serve with ice cream or custard.
