Waffles don't have to just be covered in syrup or whipped cream; they also make a great bun for a sandwich. To take it over the top, add a schmear of almond or peanut butter.

2 tablespoons sugar
1/4 teaspoon ground cinnamon
2 tablespoons chocolate-hazelnut spread
2 tablespoons whipped cream cheese
2 frozen buttermilk or Belgian waffles
2 tablespoons unsalted butter, melted
2 large strawberries, chopped
1/2 small banana, peeled and cut into about 6 lengthwise wedges

Steps:

  • Mix the sugar and cinnamon in a small bowl; set aside. Mix the chocolate-hazelnut spread and cream cheese in another small bowl until smooth; set aside.
  • Toast the waffles until browned and crisp in a toaster or toaster oven. Drizzle the melted butter over both sides of each waffle, and dust both sides with the cinnamon sugar. Spread both halves evenly with the chocolate-cream cheese mixture. Arrange the strawberries and bananas on 1 of the waffles, then top with the remaining waffle.

1 cup milk
1/4 cup butter (melted)
1 egg
1 teaspoon vanilla
1 1/4 cup flour
2 teaspoons baking powder
1 tablespoon sugar
1 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup apple (finely chopped)

Steps:

  • Mix milk, butter, egg and vanilla in a large bowl. Add flour, baking powder, sugar, cinnamon and salt and continue mixing until smooth. Add apples and stir to mix.
  • Add batter into preheated waffle iron. Cook until crisp, about 4-5 minutes a piece. Continue until all the batter is gone.
  • Serve warm. Add maple syrup, butter or powdered sugar on top.

3 tablespoons unssalted butter
1 cup flour
1 teaspoon baking powder
Pinch of baking soda
Pinch cinnamon
Pinch of salt
1/4 sugar
1/2 cup yogurt
1/2 cup milk
1 egg, lightly beaten
1 cup frozen blueberries not thawed

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

2 ¼ cups warm water, divided
½ cup white sugar
2 tablespoons cornstarch

Steps:

  • Pour frozen berries and 2 cups water into a medium saucepan and cook over medium heat, stirring occasionally, until they have thawed but are not hot. Add sugar and bring to a simmer; cook for about 5 minutes, stirring frequently.
  • Mix remaining 1/4 cup water and cornstarch together in a bowl. Add to the berry mixture and cook over medium-low heat to thicken slightly, about 3 minutes.

APPLE & HAZELNUT CRUMBLE



Apple & Hazelnut Crumble image

I tweaked the Magnolia Bakery's recipe for Apple Tart with Hazelnut Brown Sugar topping, to come up with this simple and quick crumble. It is absolutely delicious. I received so many complements that I'm thinking of making it my signature dessert! =) Notes: I use either a 9 or 10 inch round pie dish for this recipe, but you can also use individual ramekins - just remember to shorten the baking time as ramekins are smaller and won't take as long to cook in the oven. Also note that measuring cups are required for this recipe!

Number Of Ingredients 8

5 -6 small tart green apples, cored, peeled & thinly sliced (ie. equals approx 4 cups of thinly sliced apples)
1/3 cup caster sugar
1 tablespoon plain white flour
1 teaspoon vanilla extract
3/4 cup plain white flour
1/2 cup firmly packed brown sugar (I prefer dark brown sugar but light is fine too)
6 tablespoons unsalted butter, softened and cut into small pieces
1/2 cup coarsely chopped hazelnuts (I put them in a freezer bag and smash them with a rolling pin)

Steps:

  • Pre heat your oven to 320 degrees fahrenheit or 160 degrees celsius.
  • First, make the filling by placing all the ingredients in a large bowl and tossing gently with your fingers until the apple slices are evenly coated. Set aside for 10 to 15 minutes.
  • Now make the topping by mixing the flour and brown sugar in a bowl. Add in the butter and rub in with your fingers until the mixture resembles coarse breadcrumbs.
  • Next, add the hazelnuts to the topping mixture and, using your hands, toss until all the ingredients are well combined. Set aside.
  • Very lightly grease the pie dish with butter. (I like to use a nice glass baking dish). Transfer the apple mixture evenly into the dish. Using your fingers, sprinkle the brown sugar topping evenly over the apples.
  • Place the dish on a baking sheet and bake for approximately 45 minutes, until the top is lightly golden. When ready, take it out of the oven and let it cool for about an hour.

WITH A HANDFUL OF RICH HAZELNUTS and diced apples, these Pacific Northwest waffles make a hearty and tasty weekend breakfast dish. The whole wheat flour adds a deeper flavor and bonus nutrients. Once you taste these waffles, you'll never use a waffle mix again.

Number Of Ingredients 16

2 cups whole wheat flour
2 tablespoons baking powder
1/2 teaspoon table salt
2 cups buttermilk
2 teaspoons vanilla extract
3 large eggs, separated
2 tablespoons packed light brown sugar
6 tablespoons (3/4 stick) unsalted butter, melted and cooled slightly
1/4 cup finely chopped hazelnuts
1/4 sweet apple, such as Fuji, peeled and diced (about 1/3 cup)
Northwest Berry Syrup (recipe follows)
4 cups fresh or frozen unsweetened berries, such as blueberries, raspberries, and blackberries, and hulled strawberries
1/2 cup sugar
1 teaspoon freshly squeezed lemon juice
1 1/2 teaspoons arrowroot (see Note)
(makes about 3 cups)

Steps:

  • Whisk together the flour, baking powder, salt, buttermilk, vanilla, egg yolks, brown sugar, and butter until just combined. Gently fold the hazelnuts and apples into the batter. Do not overmix.
  • In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  • Cook the waffles in a waffle iron according to manufacturer's instructions. Top the waffles with berry syrup.
  • Combine the berries, sugar, lemon juice, and 1 cup water in a medium saucepan. Bring to a boil over medium-high heat, stirring frequently.
  • In a small bowl, stir together the arrowroot with 1 tablespoon water. Add the arrowroot mixture to the berries and stir. Reduce the heat to low and cook for 10 minutes. Use a whisk to break up the berries, but do not crush them.
  • Remove the pan from the heat, cool the syrup for 1 to 2 minutes, and serve.
