APPLE WAFFLES
With soft apple pieces in every bite, it is hard to stop at just one of these Apple Waffles. Sweetened only with fruit they are perfect for serving as a snack, at breakfast or popping in the lunchbox.

Steps:
- Heat a non-stick frying pan over a medium heat and add 2 tbsp of butter. Allow to melt and add the chopped apple and cinnamon. Reduce the heat, and sauté until soft (around 3 mins). Remove from the heat.
- Place the sultanas in a small bowl and soak with boiling water.
- Pre-heat your waffle machine.
- In a large mixing bowl combine the dry ingredients. In a separate bowl mix together the wet ingredients. Add the wet ingredient to the dry and stir. Be careful not to over mix, some lumps are fine.
- Drain the sultanas and add to the waffle batter along with the sautéed apples. Stir until just combined.
- Spray or lightly brush your waffle machine with oil on both sides. Scoop 1/3 of the mixture into the centre of your waffle machine. Close and cook until the light indicates it is ready (this may vary depending on brand of waffle machine, cook to manufacturer instructions).
- Transfer to a cooling rack and repeat until mixture is finished.
- Serve with topping of choice

- Preheat the waffle iron. Preheat the oven to 200 degrees F if you plan on holding the cooked waffles in the oven. Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
- Whisk the evaporated milk, applesauce, brown sugar, oil, vanilla and 3/4 cup water in a large bowl.
- Fold the dry ingredients into the wet, and stir until combined. (Don't mix too much-some lumps are OK-just make sure the flour is coated.) Allow the batter to rest at room temperature for 5 minutes before baking.
- Ladle enough batter into the waffle iron to fill it to the edges, and cook until crispy and brown, 6 to 7 minutes. (You can tell the waffles are ready when very little steam comes out of the waffle iron.) Continue in batches until all the batter is used. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Sprinkle with powdered sugar and cinnamon, and serve with maple syrup.
APPLE-CHEDDAR WAFFLES
We used self raising flour, which has both leavening and salt in it, as a shortcut ingredient to make these savory and fluffy waffles. A small bit of sugar in the batter doesn't add detectable sweetness, but keeps the waffles moist and helps the exterior crisp up when cooking.

- Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.

- In a medium bowl, stir together the flour, wheat bran, salt and apple pie spice. Set aside. In a separate bowl, stir together the water and honey. Sprinkle the yeast over the surface, and let stand for about 5 minutes to dissolve.
- When the yeast has dissolved, stir in the apples, applesauce, milk and egg whites until well blended. Stir this mixture into the dry ingredients. Cover, and let rest for about 15 minutes.

- Preheat waffle iron.
- Sift flour and baking powder into a mixing bowl and add salt. Separate eggs. Mix yolks with milk and add to dry ingredients. Mix together until just blended.
- Add the apple pieces and raspberries and stir in the melted butter. Beat the egg whites with a whisk until stiff but not dry and fold into the batter. Lightly butter or spray the grids of your waffle iron if necessary. And brush or spray them again only if subsequent waffles stick.
- Spoon batter out onto waffle iron (about half a cup for each waffle). Close lid and bake until browned and crisp. Serve at once. Top with maple syrup, served at the table.
APPLE TOPPING FOR PANCAKES, WAFFLES & SUCH
A cinnamon-y fruit topping that tastes great over pancakes, waffles, oatmeal, etc. From the Black Dog Inn B&B in Estes Park, Colorado. Mix and match different kinds of apples for a more robust flavor. Also good with a few raisins or dried cranberries thrown in; just make sure to add a little more water or juice to allow them to plump up enough.
