1-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup sugar, divided
1/2 cup butter
4 cups sliced peeled apples
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 large egg, lightly beaten
1/3 cup evaporated milk
1 teaspoon vanilla extract
3/4 cup chopped nuts
1-1/3 cups sweetened shedded coconut

Steps:

  • In a bowl, combine flour, salt and 1/3 cup sugar. Cut in butter until the mixture resembles fine crumbs; press into a greased 13x9-in. baking pan. , Arrange the apple slices on top of crumbs; sprinkle with lemon juice. Combine 1/3 cup sugar with cinnamon; sprinkle over apples. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine remaining sugar with the rest of the ingredients. Spoon over baked apples; bake for 20 minutes or until golden brown. Cut into squares while still warm.

1 (3.9 ounce) container Mott's® Healthy Harvest Blueberry Delight Applesauce
½ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon ground cloves
2 large eggs, beaten
¾ cup granulated sugar
⅓ cup canola oil
1 Golden Delicious apple, peeled and cut into 1/4-inch dice
⅓ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil or coat an 8x8-inch baking dish with nonstick cooking spray and set aside. Whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, salt, and cloves in a large bowl.
  • Combine the eggs, applesauce, sugar, oil, and apple in a separate bowl, and whisk until well blended. Pour the liquid ingredients over the dry ingredients and stir until just moistened. Stir in the raisins. Pour the batter into the prepared baking dish. Smooth with a rubber scraper.
  • Bake 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

I picked up this recipe in a bonus book from Taste of Home. Maxine Hearney posted the recipe and said it had been in her family for 75 years. It is really delicious served warm with a scoop of vanilla ice cream.

1/2 teaspoon salt
1 cup sugar, divided
1/2 cup butter, room temperature
4 cups apples, peeled, sliced
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 egg, slightly beaten
1/3 cup evaporated milk
1 teaspoon vanilla extract
3/4 cup nuts, chopped
1 1/3 cups flaked coconut

Steps:

  • In a bowl, combine flour, salt and 1/3 cup sugar.
  • Cut in butter until mixture resembles fine crumbs; press into the bottom of a greased 13x9x2 inch baking pan.
  • Arrange apple slices on top of crumbs; sprinkle with lemon juice.
  • Combine 1/3 cup sugar with cinnamon; sprinkle over apples.
  • Bake at 375 degrees Fahrenheit for 20 minutes.
  • Meanwhile, in a small bowl, combine remaining 1/3 cup sugar with the egg, evaporated milk, vanilla, nuts, and coconut.

Shortbread crust topped with cinnamon spiced apples then topped with a sweet coconut topping.

1 1/2 cups all purpose flour
1/2 teaspoon salt
1 cup sugar (divided)
1/2 cup butter (1 stick, very cold, cut into small cubes)
4 cups peeled (cored and thinly sliced apples tart apples (Granny Smith or Cortland))
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 egg (lightly beaten)
1/3 cup evaporated milk
1 teaspoon pure vanilla extract
3/4 cup chopped nuts (i used walnuts - it's what I had in the pantry, but pecans would work well too)
1 1/3 flaked (unsweetened coconut)

Steps:

  • Preheat the oven to 375
  • In a bowl, combine the flour, salt and 1/3 cup of the sugar.
  • Cut in the cold butter with a pastry cutter, fork or use your hands until the mixture resembles fine crumbs.
  • Press the mixture into the bottom of a greased or parchment lined 13x9 baking dish.
  • Spread the apple slices on top of the crumbs, and drizzle with lemon juice. Combine another 1/3 cup of sugar with the cinnamon, and sprinkle that on top of the apples. Bake for 20 minutes.
  • While the dish is baking, combine the last 1/3 cup of sugar with the egg, evaporated milk, vanilla, nuts and coconut in a small bowl. Spread this mixture over the baked apples, and bake for another 20 minutes. Just a note, in the bowl it wont look like there's enough topping, but it spreads pretty thin.
  • Cool on a wire rack and cut into squares.

3/4 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 egg yolks
1 1/4 cups flour
1/8 teaspoon salt
1 cup rolled oats, uncooked
1 cup pecans, chopped
2/3 cup apple butter

Steps:

  • Preheat oven to 350 degrees and grease an 8x8 baking dish.
  • Cream butter and sugars. Add egg yolks and beat until fluffy. Mix in flour and salt and then stir in the oats and nuts. Press half of this mixture into the bottom of the baking dish.
  • Spread the apple butter over the dough to within 1/2 inch of the edge.
  • Sprinkle with pieces of the extra dough until the surface is evenly coated. Press down carefully but firmly to cover the apple butter.
  • Bake for 20 to 25 minutes or until light brown.
  • Cool and cut into squares.

2 cups flour
1 cup firmly packed brown sugar
3/4 cup granulated sugar, divided
1-1/2 tsp. ground cinnamon
1/2 cup (1 stick) cold butter
1 cup chopped walnuts
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. milk
1 egg, beaten
1/2 tsp. vanilla
3-1/2 cups chopped apples

Steps:

  • Preheat oven to 350°F. Mix flour, brown sugar, 1/2 cup of the granulated sugar and the cinnamon; cut in butter using pastry blender or two knives until mixture resembles coarse crumbs. Stir in walnuts. Reserve 2 cups of the crumb mixture for topping; press remaining crumb mixture firmly onto bottom of 13x9-inch baking pan.
  • Beat cream cheese and milk with electric mixer on medium speed until well blended. Add remaining 1/4 cup granulated sugar, the egg and vanilla; mix well. Pour over crust. Top with apples; sprinkle with reserved crumb mixture.
  • Bake 30 min. Cool completely. Cut into 32 bars to serve. Store in tightly covered container in refrigerator.

  • Preheat oven to 350°F

  • In medium bowl, beat cream cheese until fluffy.

2 1/4 cups whole wheat pastry flour, divided
1 cup oatmeal
2 teaspoons vanilla, divided
1/2 cup sugar, divided (or other sweetener)
5 small apples, diced (peeling optional)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
8 tablespoons Smart Balance butter spread, cold

Steps:

  • Heat oven to 350.
  • In food processor, pulse 2 c flour, oatmeal, and 1/4 c sugar. Add cold butter spread and 1 t vanilla and pulse until mixture looks like granola, then pulse into a dough.
  • Press mixture into a greased 9 x 13 pan and bake 12 minutes.
  • Toss together apples, 1/4 c sugar, 1 t vanilla, cinnamon, and nutmeg. Spread over cooled crust and bake about 40 minutes more.
