Steps:
- Sterilize and dry jars for jelly, and set side. I like to use my dishwasher. New lids are recommended for best results.
- Combine grape juice and pectin in a large pot over medium-high heat. Bring to a boil, and stir one minute at a rolling boil. Stir in sugar for a few minutes to completely dissolve. Remove from heat.
- Ladle the hot jelly into the jars, leaving 1/2 inch of space at the top. Wipe rims of jars with a clean dry cloth. Cover with a lid and ring to seal. Let stand 24 hours at room temperature, then refrigerate. Jelly may take up to a week to set. Once set, it is ready to serve. Store in the refrigerator for up to three weeks, once set. If canning for long term storage, process in a hot water bath for 10 minutes, or contact your local extension for processing times in your area.

GRAPE JELLY
This slightly tart, vibrant red jelly makes a lovely change from the usual jams

- Tip the grapes into a large saucepan set over a low heat, then cover and leave to gently cook for 5 mins until the juices start to run. Take a potato masher or fork and mash up the grapes. Leave to cook for about 10 mins more, mashing every now and again until the grapes are falling apart. Place a clean tea towel or kitchen cloth in a sieve set over a bowl, then pour the grape mixture into this. Let the mixture drip through for at least 1 hr or preferably overnight.
- Measure out the juice (you should have about 600ml) and pour it into a pan along with the sugar and lemon juice. Set the pan over a high heat and bring to the boil. Skimming any scum as it boils, let the mixture bubble until the temperature reaches 105C on a sugar thermometer. If you don't have one, put a small plate in the freezer for 5 mins, then pour a little of the juice onto the cold saucer. After 1 min, run your finger through; if the jam wrinkles slightly, it's ready. Pour the hot jam into a sterilised jar. Will keep unopened for up to 3 months.

GRAPE JELLY
To determine whether or not the jelly is done cooking, use a candy thermometer and the "sheeting method," described below. Don't use overripe fruit for jelly, as it may not set up well.

- Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
- In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
- Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.
APPLE OR GRAPE JELLY MADE WITH CANNED JUICE
I got these recipes from the Kerr canning pamphlet I have made them for years and its really easy and delicious and it is made with commercially canned juices.

- 1. Mix the (apple or grape) juice with the pectin in a large sauce pan ; over high heat quickly bring the mixture to a hard boil. Stirring occasionally.
- 2. Immediately add all the sugar and stir , bring to a full rolling boil(a boil that can't be stirred down) and boil hard for 1 minute , stirring constantly.
- 3. Remove from the heat and skim off the foam with a metal spoon , and pour quickly into sterilized jelly jars. ( fill to 1/2" of top )
- 4. With a wet dish towel wipe the ring of jar clean of any jelly spillage and put on cap and screw band on firmly tight.
- 5. Process in boiling water bath for 5 minutes.
- 6. NOTE : For a rosy color in the apple jelly add a few drops of red food coloring to the juice before cooking.
RED CABBAGE W/APPLES AND GRAPE JELLY
Sweet and tangy cabbage, apples and onions cooked in grape jelly and butter! This is a very unique combination, and very good! Enjoy!

- Place cabbage in colander in sink. Boil about 2 quarts water, pour half over cabbage, drain well, pour rest over and drain completely.
- In large skillet, melt butter. Add cabbage, onions and apples. Stir in grape jelly and salt; cover and simmer to desired tenderness.
- I only cook mine for 10 minutes. I like this as is, but you can sweeten this further with a little sugar to taste *if desired.

- Place grapes in a large bowl and mash.
- Place grapes, apple slices and water in a large stainless or enamel pot.
- Bring to a boil, reduce heat and simmer for 30 min.
- Pour juice and pulp thru a damp jelly bag and let drip UNDISTURBED for 3 hours.
- Restrain through another damp jelly bag.
- If you want you can now save the pulp for grape butter.
- Measure 5 cups of grape-apple-add the lemon juice and pour back into the large pot (washed pot that is) and bring to a full boil.
- Stir in sugar and return to a full, rolling boil until the jell point is reached.
- Remove from heat and skim.
- Ladle into steril hot jars leaving 0.125 inch head space.
- Process for 5 min in a boiling water bath at altitudes up to 1000 feet.

- Place water, cores, and peels in a large pot. Bring to a simmer and cook for 25 minutes. Strain liquid through a cheesecloth set over another large pot. Pour in enough apple juice to equal 7 cups of liquid. Add pectin and bring to a rapid boil. Add sugar and continue boiling for 1 minute. Remove jelly mixture from heat and add food coloring.
- Pour jelly mixture into sterile jars leaving 1/8 inch room at the top. Wipe jar rims and adjust lids and rings. Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
- Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

GRAPE JELLY BBQ SAUCE - APPLE JELLY BBQ SAUCE

- Wash and quarter apples; place in a 6-quart saucepan. Add 6 cups water; place over medium-high heat; bring to a boil. Reduce to a simmer; cook until very soft, 45 to 60 minutes; remove from heat. - GRILLED JELLY ON BRIE WITH HAM AND SOURDOUGH. This is sort of like a reverse Monte Cristo sandwich or a fancied up-grilled cheese. Of course, you can switch out the ingredients to your liking.
- JELLY ON CORNBREAD OR BUTTERMILK BISCUITS. It doesn’t get much more Southern than this. My grandmother used to make the very BEST buttermilk biscuits.
- CANDIED BACON. First you have to fry up your bacon. Then once you get it crispy, spread the jelly on top. My recommendations would be the Cinnamon Apple Jelly, or the Red Jalapeño Jelly.
- JELLY AND YOGURT PARFAIT. Put a sweet jelly on the bottom, add yogurt, and then top with nuts.
- JELLY AND ICE CREAM. This has to be one of my favorite things to do with ice cream. Spoon in some Blackberry Spread, or some Apple Cider Jelly.
- SPICY PEANUT BUTTER AND JELLY SANDWICH. Grape or strawberry is standard, but what if I told you that peanut butter could be spread with a different kind of jelly for a more savory treat?
- SWEETEN A COCKTAIL BY ADDING JELLY. This works with so many cocktails. Whiskey pairs great with our Triple Ale Peach Chipotle Beer Jelly, berry jellies mix well with vodka, and apple and peach flavors are good with gin.
- STUFFED FRENCH TOAST. First, choose a really soft, thick gourmet bread, and spread your jelly in between the slices. Soak the sandwich in eggs and milk, and pan-fry using lots of butter.
- JELLY ON WAFFLES OR PANCAKES. Cooking trick: Add some water to the jelly and boil it down if you want to make your own syrup, then drizzle on top of waffles or pancakes.
- JELLY CHICKEN BAKED GLAZE. Here’s an example: Place jelly in a pan, let simmer, and reduce until it gets nice and thick. Then pour it over chicken in a pan, with garlic and pepper.
