Apple fritters are the sweetest fall recipe! Dust with powdered sugar or dip in a doughnut glaze for a yummy breakfast treat or snack.

2 c. all-purpose flour
1/2 c. granulated sugar
2 1/4 tsp. baking powder
1 1/4 tsp. salt
2 tsp. ground cinnamon
2 large eggs
3/4 c. whole milk
2 tsp. vanilla extract
2 tbsp. unsalted butter, melted
2 whole granny smith apples, peeled and diced
Powdered sugar, optional, for dusting
1 1/2 c. powdered sugar
1/4 tsp. salt
1/4 tsp. vanilla extract
1/4 c. whole milk

Steps:

  • In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla.
  • Gently fold dry and wet ingredients together until just combined (do not over mix.) Fold in the apples. Add enough apples to make a very chunky batter. You want the apples to shine though!
  • Heat a couple of inches of canola oil in a dutch oven over medium heat. When it gets hot (about 350 degrees), drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.
  • Drop 1 tablespoon of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove fritters and drain on a paper towel.
  • For the glaze (if using): In a medium bowl, whisk together the powdered sugar, salt, vanilla extract and whole milk.
  • Dust the fritters very generously with powdered sugar, or dip fritters in the light doughnut glaze. Serve warm!

2 sticks (1 cup) salted butter, plus more for greasing the pan
2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough
1 1/2 cups sugar
1 teaspoon vanilla extract
8 ounces citrus-flavored soda, such as Mountain Dew (two-thirds of a 12-ounce can)
Cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

1 1/4 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon fine sea salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup sparkling water
1/2 cup buttermilk
1 teaspoon pure vanilla extract
Zest of 1 large lemon
2 cups olive oil
2 cups vegetable oil
3 firm apples, such as Granny Smith

Steps:

  • In a medium bowl, mix together the flour, 1/4 cup sugar, the cinnamon, salt, baking powder and baking soda. Add the sparkling water, buttermilk and vanilla, and stir until the mixture forms a batter. Let rest for 15 minutes.
  • In a small bowl, whisk together the remaining 1/2 cup sugar and the lemon zest.
  • In a heavy 4 to 5-quart saucepan, heat the olive oil and vegetable oil over medium heat until a deep-fry thermometer registers 375 degrees F. (If you don't have a thermometer, a cube of bread should brown in about 3 minutes.)
  • Meanwhile, peel and core the apples, then cut into 1/2-inch-thick slices. Using paper towels, blot the apple slices dry.
  • Add the apple slices to the batter and toss until coated. Working in batches, fry the apples, turning occasionally, until golden brown, 2 to 3 minutes per batch. Drain on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.

Apple Fritters are a wonderful fall treat! In 1995 my brother and his wife invited me and my daughter to go on vacation with them and their young grandson. We went to several places in Tennessee. One of the places we visited, that I will never forget, is the Apple Barn in Sevierville, Tennessee. We ate at their Restaurant for breakfast, lunch and dinner. At each of these meals they served these wonderful Apple Fritters. I wanted the recipe and just so happened they had this recipe on a post card in one of the shops there. Now I have these wonderful little fritters anytime I want em. Hope you enjoy!

1 - egg, beaten
1 cup(s) milk
4 tablespoon(s) margarine
1/4 cup(s) sugar
1/2 teaspoon(s) salt
1 - orange, rind and juice (rind is to be grated)
1 cup(s) apples, chopped but not to fine
3 cup(s) cake flour
2 teaspoon(s) baking powder
1 teaspoon(s) vanilla extract
- oil for frying

Steps:

  • Preheat oil in skillet to 350 degrees.
  • Beat egg. In a mixing bowl, combine the milk, egg, sugar and melted margarine. Add the orange juice, grated rind, chopped apples (skins can be left on) and vanilla. Sift together the flour, salt, baking powder. Stir into milk mixture with a spoon until blended. Do no over mix.
  • Drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly.
  • Allow fritters to cool.
  • NOTE: You can eat as is or sprinkle with confectioners' sugar, or cinnamon/sugar, or glaze. These are so yummy!!

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

1 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg (beaten)
1/3 cup milk
1 cup apple (diced)
1 cup cooking oil
confectioners' sugar (for dusting)

Steps:

  • Measure and sift all dry ingredients.
  • Beat eggs and milk together; slowly incorporating the dry ingredients.
  • Add the chopped apples.
  • In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  • Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  • Remove from oil and drain on brown paper.
  • Cool and sprinkle with powdered sugar.
  • Makes 12 small fritters.
  • Eliminate the sugar and serve with pork roast.
