1/3 cup butter, softened
1/2 cup sugar
1/4 cup brown sugar
1 egg, beaten
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups apples, grated
1 cup brown sugar
4 tablespoons butter
1/4 cup milk
3 tablespoons powdered sugar
1/2 cup pecans, finely chopped

Steps:

  • Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
  • In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
  • Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.
  • For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
  • Cool completely and cut into bars. Store in air-tight container to retain moisture.
  • Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

These very simple but impressive bars use boxed cake mix for the base, streusel on top and apple butter in between for a sweet snack that's not too sugary.

1/2 cup (1 stick) unsalted butter
1 box yellow cake mix for two 9-inch rounds
1 large egg
1 cup apple butter
1/2 cup unsweetened instant or quick-cooking oats
1/4 teaspoon ground cinnamon
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square pan with a piece of aluminum foil (about 17 inches long), leaving a 2-inch overhang on each side. Lightly coat the bottom and sides of the lined pan with cooking spray.
  • Melt half the butter (4 tablespoons) in a medium bowl in the microwave, about 45 seconds. Set aside 1 cup of the cake mix, and add the remaining mix to the melted butter. Add the egg and 1 tablespoon water, and mix with a spatula until well blended. Let stand a few minutes until the mixture is no longer tacky to the touch. Pat the dough in an even layer in the pan. Bake until the edges are lightly set to the touch and the crust is lightly browned all over, about 20 minutes. Let cool for 5 minutes.
  • Meanwhile, melt the remaining butter in a medium bowl in the microwave, about 45 seconds. Add the reserved cake mix, oats and cinnamon, and mix with a fork until crumbly.
  • Spread the apple butter over the cooled crust, spreading it to the edges. Scatter the crumb mixture over the apple butter. Return the pan to the oven and continue to bake until the crumbs are golden brown and firm, about 30 minutes more. Cool completely in the pan.
  • Using the foil overhang, lift the bars out of the pan and peel the foil away from the edges. Dust with confectioners' sugar, and cut into 16 bars.

3 - 4 large granny smith apples (, cut into 0.7cm / 1/3" dice(~4 cups))
1/4 cup (35g) plain flour ((all purpose flour))
1/4 cup (50g) white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
Salted caramel sauce
Ice cream!

Steps:

  • Preheat oven to 180C/350.
  • Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
  • Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.
  • Add egg and mix.
  • Lightly press 2/3 of the mixture into the bottom of the pan.
  • Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.
  • Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.

100g butter , softened
175g golden caster sugar
1 egg
280g self-raising flour
125ml milk
200g raspberries
50g butter , diced
85g self-raising flour

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 20 x 30cm cake tin with baking parchment. Put the apple in a small pan with 2 tbsp water. Cook for a few mins or until the apple starts to soften.
  • Meanwhile, make the crumble topping. Rub the butter into the flour, sugar and lemon zest until it resembles big breadcrumbs, then set aside.
  • Beat the butter and sugar in a large bowl until fluffy, then gradually add the egg. Tip in the flour and milk, and continue to beat until everything is combined. Incorporate the apples then spoon the mixture into the tin, smooth the surface, then dot with the raspberries. Sprinkle over the crumble topping and bake for 45 mins or until a skewer inserted comes out clean, and the topping is golden.

1 cup white whole-wheat flour
1 cup rolled oats
2/3 cup firmly packed dark brown sugar
1/4 cup confectioners' sugar
1/4 teaspoon baking soda
Pinch fine sea salt
1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit
1/4 teaspoon ground cinnamon

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
  • Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. 1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

2 cups frozen raspberries
1/2 cup granulated sugar

  • Preheat the oven to 350 degrees F. Butter a 9-inch square baking pan and line it with parchment paper, leaving a 2-inch overhang on two sides. In a large bowl, whisk together the flour, baking powder and salt. In a medium bowl, beat the butter and the brown sugar with an electric mixture on medium speed until fluffy, about 2 minutes. 2 cups (240g) all-purpose flour
3/4 cup (160g) light brown sugar, packed
1/4 cup (50g) granulated sugar
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp apple or pumpkin pie spice
1/2 tsp Kosher salt
1 cup (227g/2 sticks) unsalted butter, softened
1 large apple, peeled and very thinly sliced
1/2-2/3 cup caramel sauce, room-temperature
optional: 1/4 cup chopped walnuts
1/2 cup granulated sugar
3 Tbsp unsalted butter, cubed
1/4 cup heavy whipping cream
1 tsp pure vanilla extract
pinch of Kosher salt, to taste

Steps:

  • (see recipe below). Set aside to cool.
  • to 350℉. Line a 9×9-inch baking pan with parchment paper, leaving about an inch overhang on two sides. Set aside.
  • In a large mixing bowl, whisk together the oats, flour, sugars, baking soda, and spices until well-combined.
  • Cut the butter into cubes, then use a pastry blender to cut the butter into the dry ingredients. Once it's mostly combined, switch to using your fingers and knead until completely incorporated. You should form a shaggy, crumbly dough, that easily sticks together when pinched. This may take a few minutes.
  • Using a mandolin, or a very sharp knife, (carefully) cut the apples into slices, as thin as you can manage.

  • Drizzle the (room-temperature) caramel sauce across the apples, adjusting the amount to taste. Top with the remaining crumble mixture, from edge to edge. Sprinkle with the chopped walnuts, if using. Press the crumb topping down gently.
  • for 35-45 minutes, until the crumble topping is golden brown and has puffed up a bit. The caramel may be starting to bubble up through the crumbs. Remove from the oven and let cool completely before cutting into bars. Enjoy!!
  • in a medium heavy-bottomed pot (preferably with high sides) over medium heat, stirring constantly. The sugar will begin to form clumps, then melt into a deep amber-colored liquid as you stir. Be careful not to let the sugar burn.
  • as soon as the sugar is completely melted, and whisk until smooth. Remove from the heat and slowly stir in the cream. The mixture will foam and bubble up. Keep whisking until the caramel is smooth. Stir in the vanilla. Season with salt, to taste.

1 cup applesauce
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine all ingredients EXCEPT applesauce and nuts. Mix well until crumbly. RESERVE 1 cup of this oat mixture.
  • Press into bottom of greased 13" x 9" baking pan. Bake at 350 for 13-15 minutes; cool.
  • Spread applesauce over partially baked crust, then sprinkle with nuts. Sprinkle remaining 1 cup of oat mixture on top.
  • Bake at 350 13-15 minutes or until golden-brown.
  • Cool. Cut into squares.

8 cups apples, peeled, cored and thinly sliced (Golden Delicious, Northern Spy, or Cortland)
1 1/2 teaspoons lemon juice
1/2 cup water
1/2 cup white sugar
1/4 cup brown sugar
3 tablespoons cornstarch
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/3 teaspoon nutmeg
1 (300 ml) can eagle brand sweetened condensed milk
1 (225 g) package cream cheese
1 teaspoon vanilla
2 eggs
2 tablespoons all-purpose flour
2 teaspoons lemon juice

Steps:

  • CRUST:.
  • Pulse all ingredients together except butter in food processor. Add butter and pulse until mixture resembles coarse meal. Reserve 1 1/2 cups for topping. Press remaining filling into parchment lined 13x9 inch baking pan. Bake in preheated 350F oven for 10 minutes.
  • FILLING:
  • Toss apples with lemon juice. Combine with remaining apple layer ingredients in large saucepan and bring to a boil, stirring occasionally. Reduce heat to medium low and cook until apples are tender (about 5 minutes). Cool completely.
  • CREAM CHEESE LAYER: Beat all ingredients together with electric mixer or food processor until smooth.
  • ASSSEMBLE AND BAKE:
  • Pour cream cheese layer over pre-baked crust. Top with apples. Sprinkle reserved crust ingredients over apples and bake for 40 minutes or until set. Cool. Cut into squares.
