TORTA DI MELE (ITALIAN APPLE CAKE)
This Italian apple cake recipe is from my mom and reminds me of my childhood. It tastes delicious, and I bake it for my family now.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a pie plate and dust with bread crumbs
- Combine melted butter, 1/2 cup sugar, and vanilla bean seeds in a bowl. Add eggs and stir to combine. Mix flour, baking powder, and salt in a bowl and add to butter mixture. Add milk if batter is too thick
- Pour batter into the prepared pie plate. Distribute apple slices in a thick layer on top of the batter. Dot with cubed butter and sprinkle with 1/4 cup sugar.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

SPICED APPLE CAKE

Steps:
- For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
- Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
- For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
- Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.
ITALIAN APPLE CAKE
Steps:
- Pre-heat oven to 350F (180C), grease and flour a nine inch (23 cm) bundt pan (a cake pan would work too).
- In a medium bowl add the chopped apples and sprinkle with the lemon juice.
- In a large bowl beat the eggs and sugar until creamy and light approximately 3-4 minutes. Then add the yogurt and oil, sift the flour, corn starch, baking powder, baking soda, salt and zest into the bowl add the zest then beat until combined.
- Fold in the apples, spoon into the prepared cake pan, sprinkle with a couple of tablespoons of granulated sugar and bake for approximately 35-40 minutes (check for doneness with a toothpick). Let cool completely before removing from pan. Dust with powdered sugar if desired. Enjoy!

A moist apple cake that I make in an angel food pan. Sauce is poured over cake when taken out of oven. Delicious!

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.
- Bake in the preheated oven for 75 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Pour glaze over cake and let stand for 1 hour before turning out.
- To make the glaze: In a saucepan, combine butter, 1 cup sugar, 1/2 teaspoon baking soda and 1/2 cup buttermilk. Bring to a rolling boil and pour over cake.

- Make the Gâteau Invisible: Peel the apples and remove the cores. Slice them very thinly.
- Preheat the oven to 350˚F (180˚C).
- In a medium bowl, whisk the eggs and sugar until pale. Add the milk and melted butter and mix well.
- Sift in the flour and combine. Add the sliced apples. Using a rubber spatula, coat the apples well with the batter.
- Spoon the apples into a parchment paper-lined loaf pan, then pour over the remaining batter. Top with sliced almonds.
- Bake for 40 minutes. Cover with a foil and bake another 10 minutes.
- Let cool, then remove the cake from the pan.
- Make the butter caramel sauce. In a microwave-safe bowl, add the sugar and butter. Microwave 2 minutes or until sugar turns dark brown. Using oven mitts, very carefully take the bowl from the microwave. The bowl and sugar will be extremely hot so be careful when you are handling them.
- Immediately add the cream and whisk well with a metal spoon or whisk (this will splatter a bit, but keep stirring!).
- Pour the caramel over the cake and serve.
- Enjoy!

ITALIAN APPLE CAKE
This is my first post! Every time I make this cake people beg me for the recipe. Its adapted from an authentic Italian recipe and it's incredibly quick and easy to make. It uses everyday ingredients (omit the Amaretto if you don't have any) and the result is a moist, almost pudding-like cake which is full of flavour. Perfect for a decadent afternoon tea or to serve as a dessert. Hope you like it!

Steps:
- Set oven to 180C (350F).
- Grease and lightly flour a 23cm (9 inch) round cake tin.
- You'll also need three mixing bowls- small, medium and large- for this recipe.
- DO NOT PEEL the apples.
- Cut into chunks about 1/2" square- discarding the core.
- Place apple chunks into the first (medium) mixing bowl.
- Toss apple in lemon juice to avoid discoloration, then drain off and discard excess juice.
- Add raisins and coconut to the apples.
- Tip walnuts onto cutting board and sprinkle over 1 tablespoon sugar.
- Chop nuts roughly with the sugar, then add nuts and'nut flavoured' sugar to the apple mixture.
- Mix well.
- In the second (large) mixing bowl, sift flour, baking powder, cinnamon and nutmeg.
- In the third (small) bowl, combine eggs and sugar and beat until light and lemon colored.
- Still beating, add the melted butter and the liqueur (or essence).
- Make a well in the centre of the flour mixture and add the egg mixture.
- Stir until well combined.
- Tip in the apple mixture and mix well.
- At this stage it may seem you have too much apple and not enough batter- don't worry!
- Turn the mixture into the prepared cake tin.
- Bake on the centre shelf of the oven at 180C (350F) for about 45-50 minutes or until the top of the cake has turned a nice golden brown.
- (Test with a skewer if unsure.) Remove cake from oven, turn onto a rack to cool.
- Sprinkle with icing (confectioner's) sugar to serve.
- Serve with thick cream.
