FAVORITE STREUSEL APPLE CRISP

- Preheat the oven to 375°F. Butter a shallow 4-quart baking pan.
- Place the flour, brown sugar, granulated sugar, cinnamon and salt in a food processor and process to blend. Add half of the butter and pulse to incorporate a bit, then add the rest of the butter and pulse the mixture until it forms a nubby, pebbly texture, but not a paste. Transfer to a bowl and stir in the oats with a spoon, so they don't get minced up by the food processor. Hold the topping in the fridge while you prepare the apples if it's warm in the kitchen.
- Peel and slice the apples about 1/2-inch thick. Toss them in a large bowl with the zest and juice of the lemon and orange, then sprinkle over the sugar and cinnamon and toss so that the apples are evenly coated with the mixture. Transfer the apples to the prepared pan and evenly distribute the topping over the apples.
- Bake for about 1 hour until the apples are tender (slide a knife into the middle of the pan) and the top is browned. You can give it a minute or two under the broiler if you want to get the top a bit more browned, but watch it carefully. Cool on a wire rack until warm, and serve with ice cream or whipped cream.

- Peel and core the apples. Use a sharp knife or mandolin to slice the apples into very thin, uniform pieces.
- Preheat the oven to 375 degrees F. Grease a 9x13 inch pan.
- Add the sliced apples to the pan.
- In a medium bowl, combine brown sugar, flour, oats, cinnamon, and nutmeg. Use a fork or pastry cutter to stir in the softened butter.
- Sprinkle the streusel over the apples.
- Bake for 35-40 minutes at 375. It is done when a knife inserted in the center slides in easily (the apples should be fork-tender)
- Let stand for a few minutes before serving hot or room temperature.
- Serve with ice cream and this amazing caramel sauce.
- Serves 12-16.

- Preheat the oven to 375 degrees F (190 degrees C).
- Toss sliced apples with lemon juice to prevent browning.
- Mix flour, rolled oats, wheat and barley nugget cereal, melted butter, 1/4 cup white sugar, and 1/4 cup brown sugar together in a large bowl.
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir 1/3 cup brown sugar, 1/3 cup white sugar, and cinnamon into melted butter until sugar begins to dissolve, 3 to 4 minutes. Add apples and water; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.
- Pour apples and sugar mixture into a 2 quart baking dish. Sprinkle topping evenly over the apple filling.
- Bake in the preheated oven until the top is browned and the filling is bubbling up around the edges, 25 to 30 minutes. Cool for 10 to 15 minutes.

SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! - Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.

- Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. Stir in flour and vanilla, then cook until thick and pour into 4 (8 by 10-inch) baking dishes. Top with streusel and bake at 350 degrees F until crispy and fruit is bubbling (approx. 40 minutes). Serve warm.
- Mix butter, sugar, and flour together, until crumbly and mealy looking. Add cinnamon, salt, and pecan pieces. Do not over mix. Store in refrigerator. Streusel topping may be doubled for a thicker coating.
