1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream
2 cups chopped apples
1/2 cup chopped nuts
1 teaspoon cinnamon
1/2 cup brown sugar
2 teaspoons melted butter

Steps:

  • Preheat oven to 350.
  • Grease a 13 x 9 x 2 baking pan.
  • Cream butter and sugar.
  • Add eggs and vanilla, beat well.
  • Sift together flour, baking soda, baking powder, and salt.
  • Add dry ingredients to the first mixture alternately with 1 cup sour cream.
  • Stir in chopped apples.
  • Spread evenly in greased pan.
  • Mix together ingredients for nut topping.
  • Sprinkle over batter.
  • Bake for 35-40 minutes.

  • Prepare cake batter according to package directions; pour into a greased 13x9-in. baking dish. Combine the apples, walnuts, sugar and cinnamon; spoon over batter. I posted this recipe in answer to a message board request. It is a family favorite that I make frequently in the Fall (when the apples are in season). I only use red delicious apples because of their flavour and because they do not get "too mushy" when baked in the cake.

1 cup vegetable oil (not olive)
2 cups sugar (white, granulated)
3 eggs
1 cup sour cream
3 cups flour (all-purpose)
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup chopped walnuts
3 cups Red Delicious apples, peeled cored and thickly sliced or cut into chunks (about 3-4 apples)
1/2 cup chopped walnuts
2 tablespoons brown sugar
1 teaspoon cinnamon
2 -3 tablespoons powdered sugar (optional)
1 -2 tablespoon milk (or enough milk to make a glaze that you can drizzle over the cake from a teaspoon) (optional)

Steps:

  • In a bowl, sift together the flour, salt, cinnamon, baking soda and baking powder, and set aside.
  • In a small bowl, mix the brown sugar, 1/2 cup nuts and cinnamon together, and set aside (for topping).
  • In a large bowl, with electric mixer, beat oil and sugar together until creamy.
  • Add eggs and beat until mixture is fluffy.
  • Stir in sour cream (by hand).
  • Stir in flour mixture (by hand), batter will be very thick.
  • Add vanilla, apples and 1 cup nuts, and blend well.
  • Pour mixture into a buttered& floured bundt pan (or 9-inch tube pan).
  • Sprinkle the sugar/nut topping mixture over the top of the batter.
  • Bake for about 60 to 75 minutes in a preheated 350°F oven (or until toothpick inserted in center comes out clean).
  • Cool cake in pan, on rack for about 15 minutes.
  • Remove cake from pan, and finish cooling on rack.
  • In a small bowl, mix the powdered sugar together with enough milk to make a glaze that is thin enough to drizzle over the top of the cake (in thin squiggly strands).
  • When cake is completely cooled, drizzle the glaze across the top.

1/2 lemon, juiced

1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar

Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins
Cream Cheese Icing, recipe follows
One 8-ounce package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
  • In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
  • Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
  • Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
  • Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

1 cup heavy cream
4 large Golden Delicious apples (1 3/4 to 2 pounds)
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup sour cream
1/3 cup fresh orange juice
1 tablespoon vanilla extract
1 stick unsalted butter, softened
1 1/2 cups sugar
3 large eggs

Steps:

  • Butter a 9-by-3-inch round cake pan. Make the caramel: Cook the sugar and corn syrup in a large skillet over medium-high heat, stirring occasionally, until the sugar is dissolved and the mixture is dark amber, 7 to 10 minutes.
  • Reduce the heat to medium. Carefully add the cream and 4 tablespoons butter (it will splatter) and cook, stirring, until combined, about 3 minutes.
  • Remove the skillet from the heat and let sit 1 minute. Pour 1 1/2 cups caramel into a glass measuring cup and set aside. Pour the remaining caramel into the prepared pan and set aside until set, about 30 minutes.
  • Cut 3 apples into quarters and cut out the cores with a paring knife. Arrange the pieces skin-side down in the pan (overlapping them slightly) to form a ring about 1/2 inch from the edge. Save any pieces that do not fit for later.
  • Halve the remaining whole apple crosswise. Scoop out the seeds with a melon baller or measuring spoon, leaving the stem on the top half. Chop the bottom and any of the leftover quartered apples into pieces; set aside.
  • Arrange the apple top, stem-side down, in the center of the pan. If the quartered apples shift, just push them back into place.
  • Preheat the oven to 350 degrees F. Make the batter: Whisk the flour, baking powder, baking soda, salt and cinnamon in a medium bowl. In a small bowl, whisk the sour cream, orange juice and vanilla.
  • Using a stand mixer with the paddle attachment, beat the butter and sugar on medium-high speed until light and fluffy, about 5 minutes.
  • Crack the eggs into a small bowl. Slip them into the mixer bowl, one at a time, and beat until the mixture is pale and creamy, about 5 more minutes. Scrape down the bowl and beater with a rubber spatula.
  • With the mixer on low speed, add half of the sour cream mixture, then half of the flour mixture. Repeat. Turn off the mixer and scrape down the bowl with a rubber spatula; finish combining the batter by hand.
  • Spread the batter over the apples in the pan. Top with the chopped apple. Bake on the middle oven rack until the cake is brown on top and springs back when pressed, 1 hour to 1 hour 20 minutes (don't worry if the top is dark). Cool in the pan on a rack.
  • Bring 1 inch of water to a simmer in a skillet wide enough to hold the cake pan. Carefully run a sharp knife around the inside of the pan several times, then rest the pan in the water to soften the caramel, about 8 minutes. Remove the pan from the water and dry.
  • Invert a plate on top of the cake, then flip over the cake and plate. Using pot holders or a towel, wriggle the pan off. Soften the reserved 1 1/2 cups caramel in the microwave, about 2 minutes. Drizzle the cake with some of the caramel. Slice and serve with the rest.

1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground nutmeg
2 teaspoons ground cinnamon
4 tablespoons butter
2 cups half-and-half
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place apples in pie shell. Mix together sugar, flour, nutmeg, and cinnamon. Sprinkle this mixture over apples in shell.
  • Melt the butter stir into the cream; pour liquids over apples.
  • Bake in preheated oven until apples are tender, filling is bubbling, and crust is golden brown, about 35 minutes. Allow to cool to room temperature, and then refrigerate to allow filling to set.

6 ounces cream cheese, softened
1 1/2 cups sugar
3 cups apples (about 3 medium)
1 1/2 cups flour

Steps:

  • Grease 9" springform pan.
  • Preheat oven to 350 deg. F.
  • Cream butter with sugar, then add cream cheese and beat until smooth and creamy. Stir in eggs and vanilla.
  • In small bowl, mix flour bakng powder and salt.
  • Peel and slice apples.
  • In small bowl, mix 1/4 cup sugar with cinnamon.
  • Beat flour mixture into cream cheese mixture.
  • Add cinnamon mixture to apples and stir until coated.
  • Stir apples into batter.
  • Pour all ingredients into greased pan and bake 1 hour.

FILLING:
3 large tart apples, peeled and sliced
1/2 cup sugar

1 cup heavy whipping cream
2 egg yolks
Whipped cream, optional

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. , Arrange apples over crust. Combine the sugar, cinnamon and nutmeg; sprinkle over apples. Place pan on a baking sheet. Bake at 400° for 15 minutes., In a small bowl, beat cream and egg yolks; pour over apples. Bake 25-30 minutes longer or until apples are tender and filling is almost set. It doesn't have pecans and the frosting has considerably less powdered sugar, making the cream cheese flavor that much more intense. For the holidays, this cake can be dressed up by adorning it with holly berries. Randomly place clusters of three of red hot candies. Cut several "leaves" from a Granny Smith apple and place one on either side of the clusters.

Steps:

  • Stir together first 4 ingredients in a large bowl until well blended.
  • Combine flour and next 3 ingredients. Add dry mixture to the butter mixture, stirring until blended. The mixture will be very thick.
  • Stir in apple slices. It hardly seems like enough batter to coat the apples, but bakes up beautifully.
  • Spread batter into greased 9x13 pan and bake at 350 for 45 minutes.
  • For the frosting, beat cream cheese and butter until creamy.
  • Gradually add sugar and salt, beat well.
  • Stir in vanilla and frost the cooled cake.
