BLUEBERRY-APPLE CORDIALS
For those times when you buy as many quarts of berries as you can carry, then don't know what to do with them, preserve them into drinkable form.

Steps:
- Combine blueberries, lemon zest, and brandy in jar and seal tightly. Let sit in a cool dark place, shaking jar daily, until mixture is a deep purple color, about 1 month.
- Strain mixture through cheesecloth into a pitcher or large bowl (do not press on solids or mixture will become cloudy) and add simple syrup to taste. Chill until cold, about 30 minutes. Serve cordial in small glasses.
- To make a spritzer, place 1 oz. cordial in a flute and top off with sparkling wine.

- Strained cordial mixture can be made 6 months ahead. Cover and keep chilled.
APPLE CORDIAL
Save up those discarded apple cores and skins to make this delicious apple cordial.

Steps:
- Place the apples into a large saucepan and add enough water to cover.
- Bring to the boil and allow to simmer uncovered until the apples have broken up and look frothy/pulpy. Add more water as necessary. (This took just over two hours.)
- Place a muslin cloth or clean tea towel over a large bowl, place a strainer on top and pour in the apples. Allow to sit until all the liquid has flowed though to the bowl. Do not squeeze the pulp. (This took about 1 hour.)
- Prepare the jars or bottles by washing with warm soapy water, rinsing and placing in the oven on low (just above 100°C) for at least 30 minutes.
- Transfer the strained liquid to a large pan and add the sugar (adjust the quantity to taste) and tartaric acid. Simmer for 15 minutes.
- Pour into the sterilised jars and seal. Allow to cool then store in the fridge.
- To serve, mix a small amount (to taste) with plain or sparkling water.
APPLE PIE CORDIAL
Now I always have apple pie in my frig. ;-) This cordial is so easy to make and it really does taste like apple pie. I made a few batches around the holidays. I put it in pretty bottles and gave it as hostess gifts. Everyone loves it.

Steps:
- 1. Place apples and cinnamon in a large glass container that has a tight fitting lid.
- 2. Add vodka to apples and cinnamon.
- 3. Make the simple syrup. I combine the water and sugar in a 2 cup pyrex measuring cup and microwave it until the sugar is disolved.
- 4. Let the simple syrup cool and then add to vodka.
- 5. Shake well.
- 6. Let mixture sit for approximately 4 days. Shake the mixture twice daily.
- 7. Remove the apples and cinnamon sticks.
- 8. The cordial needs to be strained to remove all the residue. Coffee maker filters work well. Strain through coffee filters until the cordial is nice and clear.
- 9. NOTE: Be sure to dampen coffee filters first. Place them in a strainer and pour liquid through the filter a little at a time. This is a time consuming process. You may have to strain it 3-4 times. I've actually opened up the filters and lined a small collender with them and then poured the liquid through.
- 10. You can store the cordial in an empty vodka bottle or put it in little bottles to give as gifts. Keep in frig.

- 1. In a large jar with a screw-type lid, combine apple, brandy, sugar and cinnamon; cover tightly. Invert jar. Let stand for 24 hours. Repeat turning process till sugar dissolves. Store in cool, dark place for 4-6 weeks. Strain through cheesecloth into bottles; cover. Makes 2 1/2 cups.

- For a grown-up non-alcoholic drink, mix elderflower cordial with cloudy apple juice. Add a small handful mint leaves, stir well, then pour into a chilled flask.
- At the picnic, pour half glasses of the juice and top up with sparkling water.
APPLE BRANDY CORDIAL
It's apple time! This is wonderful apple brandy. It's quick and easy. The longer it sits, the better. I just strain it through cheesecloth before serving, if it settles again. I have also used coffee filters for a fine strain, it just takes longer. I have some that is 8 years old and it is a beautiful amber color and very smooth.

- I remove the seeds because I think they make it bitter if left in the apple.
- I don't use top shelf brandy, I use a less expensive brandy but not the cheapest either, something in between.
- I use a glass gallon screw-top jar.
- Combine all ingredients and place cover on tightly-invert jar, I always place it in a large pan, just in case it might leak.
- (although, this has never happened) Let jar stand 24 hours, turn jar upright and let stand another 24 hours.
- Repeat process until sugar dissolves.
- Store in a dark, cool place 4-6 weeks.
- Strain through cheesecloth into decanter.
- Note: I always use very dark red sweet apples and I think that it is the dark red skin that gives the brandy a nice color.
