APPLE-CINNAMON MONKEY BREAD

- Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray. Set aside icing tubs from cinnamon rolls. Separate each can of dough into 5 rolls; cut into quarters. Place apple in small bowl. In another small bowl, mix sugar and cinnamon. Add 1/4 cup sugar mixture to apple; toss to coat. Sprinkle half of apple pieces in pan. Roll half of dough pieces in sugar mixture; place on apples in pan. Sprinkle with remaining apple pieces. Roll remaining dough pieces in sugar mixture; place on apples. Pour melted butter over top. Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes; run knife around edge of pan to loosen. Place heatproof serving plate over pan and turn over; remove pan. Cool 10 minutes longer. Drizzle reserved icing over top of bread, allowing some to drizzle down sides. Pull apart to serve; serve warm.

While everyone loves an ooey-gooey chocolate cookie in the afternoon, a morning cookie should be less decadent. One perfect solution: These delicious cookies with oaty goodness, sweetness from apples and maple syrup, and the apple-pie spices cinnamon and nutmeg.

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- Grate the apple, and squeeze out the excess liquid. (This is a great snack for the kids; they love the fresh apple juice!) Mix the grated apple with the applesauce, coconut oil and maple syrup in a large bowl.
- Stir together the flour, oats, cinnamon, baking powder, nutmeg and salt in a medium bowl. Mix the dry ingredients into the wet ingredients until just combined.
- Scoop the batter onto the prepared baking sheet using a 1/4-cup measuring cup. Leave 2 inches between each cookie. Bake until lightly golden, 10 to 13 minutes.

- Heat oven to 200°F. Cut apples lengthwise from stem end through core into 1/4-inch slices. Dip apples into lemon juice to prevent browning; place on wire racks. Carefully place wire racks on oven rack. Bake 4 hours.
- Remove wire racks from oven and place on heatproof surface. Let apples stand about 2 hours or until completely dry. Place dried apples on waxed paper. Coat each side with 2 light coats of spray varnish, following manufacturer's directions.
- Tie 10-inch cinnamon sticks together. Attach to front of wreath with 6 inches of the ribbon. Glue dried apple slices and 3 1/2-inch cinnamon sticks to front and side of wreath, using glue gun. Attach leaves to ribbon on 10-inch cinnamon sticks. Make a bow with the remaining ribbon, and attach to wreath. Attach wire hanger if desired.

- In a medium bowl, combine the granulated sugar, brown sugar, cinnamon, and softened butter and mix until it becomes a spreadable paste.

- Cut the tube in half lengthwise.

- Heat oven to 200°F

APPLE CINNAMON BISCUITS WITH VANILLA GLAZE
Steps:
- Line a baking sheet with parchment paper or a silicone baking mat. Heat the oven to 425 F.
- In a large bowl, combine the flour, sugar, baking powder, salt, nutmeg, and 1 1/2 teaspoons of cinnamon. With a pastry blender or fingers, work in the butter pieces until the mixture resembles fine crumbs. Stir in the finely chopped apples. Combine the buttermilk and 1 teaspoon of vanilla; stir into the first mixture until all ingredients are moistened. Depending on moisture from the apples, a little more buttermilk or flour might be necessary.
- Turn out onto a floured surface and knead a few times, just until a soft cohesive dough has formed. Pat into a circle about 3/4-inch thick and cut out with 2-inch biscuit cutters.
- Arrange on the prepared baking sheet. If desired, brush tops with cream or milk and sprinkle with cinnamon-sugar mixture. Bake for 12 to 14 minutes, until lightly browned. Cool on racks.
- Combine the confectioners' sugar and butter; add the vanilla . Beat in the hot water. a few teaspoons at a time, until the mixture is a good consistency for drizzling. Drizzle over the cooled biscuits.
- Serve the biscuits cool or warm them slightly just before serving.

- Preheat the oven to 190ºC.In a jug, add the milk, sugar and yeast, set aside to foam. Add the egg yolk and butter and mix to combine.In a large bowl combine the flour and salt. Pour the milk mixture over the dry ingredients and stir with a wooden spoon until the dough comes together. Transfer the dough to a lightly floured surface and knead it for five minutes until smooth. Place the dough into a clean, oiled bowl, cover with cling film, and leave it for about an hour or until it has doubled in size.While the dough rises, whisk together the butter, sugar, cinnamon and ground almonds for the filling. Set aside.Knock back the dough with your fist, then on a floured surface, roll the dough to a rectangle of about 50x60cm in size.Leaving a 2cm boarder, spoon the cinnamon filling over the rolled out dough (keep about 1 tbsp of the filling for the end). Then scatter over the apple.Roll up the dough and using a sharp knife, cut the log in half length-wise..Plait the two pieces together, trying to keep the open layers exposed so the cut ends remain on top. - Preheat oven to 375 degrees 1. Remove apple pie filling contents from the can. 2. Blend until smooth with a hand blender. 3. Lay all 16 biscuits out on a flat surface and spread about 1 tbsp apple pie filling across all 16 biscuits. 4. Grease bundt pan. 5. Stack all biscuits into the bundt pan stacked around the center hole of the pan standing on their side. 6. Sprinkle biscuits with 1/4 cup of the cinnamon and sugar mixture 7. Bake for 45-50 minutes until golden brown 8. Make the frosting towards the end of the baking period. 9. Remove from the over and let cool for 10-15 minutes. 10.Run butter knife around outside and inside edges of the bundt pan to ensure bread is loosened from the edges. 11.Turn upside down on serving plate and wiggle to get pan to release. 12. Drizzle and spread frosting across warm biscuits so that the frosting drips down the sides. 13.Sprinkle with 1 tbsp green sugar sprinkles and add maraschino slices. Frosting 1. Melt 4 tbsp butter and add 1 tsp milk, 1/4 tsp vanilla and 1 cup powdered sugar. 2. Blend with an electric hand mixer until smooth.

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine eggs, butter, sugar, salt, yeast mixture and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a very soft dough (dough will be sticky). Do not knead. Cover with plastic wrap; refrigerate overnight., In a small bowl, mix brown sugar and cinnamon. Turn onto a floured surface; divide dough in half. Roll 1 portion into a 16x12-in. rectangle.
