1/3 cup packed brown sugar
1/3 cup whipping cream
1 teaspoon vanilla
4 cups apple cider
Additional whipping cream, whipped
Caramel topping
Ground cinnamon

Steps:

  • In 2-quart saucepan, stir together brown sugar and 1/3 cup whipping cream. Cook over medium heat 2 minutes, stirring constantly, until bubbly. Stir in vanilla and apple cider. Cook 10 minutes, stirring often, until thoroughly heated.
  • Serve cider in mugs. Top with whipped cream, caramel topping and/or cinnamon.

These are soft, chewy and spicy bites, each one filled with the concentrated nuances of fresh apple cider and cultured butter. For the best flavour, I find either direct from the orchard or organic bottled cider best to use in this recipe. Recipe adapted from the blog "Our Best Bites" who in turn modified it from America's Dairy Farmers. I can't stress enough the importance of a GOOD candy thermometer! My first, glass, one broke, and a digital instant read is much easier to use for fine temperature measurement.

2 1/2 cups fresh apple cider (I used Filsinger's filsingersorganic.com)
3 tablespoons fresh gingerroot (cut into 2 slices)
2/3 cup full-fat coconut milk (pick the highest fat concentration you can find, I used Thai Kitchen)
2 teaspoons apple pie spice
1/2 teaspoon sea salt
1/3 cup heavy cream
1/4 cup water
1 cup sugar
1/2 cup dark brown sugar
1/3 cup corn syrup
2 tablespoons maple syrup
1/2 cup unsalted butter, preferably cultured, cubed (or regular unsalted butter)

Steps:

  • Combine apple cider and ginger slices in a pot and boil until the liquid has been reduced to 1/3 cup. Remove ginger, discarding (or eat it if you want -- ) and set aside to cool.
  • Line a 9" square pan with well greased parchment paper, leaving 2" overhang on all sides, and set aside.
  • In a cup or bowl, combine coconut milk, spice, salt and reduced cider and set aside.
  • In a large, heavy bottomed pot, mix heavy cream, water, sugars, corn syrup and maple syrup.
  • Place over medium heat and cook, gently swirling the pan occasionally, until the sugar dissolves.
  • Insert a candy thermometer and continue to cook, stirring occasionally and brushing down sides of the pot with water, until the syrup reaches 235°F.
  • Remove from the heat, and slowly whisk in the spiced cream mixture.
  • Return to low heat and add the cubed butter. Cook, stirring constantly, until the mixture is homogenous.
  • Re-insert the candy thermometer and increase the heat to medium.
  • Cook, stirring almost constantly, until the temperature measures 252°F
  • Pour the caramel immediately into the lined pan, and cool at room temperature at least 4 hours. Place in the refrigerator a further 2 hours, until firm.
  • Unmould and cut into 64 squares, wrapping each in heavy duty wax paper (I used wax paper on the inside and foil on the outside so they'd stay closed.
  • Store in an airtight container up to 2 weeks, or in the fridge for 1 month.

3 cups apple cider
1/2 cup water
1/2 cup heavy cream
1 tablespoon brown sugar

Steps:

  • First, bring the cream and brown sugar to a boil in a medium saucepan over medium heat. Stir in the cider and the water and raise the heat to medium high, heating just until the cider begins to steam, about 4 minutes.
  • Divide among 4 mugs, top each one with 2 tablespoons of caramel whipped cream (recipe follows) and serve immediately.
  • Caramel Whipped Cream: In a small chilled bowl, whip the heavy cream with the brown sugar until soft peaks form.

2 cups fresh apple cider (non-alcoholic)
4 tablespoons unsalted butter
1/2 cup granulated sugar
1/4 cup light brown sugar
3 tablespoons heavy cream
1/4 teaspoon ground cinnamon
3/4 teaspoon kosher salt (plus more for garnish)

Steps:

  • In a 2-quart saucepan, boil the apple cider until it reduces to ¼ cup. It should take about 30 minutes on high.
  • Meanwhile, line a 9 x 5 x 3-inch loaf pan with parchment paper, and spray it with cooking spray.
  • Once the cider is reduced, lower the heat and add the butter, sugars, and heavy cream. Raise the heat and bring the mixture to 255-degrees Farenheit over medium-high heat. Use a candy thermometer to ensure the proper temperature.
  • Immediately stir in the cinnamon and salt. Then, pour the mixture into the prepared loaf pan.
  • Let the mixture chill for 1 hour in the fridge. Slice it with a knife into bite-sized pieces.

It can be difficult to guess when it’s at the right weight, so occasionally strain the syrup into a measuring cup on the scale and, if needed, return the syrup and strained spices to the pot and continue to reduce. Keep a careful watch on the syrup towards the end of the reducing.
  • Pour the syrup into a clean 2-quart (1.9 liter) saucepan and add the butter, both sugars, and the crème fraîche. Place the pan over low heat and stir frequently until the butter melts and the sugar dissolves. Add the thermometer to the pan, bring to a boil, and cook at a steady, even pace, stirring from time to time, until the syrup reaches 260ºF (127°C), 20 to 30 minutes. (The syrup may hover around 220°F for a while but it will eventually shoot up to 260°F.) Do not be tempted to increase the heat under the pan to hasten the process or you’ll scorch the syrup and your caramels will have a lingering burnt taste.
  • Slide the pan off the heat, remove the thermometer, add the sea salt, and stir to combine with a rubber spatula. Immediately pour the syrup into the prepared pan and let it cool to room temperature, about 2 hours.

  • Line a 9-by-13-inch rimmed pan with foil and coat the foil with nonstick cooking spray. In a medium saucepan, combine the heavy cream and condensed milk and bring to a simmer over moderate heat; keep the mixture warm over low heat.
  • In another large saucepan, combine the sugar with the reduced apple cider, corn syrup, water and salt and bring to a boil. Simmer over moderate heat until the sugar dissolves, about 5 minutes. Carefully whisk in the butter until melted. Gradually whisk in the warm cream mixture until incorporated. Cook over moderately low heat, stirring frequently, until a golden caramel forms and the temperature reaches 245° on a candy thermometer, about 45 minutes. Stir in the cinnamon, allspice and cloves and scrape the caramel into the prepared pan. Let cool completely, then refrigerate the caramel overnight.
  • Lightly brush a sheet of parchment paper with oil. Invert the caramel onto the parchment and peel off the foil. Using a sharp knife, cut the caramel into 1-inch-wide strips, then cut the block crosswise into 1/2-inch rectangles. Wrap each caramel in a square of parchment paper or a candy wrapper and twist the ends to seal. Serve or pack the caramels into boxes.
