Classic Bacon and Egg Quiche image

This is a classic bacon and egg quiche in the Alsatian manner (cheese or stewed onions are sometimes added, though not traditional). It is baked in a nine-and-a-half-inch fluted French tart pan, the sort with the removable bottom. The resulting quiche, as opposed to those baked in a deeper pie pan, stands only one inch high, and their relatively short baking time ensures a creamy, unctuous texture.

Short-crust dough (see recipe), rolled and chilled in a 9 1/2-inch tart pan
3 large eggs
3/4 cup crème fraîche
1/2 cup milk
1/2 teaspoon kosher salt
Black pepper, to taste
About 1/8 teaspoon grated nutmeg
Pinch cayenne
1/4 pound thick-cut bacon, sliced into 1/4-inch lardons
2 ounces grated Gruyère, optional

Steps:

  • Bake chilled dough in a 9 1/2-inch tart pan at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
  • Make the custard: in mixing bowl, beat eggs. Whisk in crème fraîche, milk, salt, pepper, nutmeg and cayenne. Set aside.
  • Put bacon in small saucepan, cover with water and bring to a simmer over medium heat. Simmer for about 5 minutes or until tender, then drain and cool slightly.
  • Set tart pan on a baking sheet. Sprinkle bacon evenly over bottom of pastry. Add Gruyère if using. Beat custard once more and carefully pour into tart shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

This probably has to be the easiest quiche ever! I'm not sure where the recipe came from, but mum would make it all the time and it's just so nice as it isn't too heavy. If desired, you could add 1 cup grated zucchini (excess moisture squeezed out) or a can of creamed corn to the mixture or add some tomato slices to the top of the quiche before baking.

Steps:

  • Heat oven to 425 degrees.
  • Unfold pie crust and place into 9 inch pie pan.
  • Press firmly into pie pan and bake for 8 minutes.
  • set aside.
  • Prepare filling--------------.
  • In a large skillet, cook bacon 5-6 minutes until crisp and drain on paper towel.
  • In a small bowl, beat eggs, add half and half and nutmeg and blend well.
  • Crumble bacon over baked pie crust and sprinkle cheese over crumbled bacon.

Steps:

  • Preheat the oven to 400 degrees F. Unroll the pie crust and fit it into a 9-inch deep-dish pie plate.
  • Arrange 6 strips of the bacon one above the other in a square on a baking sheet; the edges should touch but not overlap. Working with one of the remaining strips at a time, weave them over and under to form a lattice.
  • Whisk the Cheddar, milk, eggs, broccoli, 1 teaspoon salt and a few grinds of pepper in a medium bowl until well combined. Pour into the pie crust. 1 cup diced Canadian bacon or 1 cup lean ham
1/2 cup red bell pepper, finely diced

2 whole eggs
1/2 cup grated parmesan cheese
1/2 teaspoon dried oregano

Steps:

  • Preheat oven to 350°F.
  • Spray a 9-inch pie dish with vegetable oil spray.
  • With a rolling pin, flatten each slice of bread on a cutting board or flat surface.
  • Cut 5 slices in half vertically (from top crust to bottom crust).
  • Cut a 3-inch circle from the remaining slice with a round cookie cutter or a knife (this will go in the center of the crust).
  • Place slices of bread in the bottom of the pie dish, slightly overlapping each piece to form a crust, gently pressing in the bottom and partially up the side of the pie dish.

220g plain flour
1/2 tsp salt
110g chilled pastry butter, cubed
1 large egg yolk
2-3 tbsp water
1/2 tbsp dijon mustard
200g bacon lardons or chopped streaky bacon
1 medium onion, chopped
1 tsp italian herbs
325ml light single cream
3 medium eggs
170g gruyere cheese
freshly ground black pepper

Steps:

  • place flour into a bowl and stir in the salt, rub in the butter quickly until it resembles breadcrumbs, then using a metal knife stir in the egg yolk and water to form a dough. wrap in cling film and chill for 30-45minutes.
  • pre-heat oven to 200C/gas 6, roll out the pastry and line a lightly greased 23cm/9in loose bottomed quiche tin. trim the edges leaving a slight overlap and line the case with parchment/greaseproof paper and fill with baking beans, chill for 10minutes then bake blind for 12-15minutes.
  • Meanwhile, fry the bacon in a little oil until crisp, add the onions to the pan and fry gently until soft but not brown, about 8-10mins. Add the herbs and stir through, drain off the fat and set aside using a little kitchen paper to soak up any more excess fat.
  • remove pastry case from the oven and cool slightly for 5 mins, then remove the bsking beans and paper, pierce the base all over with a fork and brush with the dijon mustard. bake for a further 6 mins. Remove the case from the oven and turn the oven down to 180C/gas 4. When cool enough, trim the edges with a knife.
  • Beat the cream with the eggs and season with plently of pepper. Sprinkle the onions and bacon onto the pastry case, then the cheese and pour over the cream and egg mixture. Bake in the centre of the oven for 40 mins or until cooked through and brown.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2 egg yolks
1 cup heavy cream
¾ cup milk
1 teaspoon chopped fresh thyme
6 ounces shredded Gruyere cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Roll pie dough to fit a 9 inch pie plate. Place bottom crust in pie plate and chill for at least 20 minutes before baking. Line the chilled pie crust with foil and fill halfway up with dried beans, rice, or baking weights. Bake in the preheated oven for 7 minutes. Remove foil and weights and bake until golden brown, about 5 minutes.
  • Reduce oven to 325 degrees F (165 degrees C).
