- Wash cucumbers. Cut 1/16-inch slices off blossom ends and discard, but leave ¼ inch of stem attached. Place cucumbers in large container and cover with boiling water.
- Six to 8 hours later, and on the second day, drain and cover with 6 US quarts (6,000 ml) of fresh boiling water containing ¼ cup salt. On the third day, drain and prick cucumbers with a table fork.
- Combine and bring to boil 3 cups vinegar, 3 cups sugar, turmeric, and spices. Pour over cucumbers. Six to 8 hours later, drain the pickling syrup into a saucepan.
- Add 2 cups each of sugar and vinegar to the syrup and reheat to boil. Pour over pickles. On the fourth day, drain the syrup into a saucepan. Add another 2 cups sugar and 1 cup vinegar.
- Heat to boiling and pour over pickles. Six to 8 hours later, drain the pickling syrup into a saucepan. Add 1 cup sugar and 2 teaspoons vanilla to syrup and heat to boiling.
- Fill sterile pint jars with pickles and cover with hot syrup, leaving ½-inch headspace.
- Adjust lids and process using the low-temperature pasteurization treatment. This results in a better product texture, but must be carefully managed to avoid possible spoilage. Place jars in a canner filled halfway with warm (120 to 140 °F) water. Then, add hot water to a level 1 inch (2.5 cm) above jars. Heat the water enough to maintain 180 to 185 °F (82 to 85 °C) water temperature for 30 minutes. Check with a candy or jelly thermometer to be certain that the water temperature is at least 180 °F (82 °C) during the entire 30 minutes. Temperatures higher than 185 °F (85 °C) may cause unnecessary softening of pickles.

- Day 1: Clean cucumbers and soak in ice cold water bath for 30 minutes. Drain cucumbers, trim ends, then cut into thick chunks. Pack cucumbers in a gallon sized food safe jar. Cover with boiling water. Let sit 24 hours.
- Day 2: Drain water from cucumber slices. Add salt. Pour boiling water over top of cucumbers and salt. Cover and let sit 24 hours.
- Day 3: Drain cucumbers. Add alum. Pour boiling water over cucumbers to cover. Cover and let sit 24 hours.
- Day 4: Drain cucumbers. Place pickling spice in cheesecloth tied with string to form purse. Place in jar with cucumbers. Bring cider vinegar to a boil. Pour over cucumbers.
- Day 5 and Day 6: Do nothing.
- Day 7: Drain cucumbers reserving juice. Remove cheesecloth with pickling spices and discard. Place cucumbers in large mixing bowl. Pour sugar over top of cucumbers and toss to coat. Let sit at least 2 hours.
- Heat reserved cucumber juice until scalding. Pack pickles into hot sterilized jars. Pour hot cucumber juice over top of pickles. Cover and seal.

SWEET PICKLES

- Slice cucumbers, by hand or (very carefully) with mandolin
- Add cucumbers and salt to bowl. Toss to coat all cucumber slices with salt.
- Cover bowl and stand on counter, or in refrigerator overnight.
- Next morning, place in bowl and rinse salt off of cucumbers. Rinse the cucumbers well or they will be salty! Allow to drain.
- In a sauce pan, add sugar, vinegar, water and spices. Bring to boil, stirring until sugar dissolves.
- Reduce heat and high simmer or low boil, for about 30 minutes.
- Sterilize jars in canning pot.
- Remove hot jars, one at a time and drain water. Cut open black tea bag and add 1 bag per pint jar.
- Pack cucumber slices into hot jars, within a 1/2 inch of top of jar.
- Pour hot canning liquid into jar leaving ½" headspace.
- Wipe rim of jar with wet towel. Attach hot lids and tighten bands finger tight. Return to canning pot.
- Process jars for 15 minutes per pint, adjusting for altitude. Allow to rest in hot water 5 minutes after turning heat off.
- Remove jars from canning pot and let sit on counter overnight.
- Check seal in the morning, if lids flex up and down, when pressed in center, jar is not properly sealed. Store any that didn't seal in refrigerator.

QUICK SWEET PICKLES
Steps:
- Wash and dry the cucumbers. Using a sharp knife or a mandolin, slice the cucumbers thinly and place in a colander. Sprinkle with salt and toss to coat. Place the colander over a bowl and allow it to sit, covered, for about 1 hour. Rinse off the salt and dry the cucumber slices well. Place them into a sterilized quart jar.
- In a small saucepan add the remaining ingredients. Stir to dissolve sugar and bring to a boil. Remove from heat and allow it to cool. Pour the brine over the cucumbers in jar. Cover and refrigerate at least 4 hours, preferably overnight. Will keep, refrigerated, for about 2 weeks.

- 1) Add the sweet and sour pickled gherkins to a blender.
- 2) Blend for just a few seconds until you get a rough crumble. Then add the caster sugar and ground cinnamon.
- 3) Pulse again for another 2 to 3 seconds until you end up with a lightly coarse gherkin mixture. Remove the blade of your blender if you can or pour the blended gherkins in a mixing bowl. Then add the pickled mustard seeds, mustard, vinegar and onion powder. Season with a little pepper to taste.
- 4) Stir the sweet pickle relish well. Cover and let the relish marinate at room temperature for an hour. Then check the seasoning again and add extra cinnamon, sugar, onion powder or pepper if necessary. Once it's seasoned enough, then pour the sweet pickle relish in a clean jar. You can store the sweet pickle relish in the fridge for up to 2 weeks.

EASY SWEET PICKLES
I make a few jars at a time. This recipe is worth the 7 day wait, so plan ahead if making this recipe. These pickles remind me of my grandmothers 14-day pickles. I have tried this recipe with 6 gloves and the taste just isn't the same. If you don't care for gloves 6 cloves might be the route you take. Also, powdered cinnamon can be used in place of the cinnamon sticks. If you want to add the powder omit the cinnamon sticks and add 1/2 teaspoon of cinnamon. I have only used the cinnamon sticks. These pickles don't last long in this house and I hope they won't in yours either.

- Drain pickles and reserve the liquid.
- Cut pickles into 1 inch chunks, return to the jar pickles came inches.
- Add the vinegar, whole cloves, and cinnamon to the jar of pickles.

- Cut or slice up the veg into fine or chunky pieces, depending on what you're looking for. I quite like purposely cutting each veg differently - some diced, some into erratic chunks, some sliced delicately and some more thickly.

- Combine cucumbers, onions, bell pepper, and pickling salt in large heat-proof bowl, preferably one with a lid. Stir and let sit on the counter for 1 hour. Drain. (If you don't own a mandoline, I highly recommend this one. It works so great for creating thin, even slices. Use it for the cucumbers, onions, and bell pepper in this recipe.)
- In a medium saucepan over medium-high heat, heat the sugar, vinegar, and celery seed. Stir occasionally. When the sugar has completely melted, pour the hot mixture over the cucumbers. Add the dill. Let cool to room temperature. Place a lid on the bowl and refrigerate for 2 days before eating. Eat straight from the bowl, or transfer to jars if desired. You could also transfer the room temperature mixture to jars before refrigerating for 2 days. Pickles keep very well for a few weeks.

- Wash the cucumbers. Slice off about ⅛-inch from blossom end; slice all the cucumbers crosswise and place the slices into a large bowl.
- When the cucumbers are done soaking, rinse them well in cool water. The best way to do this is to dump the cucumbers into the sink with the drain plugged; run cold water in the sink and gently toss the cucumbers around in the cold water a few times. Drain, while using the spray nozzle to spray the cucumbers as the water drains out. Do this at least 3 times.
- When the lime has been rinsed off of the cucumbers, clean out the crock or container used to soak the cucumbers well and make sure it is free of lime. Add the cucumbers back into the crock and soak the cucumbers 3 more hours in ice water.
