5 apple - peeled, cored and sliced
2 cups all-purpose flour
½ teaspoon salt
4 teaspoons ground cinnamon
4 teaspoons baking powder
4 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup chopped walnuts
4 teaspoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) lightly grease and flour a 9x13 inch pan.
  • Sift together flour, salt, cinnamon and baking powder. Set aside.
  • In a large bowl, beat eggs and sugar for 15 minutes on high speed with an electric mixer. Add oil and blend in.
  • Add four mixture and mix well. Add vanilla. Fold in apples and nuts. Pour batter into 9x13 inch pan.
  • In a small bowl, mix 4 teaspoons sugar with 1 teaspoon cinnamon. Sprinkle over cake.
  • Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes or until a toothpick inserted into center of cake comes out clean.

Nothing says "fall" quite like an apple cider doughnut, and with this easy bundt, you get a crowd-friendly version of everyone's favorite seasonal treat. The yellow cake batter gets an apple infusion with cider and shredded apples before being baked and finished with a double sprinkle of cinnamon sugar.

1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup apple cider
1/2 cup butter, melted
4 eggs
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 cup coarsely shredded peeled tart apples (2 medium)
3 tablespoons butter, melted
1/4 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.
  • In large bowl, beat cake mix, apple cider, 1/2 cup melted butter, the eggs, 2 teaspoons cinnamon and the nutmeg with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in apples. Pour into pan.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven. Let stand 20 minutes; run metal spatula around outer and inside edges of pan to loosen cake. Remove from pan to cooling rack; place cooling rack over waxed paper.
  • Brush top and sides of cake with 3 tablespoons melted butter. In small bowl, mix sugar and 1 teaspoon cinnamon until blended. Press 2 tablespoons cinnamon mixture up side and top of cake with hand. Let stand 20 minutes. Repeat with remaining cinnamon mixture. Cool completely, about 1 hour.
  • Store loosely covered at room temperature.

3 eggs
2 cups white sugar
1 cup vegetable oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped walnuts or 1 cup pecans
3 cups diced apples
1 cup raisins (optional)
1 (8 ounce) package cream cheese, softened
1/4 cup butter, melted
2 cups confectioners' sugar
1 teaspoon lemon juice
1 lemon, zest from (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13 inch pan. Spread apples evenly over the bottom of the pan.
  • Beat eggs with mixer until thick and light. Combine sugar and oil and add to eggs.
  • Stir together flour, cinnamon, soda and salt. Add to egg mixture and beat inches stir in nuts, raisins and vanilla. Batter will be very thick.
  • Spread batter over apples in the pan. Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and cool. Spread with Cream Cheese Icing.
  • To make Cream Cheese Icing: Beat cream cheese until fluffy. Beat in 1/4 cup melted butter, and then beat in confectioner's sugar, zest from 1 lemon (optional) and lemon juice.
  • Spread over cooled cake. Refrigerate.

1 (18 1/4 ounce) box caramel flavored cake mix
6 eggs
2/3 cup oil
1 cup apple cider
2 teaspoons pumpkin pie spice
1 cup pumpkin pie filling
1 teaspoon rum extract
1 teaspoon coconut extract
1 teaspoon hazelnut extract
3/4 cup English toffee bits
3 cups powdered sugar
1/4 cup apple cider
3 tablespoons butter
1/2 teaspoon rum extract
1/4 cup English toffee bits

Steps:

  • Preheat oven to 350°F.
  • Butter and flour a 12-cup Bundt pan.
  • In a mixing bowl combine eggs, oil, pumpkin, extracts and pie spice and cider. Mix well.
  • Add the cake mixes and beat on low speed until well blended.
  • Stir in the heath bits.
  • Pour into the prepared pan.
  • Bake 55-65 minutes until tester comes out clean.
  • Cool for 10 minutes on rack.
  • Invert to cool. It can still be warm to glaze. Place the cake, on the rack over a cookie sheet.
  • Glaze: In a small sauce pan brown the butter over med. heat.
  • Add the remaining ingredients and stir until sugar is melted and all is combined well.
  • Drizzle slowly over the cake. This sets up very fast.
  • Scrape the extra glaze that runs off back into the saucepan.
  • Reheat and drizzle a second time.
  • Sprinkle right away with more (1/4 cup) Heath bits.
  • Note: You can substitute the Caramel Cake mix with Spice cake mix.
