CARAMEL APPLE CHEESECAKE QUESADILLAS

In just 10 minutes, you can transform a handful of ingredients into these luxurious Caramel Apple Cheesecake Quesadillas. A perfect fall snack or dessert!

Number Of Ingredients 8

4 Flatout Bread Healthy Grain Wraps or other tortillas
1 Granny Smith Apple, thinly sliced
8 ounces cream cheese
1/4 cup brown sugar
1 teaspoon cinnamon
Pinch Kosher salt
1/4 cup cinnamon sugar
Caramel sauce

Steps:

  • Place cream cheese in a microwave safe bowl and microwave in 10 second intervals until softened. Stir in brown sugar, cinnamon, and a pinch of Kosher salt.
  • Spread 1/4 of the cheesecake mixture on half of each wrap. Top with apple slices, and sprinkle with cinnamon sugar. Fold over each wrap, spray the outside of your quesadilla lightly with nonstick cooking spray, and sprinkle with cinnamon sugar. This will give you a golden brown caramelized crust for your quesadillas!
  • Heat a large skillet over medium/medium-high heat. Working one at a time, spray skillet with nonstick cooking spray and cook quesadillas for about 1 minute per side, until the exterior is golden brown and the goodness inside is all ooey gooey. Drizzle with caramel sauce and sprinkle with Kosher salt. Devour!

1 large (10 inch burrito size) flour tortilla
4 ounces cream cheese, softened
1 tablespoon sugar
1/4 teaspoon vanilla
1/8 teaspoon cinnamon
1/2 small apple, thinly sliced
Butter
Cinnamon
Sugar

Steps:

  • Heat a griddle or pan to medium heat. Mix cream cheese, sugar, vanilla, and cinnamon with a hand mixer until smooth and creamy. Spread over 1/2 of the tortilla, and fold the other 1/2 of the tortilla over. Cook the quesadilla in the pan until golden on both sides. Brush both sides of hot quesadilla with butter and sprinkle with cinnamon & sugar mixture.

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

1/3 cup sugar
1/3 cup butter
1 tablespoon shortening
1/4 teaspoon vanilla
1 cup all-purpose flour
1/8 teaspoon salt
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
4 golden delicious apples, peeled cored and sliced
1/3 cup sugar
1 teaspoon ground cinnamon
1/4 cup sliced almonds

Steps:

  • Crust: Beat and combine the sugar, butter and shortening.
  • Add the vanilla, flour and salt till crumbly.
  • Pat into 10" springform pan and set aside.
  • Filling: Beat together the cream cheese sugar and vanilla till fluffy.
  • Add the eggs.
  • Pour into crust.
  • Topping: Place apples in pan, cover with foil and bake for 15 minutes at 400 degrees.
  • Allow to cool then pour onto cream cheese filling, spreading evenly.
  • Combine the sugar& cinnamon and sprinkle on top of apples.
  • Top with the almonds.
  • Bake at 400 degrees for 40 minutes or till golden brown.
  • Cover and chill 4-24 hours.

1 apple, peeled and diced
2 flour tortillas
2 slices fat-free American cheese
1/4 cup Splenda sugar substitute (or other sweetner)
2 tablespoons cinnamon

Steps:

  • Peel and dice apple.
  • Spray frying pan with cooking spray and saute apple until lightly browned (about 4-5 minutes) Remove apple from pan and re-spray.
  • Place in pan 1 flour tortilla and scoop 1/2 apple, 1/2 Splenda, 1/2 cinnamon, and 1 cheese slice in center.
  • Cover pan and cook on medium heat until underside is golden and cheese melts.
  • (about 4-5 minutes) Fold tortilla in half and remove to serving plate.
  • Repeat process for second tortilla.
  • Serve warm with fat free whipped topping.
  • Enjoy!

You can change the fruit filling and cheeses to suit your mood or use fresh fruit in season.If using fresh fruit, you may have to cook atop the stove for a few minutes to help break down the fruit. Add 1/4 C sugar for each 2 C fruit. You may end up with extra fruit, so make 2 Quesadillas. Use cream cheese with cherry and top with sugar. Use provolone with blueberry or blue cheese with blueberry. Very inexpensive, too.

1 tablespoon butter
2 large flour tortillas (12 inch)
1 (21 ounce) can apple pie filling
1/2 cup shredded cheddar cheese (I like extra sharp)
1 tablespoon sugar
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 375.
  • Spray iron skillet or cookie sheet with cooking spray.
  • Microwave butter, cover with a paper towl and microwave about 15 seconds until melted.
  • Place 1 tortilla in skillet or cookie sheet.
  • Spoon fruit onto middle of tortilla leaving about 1/2 inch all around.
  • Sprinkle with cheese.
  • Place the second tortilla on top.
  • Drizzle melted butter evenly over the crust.
  • Mix the sugar and cinnamon (if apples are used) in a small bowl.
  • Sprinkle over tortilla.
  • Bake about 8-10 minutes until just beginning to brown.
  • Remove from oven and cut into 4 wedges.
  • Serve with vanilla ice cream!

4 flour tortillas (6-8-inch)
8 ounces cream cheese, soft
2 tablespoons sugar
1/4 teaspoon vanilla
1/4 cinnamon
1 apple, sliced thinly
butter
cinnamon-sugar mixture

Steps:

  • Using a fork in a small bowl cream the cream cheese, sugar, vanilla and cinnamon together.
  • Either spread the cream cheese mixture on half of each tortilla or on all of 2 tortillas.
  • Place a layer of apples and either fold over each tortilla or simply place a 2nd tortilla on top of the whole ones.
  • Heat a fry pan or griddle. Melt just a little butter. Fry both sides of the tortillas until golden brown.
  • Place on a plate and sprinkle with cinnamon and sugar. Cut and serve.
  • If you want to stretch the recipe, spread the cream cheese mix thinner on the tortilla.
