APPLE, SWEET POTATO, AND SAUSAGE BREAKFAST CASSEROLE

Steps:
- Pre-heat the oven to 400 degrees and butter a 9x13 casserole dish.
- Warm a large skillet over medium-high heat, melt the butter, and brown the sausage. Use a slotted spoon to scoop the browned sausage out of the skillet, leaving the fat behind to cook the veggies in.
- Add the sweet potato to the fat in the skillet over medium-high heat, and cook for a few minutes. Sweet potato takes a bit longer to cook than the other veggies, so don't add the others just yet.
- Once the sweet potato has cooked for a few minutes, add the onion, pepper, apples, sea salt, thyme, and pepper, and cook over medium-high heat, stirring occasionally. Cook the veggies for about 7-10 minutes until soft and sweet.
- Add the garlic and spinach to the skillet, stir, and cook for one minute. Turn the skillet off, and stir in cooked sausage and the shredded cheese.
- Dump the cooked veggie/sausage mixture from the skillet into the buttered casserole dish, and spread the mixture out evenly. Whisk the eggs and milk in a medium mixing bowl and pour over the veggie/sausage mixture.
- Bake the breakfast casserole for 25-30 minutes at 400 degrees until the eggs are set, and the top is a pretty golden brown. Let the casserole rest for 5-10 minutes before cutting.

- Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.
- Place sweet potatoes and water in a microwaveable bowl. Cover tightly and microwave on High until tender, about 3 minutes. Drain and let cool, about 10 minutes.
- Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add apple, sausage and onion; cook, stirring often, until the sausage browns and the apple softens, about 6 minutes. Add garlic and thyme; cook, stirring constantly, until fragrant, about 1 minute. Remove from heat and let cool in the pan, about 10 minutes.
- Combine the cooled sweet potatoes and the sausage mixture in a large bowl; add bread and Gruyère and toss gently. Whisk eggs, milk, mustard and pepper together in a medium bowl. Pour over the bread mixture and toss gently. Transfer to the prepared baking dish and cover with foil. Bake until the custard is mostly set, about 30 minutes. Remove the foil and continue to bake until the topping is golden brown and the custard is set, about 20 more minutes. Let stand for 10 minutes before slicing. Garnish with thyme leaves, if desired.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

Steps:
- Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
- Saute potatos in about 2-3 T butter until tender. Set aside.
- Saute apples and onions in remaining 1 T butter until tender.
- Combine cider vinegar, sugar, and parsley.
- Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.
- Warm over medium heat until warmed through.
- Serve.

- Preheat oven to 400 with rack on lower middle position. Lightly grease a 9x13 inch baking dish and set aside.
- On a large baking sheet, combine sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper and toss to coat well. Bake in a single, even layer for 20 minutes or until soft.
- Meanwhile, heat remaining 2 tablespoons olive oil in a large skillet over medium high heat. Add onions and garlic and stir 2 to 3 minutes or until translucent. Add peppers and stir 1 more minute. Transfer mixture to prepared 9xx13 inch baking dish.
- In the same skillet over medium high heat, cook and break apart sausage with spatula until cooked through. Drain and add to baking dish with veggie mixture. Add roasted sweet potatoes, chopped kale or spinach, and 1/4 teaspoon freshly ground black pepper to the mixture in baking dish. Gently toss to combine all ingredients well.
- In a bowl, gently whisk together the eggs and 1/2 cup of non dairy milk until well combined. Pour evenly over the sausage/potato mixture in baking dish. Bake uncovered about 25 to 30 minutes or just until eggs are set in center.
- Dish can be prepared the night before. Cover tightly and chill if you do prepare the night before and then bake uncovered in preheated oven for up to an hour, if baking straight from the fridge.

- Preheat oven to 375.
- Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
- Place potatoes, onions and apples into ziploc bag.
- Pour in olive oil and all seasoning (more or less of these taste.).
- Shake bag until everything is coated well.
- Pour into 13x9 in pan and toss with sausage.
- Bake uncovered in 375 degree oven for 1-1 1/2 hours until sausage is browned and potatoes are tender.

- Preheat oven to 400. Lightly grease a 9x13 inch baking dish (I used my butter wrapper).
- Combine sweet potatoes with 2 tablespoons olive oil, a teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper on a large baking sheet in a single even layer, toss to coat well.
- Bake in a preheated oven until slightly browned, about 30 minutes.
- Meanwhile, heat remaining tablespoon oil in a large skillet over medium-high heat. Add onion and red pepper and cook and stir until translucent, 2 to 3 minutes. ADd garlic and stir for 1 more minute. Transfer mixture to a medium mixing bowl.
- Heat the same skillet over medium-high heat. Add sausage and cook. Break apart with a spatula until cooked through, 5 to 7 minutes. Drain sausage and add to the bowl with the veggie mixture. Add spinach, mozzarella cheese, and rosemary to the mixture.
- Gently whisk eggs, milk, and remaining kosher salt and black peper together in a bowl until well combined. Pour over the sausage and veggie mixture and gently toss to combine.
- Place roasted potatoes in the bottom of the prepared baking dish. Pour the vveggie and sausage mixture evenly over top.
- Bake, uncovered, in a preheated oven until the eggs are set in the center, about 50 minutes. If the egg mixture starts to brown, put a loose sheet of aluminum foil over the baking dish to cover it.

- Preheat the oven to 200 degrees F (95 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl and set aside.
