Smoked Trout and Dill Pate image

A very easy pate to make, Can be served as one large pate or in individual ramekins. Fantastic with melba toasts or crackers. Great served in individual tart shells. topped with a sprig of dill as garnish.

1 kg smoked trout (2 lb)
300 g butter, softened (may vary dependng on the weight of the fish flesh)
2 tablespoons chopped fresh dill
2 teaspoons lemon juice
3 drops Tabasco sauce or 3 drops chili sauce

Steps:

  • Remove the fish flesh from the skin and bones.
  • Weigh the flesh and allow for 1/2 the amount of butter.( I cut back about 1/3 on the butter).
  • Mash the trout flesh and beat in all remaining ingredients. Mix until well combined.
  • Spoon into a large serving dish or individual ramekins.
  • Fantastic spread into small tart cases.

150g smoked salmon, trimmings are fine
200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon
small bunch dill or chives, chopped
breadsticks or granary toast, to serve

Steps:

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. Add the smoked salmon and pulse a few times if you want the paté chunky or blitz some more if you want the paté smooth and pink.
  • Stir the herbs into the paté and spoon into a large or four smaller bowls and serve with warm toast as a starter or with breadsticks as a dip.

This is core or 2.5 points per serving. I have made with smoked salmon and smoked trout and both taste good. This is a really great recipe to use either as a starter to take have for lunch on some rye crispbreads, etc. Please note that this really needs to chill for 12 hours to be at it's best, but I have eaten it straight away in the past and it's still good.

150 g smoked salmon, pieces (or smoked trout)
1 lemon, zest of, finely grated
1 1/2 tablespoons fresh lemon juice
1 tablespoon horseradish sauce
200 g low-fat cream cheese
15 g fresh dill
ground black pepper

Steps:

  • Method 1:.
  • Place all ingredients (except the pepper) in a food processor and process until everything is well combined but NOT completely smooth.
  • Season with ground black pepper to taste.
  • Cover and chill for 12 hours.
  • Method 2:.
  • Cut the salmon into small pieces.
  • Mix all ingredients (except the pepper) together well in a bowl.
  • Season with ground black pepper to taste.
  • Cover and chill for 12 hours.

This is one of Russell's favourite dips he makes when we are having a get together with friends. It's really simple to make.

1 (250 g) container spreadable cream cheese
1 whole smoked trout, skinned and deboned (or you could use packaged fillets I guess)
1/4 cup low-fat sour cream
2 chopped green onions
2 teaspoons prepared horseradish
1 tablespoon lemon juice
fresh ground black pepper
1 tablespoon dill or 1 tablespoon parsley, roughly chopped

Steps:

  • Reserve about 1/4 of the fish meat and flake it roughly.
  • Place the remaining ingredients except the herbs in a food processor and work until smooth.
  • Check for seasonings and maybe add a little more lemon juice.
  • Add the herbs and pulse briefly.
  • Scrape into a bowl, fold through the reserved fish and refrigerate covered until required.
  • Spoon into serving dishes and serve with turkish bread, crackers and/or fresh veggie sticks.

100g gravadlax, or use 200g smoked salmon
100g smoked salmon
150g cooked prawns, shells on
crackers, sliced sourdough, sliced rye bread or shop-bought blinis, lemon wedges and caperberries, to serve
120g hot smoked trout
100g full-fat soft cheese
2 tsp capers, drained
1⁄2 tsp Dijon mustard
1 lemon, juiced
100ml soured cream
1 tbsp mayonnaise
1⁄2 small red onion, finely chopped
1 tbsp chopped dill, plus extra to serve
1⁄2 lemon, juiced
1 tsp hot sauce
250g cooked prawns, shelled

Steps:

  • For the pâté, blitz the trout, soft cheese, capers and mustard in a food processor, then season with salt, pepper and the lemon juice. Will keep covered in the fridge for up to two days. For the prawns, mix the soured cream, mayo, red onion, dill, lemon juice and hot sauce in a bowl, then toss in the prawns to coat. Will keep covered in the fridge for a day.
  • Spoon the pâté into a small bowl and the prawns into another. Place these on a large platter with the gravadlax, smoked salmon, whole prawns, crackers, bread, blinis, lemon wedges and caperberries. Sprinkle over dill fronds, then serve.

5 ounces smoked, boneless trout fillets, checked for bones and crumbled
6 ounces cream cheese, room temperature
4 teaspoons fresh squeezed lemon juice
1 tablespoon chopped fresh dill
2 teaspoons chopped fresh chives
2 teaspoons capers, drained
1 teaspoon hot prepared horseradish, or more to taste
salt and freshly ground black pepper to taste
1 pinch cayenne pepper

Steps:

  • Place crumbled trout and softened cream cheese in a bowl. Add lemon juice, dill, chives, capers, horseradish, black pepper, salt, and cayenne pepper. Mix together with a fork until mixture achieves the chunkiness or creaminess you prefer. Transfer to a ramekin; wrap with plastic wrap. A Scandinavian-style paté, attributed to Clare Ferguson, which I found on Huey's website, and have adapted for the 2005 Zaar World Tour. Huey (Iain Hewitson) is a well-known Australian chef whose popular cooking show appears on TV twice each weekday. He is also the author of several cookbooks and runs Tolarno's restaurant in Melbourne. This recipe provides entree-size portions for two.

1 teaspoon olive oil
4 garlic cloves, crushed
1 lemon, juice of
250 g smoked trout fillets, skin & bones removed & flaked
100 g low-fat cream cheese
1 teaspoon paprika
1 pinch sea salt
2 teaspoons freshly chopped dill
3 celery ribs, cut into sticks

Steps:

  • Place the oil in a non-stick pan and gently cook the garlic, until it is softened but not browned.
  • Add the lemon juice, mix well and cook for 30 seconds to a minute.
  • Place the trout in a food processor together with the garlic mixture. Roughly mix and then add to the food processor the cream cheese, paprika, salt and dill, and process until the mixture is just combined and season to taste.
  • Spoon the paté into a small bowl and serve with celery stalks.
