CARAMEL APPLE BREAD PUDDING



Caramel Apple Bread Pudding image

Create a new favorite this fall with this bread pudding that's extra moist in our Deep Covered Baker.

Yield 16 servings

Number Of Ingredients 13

1 loaf (16 oz/500 g) egg bread, such as challah (about 12 cups cubed)
3 red baking apples such as Jonathan
1 lemon
1 tbsp (15 mL) butter
2 cups (500 mL) plus 1 tbsp (15 mL) milk, divided
1 cup (250 mL) heavy whipping cream
6 eggs, lightly beaten
1/2 cup (125 mL) firmly packed brown sugar
1 tsp (5 mL) Double-Strength Vanilla
1/4 tsp (1 mL) salt
1 pkg (14 oz/398 mL) caramels (about 48), unwrapped
1/2 cup (125 mL) toasted pecan halves
Apple Blossom Garnishes (optional)

Steps:

  • Lightly spray Deep Covered Baker with vegetable oil using Kitchen Spritzer. Slice bread into 1-inch cubes using Bread Knife; set aside. Peel, core and slice apples using Apple Peeler/Corer/Slicer; cut slices into quarters using Utility Knife. Zest lemon using Microplane® Adjustable Fine Grater to measure 1 teaspoon zest. Juice lemon using Juicer to measure 1 tablespoon juice. Melt butter in (10-in.) Skillet. Add apples, lemon zest and juice; cook and stir 3-4 minutes or until apples are softened.Meanwhile, combine 2 cups of the milk and cream in Easy Read Measuring Cup. Microwave on HIGH 2-3 minutes or until hot. In Stainless (6-qt.) Mixing Bowl, combine eggs, brown sugar, vanilla and salt; mix until well blended using Stainless Whisk. Gradually add milk mixture to eggs while continually whisking. Gently stir bread cubes into milk mixture; toss gently to coat using Small Mix 'N Scraper®.Place caramels and remaining 1 tablespoon milk in Large Micro-Cooker®. Microwave, uncovered, on HIGH 1-2 minutes or until melted and smooth, stirring after each 30-second interval. Set aside 1/4 cup of the caramel mixture. To assemble bread pudding, place half of the bread mixture into baker. Top with half of the apples and drizzle with remaining caramel. Top with remaining bread mixture and apples. Cover baker and microwave on HIGH 15-16 minutes or until Digital Pocket Thermometer registers 155ºF in center; let stand, covered, 10 minutes in microwave. (Temperature will rise to at least 160ºF.) Uncover baker and drizzle with reserved caramel. Coarsely chop pecans using Chef's Knife; sprinkle over bread pudding. Serve immediately with Apple Blossom Garnishes, if desired.

Nonstick cooking spray or butter, for greasing
2 cups heavy cream
2 cups whole milk
3/4 cup light brown sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 teaspoon vanilla extract
9 large egg yolks
3 1/2 cups Granny Smith apples, peeled and chopped
3/4 cup pecans, chopped and toasted
1 loaf challah bread, cut or torn into 1-inch pieces (preferably stale)
Caramel Dessert Sauce, recipe follows
Vanilla ice cream, for serving
3/4 cup sugar
1/2 cup (1 stick) unsalted butter
1/2 cup buttermilk
1 tablespoon light corn syrup
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Pinch salt

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with cooking spray or butter.
  • In a large mixing bowl, whisk together the heavy cream, whole milk, brown sugar, cinnamon, salt, vanilla and egg yolks and set aside.
  • Add the cubed apples, pecans and cubed bread to the prepared baking dish and toss to combine. Pour the custard over the bread and apple pieces. Carefully toss to coat, making sure that the cubed bread is submerged in the custard, and let stand to allow the bread to soak up the custard, 10 to 15 minutes.
  • Bake until the center has set, about 45 minutes. Let cool for 5 minutes. Drizzle Caramel Dessert Sauce over the bread pudding. Serve with extra sauce and vanilla ice cream.
  • In a heavy-bottomed saucepan, combine the sugar, butter, buttermilk and corn syrup. Bring to a boil over medium-high heat and cook for 1 minute. Remove from the heat and slowly add the baking soda (it will foam up), followed by the vanilla and cinnamon. The sauce will thicken as it cools. Serve warm.

Years ago my little sis was a consultant for Pampered Chef and she made this for a party. I copied this down on a recipe card (very faded now) and long ago gave away the booklet this came from. This is incredibly easy and oh so very good. I like to serve this warm with a vanilla custard sauce or Poor Man's Sauce.

6 cups cinnamon raisin bread, cubed (approx. 10 slices)
1/4 cup butter, melted
3 granny smith apples, sliced
1 (12 1/2 ounce) jar caramel sauce

Steps:

  • Cube bread and toss with melted butter. Set aside.
  • Preheat oven to 350º (f) and spray 9x9 baking dish with non-stick cooking spray.
  • Slice apples thinly (you can leave peel on if so desired) and evenly layer 1/2 of the apples in bottom of prepared dish.
  • Top apples with 1/2 of the bread cubes, making sure to layer as evenly as possible.
  • Pour 1/2 of the jar of caramel sauce over the bread and repeat the layers with remaining ingredients.
  • Bake for 30 minutes. Serve warm.

1 (14 ounce) wide loaf French bread, crust removed and bread cut into 2x1-inch cubes
2 tablespoons butter
2 apples - peeled, quartered, cored, sliced crosswise into 1/4-inch thick pieces
1 cup muscovado or packed brown sugar, plus more for garnish
½ teaspoon ground cinnamon
¼ teaspoon salt
4 large eggs
2 large egg yolks
3 cups milk
1 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Spread bread cubes on a baking sheet and bake until crisp, about 20 minutes.
  • Meanwhile, melt butter in a skillet over medium heat. Saute apples until tender, 7 minutes, then transfer to prepared baking dish along with bread. Toss to combine.
  • Whisk together sugar, cinnamon, and salt in a large bowl. Whisk in whole eggs and yolks until well combined, then whisk in milk, cream, and vanilla. Pour mixture evenly over bread mixture. Let stand, covered, 45 minutes at room temperature.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake pudding until bread has absorbed custard and is set, about 50 minutes.

4 cinnamon-raisin bread, cubed (slightly stale)
1 cup granny smith apple, peeled and chopped
1/2 cup brown sugar, packed
2 eggs
1 cup evaporated 2% milk
1/2 cup skim milk
1 1/2 teaspoons vanilla
1/4 teaspoon cinnamon, ground
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl, toss bread cubes and apples together.
  • In separate bowl, whisk together brown sugar and eggs.
  • Add evaporated milk, skim milk, vanilla, cinnamon, nutmeg and whisk again.
  • Pour egg/milk mixture over bread cubes and apples.
  • Stir well and let stand 5 minutes for bread to absorb liquid.
  • Transfer mixture to an 8 x 8"- baking pan coated with non-stick spray, ensuring apples are evenly distributed.
