There are three apple cheese balls here, but this one is really good and different. I didn't think I'd like cheese with apples, but the flavors went well together. Passive time is chill time.

Yield 1 cheese ball

Number Of Ingredients 6

2 teaspoons lemon juice
8 ounces cream cheese, softened
1/4 cup mayonnaise
1 red apple
1 green apple
1 cup sharp cheddar cheese, shredded

Steps:

  • Mix the cream cheese with the mayonnaise until thoroughly combined.
  • Slice 4 thin slices of red and green apple. Dip in lemon juice to prevent browning. Chop remaining apples in small pieces and toss with the lemon juice.
  • Add chopped apples and cheese to cream cheese mixture and form into a ball.
  • Garnish with the apple slices around ball.
  • Cover with plastic wrap and refrigerate until serving. Serve with crackers.

Like a gleaming necklace of rubies, this is a perfect garnish for poultry or roasts. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

1 cup sugar
1 cup water
4 cloves
2 teaspoons red hots red cinnamon candies
1/2 lemon, rind of
1 1/2 cups apples, cut into balls with melon baller

Steps:

  • Make a syrup of sugar and water; add lemon rind, cloves and cinnamon drops.
  • Cook for several minutes; remove lemon rind and cloves.
  • Drop in apple balls.
  • Cook until just barely tender, drain well and garnish your serving platter.
