An easy recipe for Crock Pot Teriyaki Chicken that takes less than 10 minutes to prep! Delicious, healthy, and so much better than takeout!

1 1/2 pounds boneless, skinless chicken thighs
2/3 cup low-sodium soy sauce
3 tablespoons rice vinegar
3 tablespoons honey
3 tablespoons brown sugar
1 clove garlic (minced)
1 tablespoon minced fresh ginger
2 tablespoons water
1 tablespoon cornstarch
Toasted sesame seeds (for serving)
Chopped green onions (for serving)
Prepared brown rice

Steps:

  • Place the chicken thighs in the bottom of a 6-quart or larger slow cooker.
  • In a medium bowl or large measuring cup, whisk together the soy sauce, rice vinegar, honey, brown sugar, garlic, and ginger. Pour over the chicken thighs.
  • Cover and cook on high for 2 hours or low for 4 hours, until the chicken is tender and cooked through. Remove the chicken to a plate and shred with two forks. Strain the cooking liquid through a mesh sieve and into a medium saucepan.
  • In a small bowl, whisk together the cornstarch and water until smooth. Add to the strained cooking liquid, whisk to incorporate, then heat the saucepan over medium high, stirring constantly until the sauce bubbles. Continue cooking and stirring until glossy and thickened, 1 to 2 minutes. Remove from heat.
  • Add the chicken to the sauce. Toss to coat. Serve warm with rice or quinoa, garnished with sesame seeds and green onions as desired.

From the "Fix it and Forget It" cookbook of crockpot recipes. Turns out with little effort. We enjoy it served over rice, with a salad on the side. I also use jarred ground ginger and jarred minced garlic--comes out just as well. I often double the sauce ingredients that go on top of the chicken--if you like it with more sauce, I suggest you do this. I also use low-sodium soy sauce, otherwise it will be really salty.

6 -8 skinless chicken thighs
1/2 cup low sodium soy sauce
2 tablespoons brown sugar
2 tablespoons grated fresh ginger
2 garlic cloves, minced

Steps:

  • Wash and dry chicken. Place in slow cooker.
  • Combine remaining ingredients. Pour over chicken.
  • Cover. Cook on high 1 hours Reduce heat to low, cook 6-7 hours. (Again, I wanted to start this in the morning and have it for dinner that evening, so I cooked it only on low for about 9 hrs and it turned out perfectly--fall off the bone tender. I think you can adjust times as you see fit.).

approx. 1 . 5 - 2 pounds skinless chicken breast
1/2 cup honey
1/2 cup low sodium soy sauce (you can use gluten free)
1/4 cup rice vinegar
1 large onion
2 small bunch broccoli (@ 4 cups)
2 teaspoons minced garlic
3/4 teaspoon ground ginger
1/4 teaspoon black pepper
2 tablespoons cornstarch

Steps:

  • spray your crock-pot with cooking spray and turn it on low (if you want recipe to cook for 4-5 hours) or high (if you want recipe to cook in 3 hours). Cube your onion and chicken breasts into approximately 2-inch pieces. Place onion and chicken in crock-pot.
  • whisk soy sauce, rice vinegar, honey, garlic, pepper, and ginger in a bowl. Pour over the chicken and onion and give it all a stir. Put on lid and leave it (low 4-5 hrs / high 3 hrs).
  • once it is cooked, move chicken and onions with a slotted spoon to a bowl, Pour the liquid from the crock-pot into a sauce pan on medium heat. Whisk in 1 tbsp of the cornstarch at a time and bring sauce to a low boil. Keep whisking about a minute until sauce thickens.
  • put chicken mix back in crock-pot and pour sauce over meat and onions. Turn crock-pot to low or warm and cover. Steam your broccoli (5 min in microwave; 10 min on stove). Add broccoli and stir to coat.
  • serve over rice or rice noodles; garnish with chives or sesame seeds (optional).

  • Prep directions:.
  • 1) Label your bag with cooking the directions.
  • 2) chop all of the veggies, mince garlic and add to bag.
  • 3) add meats (trim chicken breasts and cut in half to have a total of four pieces of chicken per bag).

5 chicken breasts (about 3 pounds)
1 1/2 cups water
1 cup brown sugar
1/2 cup soy sauce
1 teaspoon granulated garlic
1 teaspoon sesame oil (optional, but wonderful)
3 tablespoons cornstarch
4 tablespoons cold water

Steps:

  • Spray the inside of your pretty crock pot with cooking spray.
  • Place chicken breasts into the pot. If you are using chicken that has been frozen, be sure that it is completely thawed before you add it to the crock pot.
  • In a separate bowl combine water, brown sugar, soy sauce, garlic and sesame oil. Stir to combine and then pour it over the chicken.
  • Cover the crock pot and cook on high for 4 hours, or on low for 7.
  • When the chicken is cooked remove it from the crock pot and place in on a plate.
  • In a small bowl combine corn starch and cold water. Pour it into the crock pot and stir it in thoroughly.
  • Take two forks and break the chicken breasts up a bit. I don't like to shred mine up too much, just enough that the sauce has a chance to spread through the chicken.
  • Place the chicken back into the crock pot and stir it around allowing the sauce to mix with the chicken.
  • Cover the crock pot and let the mixture cook and thicken for 30 minutes.
  • Serve over rice. Enjoy!
