Apple slices topped with cheese, bacon and arugula for wonderful appetizers - ready in 15 minutes.

- In large bowl, toss apple slices with lemon juice; pat dry with paper towels. Spread each slice with about 2 teaspoons cheese. Top with bacon, arugula and pepper. Serve immediately.

- In a large cast-iron or other heavy skillet, mix brown sugar, lemon juice and pepper. Cook and stir over medium heat until sugar is dissolved. Cut each apple into 16 wedges; add to the brown sugar mixture. Cook over medium heat 5-7 minutes or until apples are tender, stirring occasionally. Remove apples to a platter with a slotted spoon; keep warm., Add bacon to skillet; cook over medium heat, turning once, until heated through, about 3 minutes. Transfer to platter. Pour remaining brown sugar mixture over the apples and bacon.

- Cook the bacon either in a frying pan over medium heat or by baking in a 400° F preheated oven on a baking sheet covered loosely with foil for about 15-25 minutes (baking time depends on the thickness of the bacon slices and how crispy you want your bacon).
- Once the bacon has cooked, remove to a plate lined with paper towel to absorb the extra grease. Allow to cool.
- In a medium sized bowl, place the lemon juice from the DRESSING ingredient list. Dice the apples and place in the bowl with the lemon juice. Toss to coat. Set aside for a few minutes.
- In a large salad bowl, combine the arugula, chopped romaine, celery, pumpkin seeds, dried cranberries, and green onion.
