Steps:
- Prepare and measure all the ingredients. Wash, slice, core, and dice apples and pears. Chop the walnuts.
- Preheat the oven at 180°C/350°F.
- Put the chopped apples and pears in a baking dish.
- Add spices - vanilla, cinnamon, nutmeg and allspice and coconut sugar (if using).
- Mix well until fruit base is well coated. Set aside.

- Prepare recipe for double crust pie. Roll out dough for bottom crust. Place in 9-inch pie plate. Press to fit without stretching dough. Trim even with pie plate. Heat oven to 400 degrees F.

You might think that a pastry chef would never recommend buying pie crusts but hey, its much better to make a pie with a pre-made crust than not to make a pie at all! For the best flavor, always look for the ones made with at least some butter, rather than all shortening. You can place the crust in a glass pie dish. That way you can check the bottom crust as it bakes and make sure it's getting nice and golden which to my mind is the most important step in pie-making. Nothing ruins a delicious pie like this classic combination of autumn fruits and warm spices faster than an undercooked, soggy bottom crust. You can mix the topping and keep it refrigerated for up to 7 days.

- Make the topping: In a medium bowl, mix the flour, brown sugar, and cinnamon. Add the butter and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Do not over mix; as soon as the mixture is sandy, cover and refrigerate until ready to use.

OATMEAL APPLE PEAR CRISP
I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

- 1. PREHEAT OVEN TO 375°
- 2. FOR THE CRUST: BLEND flour and salt in medium mixing bowl. CUT chilled shortening into 1/2-inch cubes. Cut in chilled shortening cubes into flour mixture, using a pastry blender, in an up and down chopping motion, until mixture resembles coarse crumbs with some small pea-sized pieces remaining. SPRINKLE half the maximum recommended amount of ice cold water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl to the top, distributing moisture evenly into flour. Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together. ROLL dough from center outward with steady pressure on a lightly floured work surface (or between two sheets of wax or parchment paper) into a circle 2-inches wider than pie plate for the bottom crust. Transfer dough to a pie plate coated with cooking spray by loosely rolling around rolling pin. Center the rolling pin over the pie plate, and then unroll, easing dough into pie plate. Trim edges of dough leaving a 3/4-inch overhang. Fold edge under. Flute dough as desired. Set aside in the refrigerator while making pie filling.
- 3. FOR THE PIE FILLING: combine flour, sugar, cinnamon and salt in a large bowl. Add lemon juice, apples and pears to the flour mixture. Toss gently to coat. Arrange pear-apple mixture in an even layer in prepared crust.
- 4. FOR THE STREUSEL TOPPING: combine flour and brown sugar in a medium bowl. Add cold butter and cut in with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle evenly over pear-apple mixture. Bake for 1 hour or until lightly brown. Topping will be crunchy. Let cool for an hour before serving.

- Heat oven to 190C/fan 170C/gas 5. Put the chopped apples, lemon zest, rosemary, if using, and sugar in a saucepan. Add the lemon juice and cook for 3-4 mins. Tip in the pears and cook 2-3 mins more, until the fruits are just beginning to soften. Spoon the fruits and juices into a 1.7 litre pudding dish and flatten slightly.
- For the crumble, finely chop half the walnuts in a food processor until reduced to the consistency of ground almonds. Add the flour, butter and sugar and continue to blitz to a coarse or fine crumble mix, whichever you prefer.
- Roughly break the remaining walnuts with your fingers and stir into the crumble. Scatter the crumble mix on top of the fruits and bake for 20-25 mins until golden brown. Serve warm with cream or custard.

- Heat oven to 170C/150C fan/gas 3.
- Pour water, flour, butter, salt, egg and baking powder into the bowl.
- Knead the dough for a few minutes until is soft and not sticky.
- Roll out the dough on a well-floured surface to a 1cm thickness.
- Place the dough on a baking tray.
- Prick the bottom of the tart with a fork.
- Bake a pastry in the oven for about 20min.
- Make syrup by melting the butter with lemon juice and sugar in a small saucepan.
- Remove from the heat.
- Cut peeled and cored apples/pears into thin slices.
- When the tart bottom has chilled, lay the apple/pears slices in concentric circles.
- Sprinkle the syrup over the apples/pears.
- Bake for 20min until the pastry is pale golden brown.
- Whisk together the double cream, egg yolks and sugar till thick and creamy.
- When the pastry is ready pour the cream over the tart.
- Bake the cake in the oven for next 10 mins until mixture just set.
