Steps:

  • Put the garlic in the bowl of a food processor with the salt, and process until the garlic is as fine as possible.
  • Use a rubber spatula to scrape down the sides as needed.
  • Add a teaspoon of lemon juice and process to create a bit of a paste.
  • With the food processor running, drizzle about 3 tablespoons into the paste.
  • Add another one teaspoon of lemon juice.
  • Add oil about a quarter cup at a time, followed by a teaspoon of lemon juice.
  • Follow this alternating until you have used up your ingredients.
  • The main thing to remember is to go slow, it can take ten or fifteen minutes to go through this process.

1 head garlic
1 tsp kosher salt
1 lemon juice of
1 3/4 cups grape seed oil or sunflower oil ((a neutral tasting oil) )
4 to 6 tbsp ice water

Steps:

  • Peel the garlic cloves. Cut the cloves in half and remove the green germ (this is optional).
  • Place the garlic and kosher salt in the bowl of a food processor (a smaller one may work better here). Pulse a few times until the garlic looks minced, stopping to scrape down the sides. Add the lemon juice and pulse a few times to combine (again, scrape down the sides)
  • While the food processor is running, drizzle the oil in ever so slowly (use the top opening of the processor to drizzle in the oil). After you've used about 1/4 cup or so, add in about 1 tablespoon of the ice water. Stop to scrape down the sides of the processor bowl.
  • Keep the processor running and continue to slowly drizzle in the oil, adding a tablespoon of the ice water after every 1/4 cup of oil. Continue on with this process until you have used up the oil entirely. The garlic sauce has thickened and increased in volume (it should look smooth and fluffy). This should take somewhere around 10 minute or so.

1 cup garlic cloves (peeled (about 3-4 heads young garlic))
2 cups vegetable oil (any neutral oil)
1/3 cup lemon juice (fresh (NOT from a bottle))
1 tsp salt

Steps:

  • Peel the garlic and, optionally, remove the 'germ' (green sprout) from each clove's center (which is bitter).I've used several garlic peeling hacks, but at the moment, I'm enjoying just smashing down on the clove with the flat side of a knife and my fist - it's easy and doesn't take much effort.
  • Add the garlic and salt to the food processor (or a bowl if you're using an immersion blender). Process well until you obtain a smooth garlic puree/paste, stopping to scrape down the sides of the jug if necessary.
  • Once you have a puree, it's time to start adding the oil. If you have a steady hand, you can drizzle it in from the measuring jug - otherwise, use a tablespoon measuring spoon.Slowly adding one spoonful at a time, allowing the machine to run throughout this time. Leave plenty of time between each spoonful for it to fully incorporate.
  • After you've added the first few tablespoons of oil, then start to alternate, adding a little oil and then a little lemon juice (around 1 tsp at a time) - while the machine runs.If your food processor starts to get warm, then give it a rest and pause the process. The heat can otherwise cause the toum emulsification to break.Continue to alternate between adding oil and lemon juice slowly (this took me between 7-9 minutes) until the mixture emulsifies and thickens and you have a thick, creamy garlic sauce.
  • I suggest allowing it to marinate and 'set' for at least 2-3 hours in the fridge before using it.
  • When making it with a mortar and pestle, you have to crush the garlic down into a paste, add 1 tsp oil, and mix it until the garlic absorbs it completely. Continue to add oil one tablespoon at a time, mixing until it's absorbed entirely. After you've done this with several spoonfuls of oil, add a few drops of lemon juice in-between spoonfuls of oil.Continue to do this until you have a creamy, thick paste.

3-4 cups of a light flavored oil such as grape seed, canola, sunflower, divided

Steps:

  • In the bowl of a food processor add the garlic and salt. Pulse several times and then process for about 30 seconds. Scrape down the sides of the processor and process again. Keep repeating this until the garlic is completely broken down (to release the emulsifiers), adding a Tbs of lemon juice if needed.
  • Add 1 Tbs of lemon juice.
  • Add 1/2 cup of oil in a slow drizzle while processing, add 1 Tbs of lemon juice. Keep repeating this step alternating between a slow drizzle of oil and a Tbs of lemon juice until the sauce transforms into the consistency and garlic-ness desired. Adding more oil diminished the strong garlic taste. Your sauce will mellow over time in the fridge so it's great to have a robust sauce to start with.

3 tablespoons lemon juice
3 cups canola oil

Steps:

1 cup garlic cloves (peeled)
2 teaspoons Kosher salt
3 cups neutral oil (such as canola or safflower)
½ cup lemon juice

Steps:

  • Slice the garlic cloves in half lengthwise and remove any green sprouts.
  • Transfer the sliced garlic cloves into a food processor and add the kosher salt to the garlic cloves. Process for a minute until the garlic becomes finely minced. Make sure to scrape down the sides of the food processor afterwards.
  • While the food processor is running, slowly pour one to two tablespoons of oil, then stop and scrape down the bowl. Continue adding another tablespoon or two until the garlic starts looking creamy.
  • Once the garlic looks emulsified by the few tablespoons of oil, increase the speed of pouring the oil and alternate with the 1/2 cup of lemon juice until all the oil and lemon juice is incorporated. This will take about 15 minutes to complete.
  • Transfer the sauce into a glass container and cover with a paper towel in the fridge overnight. Makes about 4 cups.
  • The next day, replace the paper towel with an airtight lid and keep in the fridge for up to 3 months.

1 head fresh garlic (squeeze it: it should be solid and very firm)
1 teaspoon kosher salt
Juice of 1 lemon
1 3/4 cups (420 mL) neutral oil, such as safflower or canola
4 to 6 tablespoons (60 to 90 mL) ice water

Steps:

  • Peel the garlic cloves and slice them in half lengthwise. If there is a green germ in any of the cloves, remove it to prevent the bitter, burning flavor it imparts.
  • Process the garlic cloves with the salt in the food processor, stopping and scraping down the sides a few times, until the garlic is minced. Add the lemon juice and pulse several times to combine.
  • With the processor on, begin to drizzle the oil in so slowly that the stream turns to a dribble at times; use the oil drip hole in the top of the processor if yours has one. After 1/4 cup (60 mL) of the oil has been added, slowly pour in a tablespoon (15 mL) of the ice water. Continue slowly drizzling in the oil and slowly adding a tablespoon of ice water after every 1/4 cup (60 mL) of oil until the sauce is thickened and all of the oil has been incorporated. This takes about 7 minutes.
  • The sauce will be slightly thick, with some body, but still pourable. Store the toum in an airtight container in the refrigerator for several weeks.

4 cups vegetable oil (Avocado/canola/sunflower/peanut etc...)
1/2 cup lemon juice (fresh)
1 teaspoon salt (or to taste)

Steps:

  • Ensure that all ingredients are at room temperature for a more reliable outcome. Also if you are using a large food processor make sure you use at least 3 heads of garlic otherwise smaller quantities of garlic won't be easily reached by large blades.
  • Add the garlic and salt in the food processor and run for 10-20 seconds.
  • Stop processor, scrap garlic down the sides, then run processor again for another 10-20 seconds. Repeat process 3-4 times until garlic starts to turn pasty.
  • From this point onwards, turn the processor back on and keep it on until the end.
  • Start adding the oil slowly in a very thin stream. After adding the first half cup you will start seeing the garlic emulsify and turn into a shiny paste already.
  • While still running, add ½ teaspoon of lemon juice very slowly, in a thin stream.

  • If making toum by hand, mince or grate the garlic on a fine grater into a medium bowl. Set the bowl over a towel or use a non-skid bowl, to hold it in place as you whisk. If making toum in a processor, blitz the garlic with the salt until it is minced, stopping to scrape down the bowl as you go.
  • Take your time here. Whisking constantly or with the processor running, use a teaspoon to drop a droplet of oil into the garlic. Stop and scrape down the bowl. Then add another droplet, stop and scrape, then another. Continue in this way even though at first it seems like nothing is happening.

  • Add the garlic cloves and salt to the bowl of a large food processor. Process for about 10 seconds. Stop, scrape down the sides and run for another 10 seconds or so until all the garlic cloves are nicely minced.
  • Turn the food processor back on. Through feed tube, start adding 1/2 cup of oil VERY slowly in a thin stream. It's crucial to add everything very slowly so that the ingredients emulsify into the right texture. If you go too fast, the mixture can break and the oil & garlic wont properly combine.
  • After adding the first half cup of oil, slowly add 2 teaspoons of lemon juice. If you feel you need to, you can stop the food processor and scrape down the sides to make sure everything is getting combined. Repeat, alternating remaining oil in 1/2 cup increments and lemon juice in 2 teaspoon increments until all ingredients have been incorporated.
  • The end product should be thick and creamy looking like mayonnaise or softened butter. Transfer mixture to an airtight container and store in the refrigerator. Eat with pita bread, spread on sandwiches, on meat, use for roasting vegetables, the possibilities are endless!
